And how did the town of Clonakilty become synonymous with black pudding? One of the earliest literary references to puddings is to be found in Homer’s Odyssey, the Greek classic dating from the 8th century BC. The hero, Odysseus, fights over a stomach stuffed with pig blood and fat. Book II of the 1st Century AD Roman cookbook Apicius, features meat puddings, blood sausages, and a ‘botellum’ which is generally translated as black pudding and is made from blood, mixed with onions and leeks, thickened with cooked egg yolks, stuffed into casings and cooked in broth and wine.

    23 November 2020 Dear Taoiseach, The last nine months have been exceptionally challenging for our country. We, the undersigned, know that things will be very different this Christmas and over the coming months, as a result of the continued national effort to tackle Covid-19. We know that for businesses like ours, it won’t be ‘business as usual’. This does not mean that businesses cannot reopen – it means reopening in a smart, planned and sustained manner. We are ready to do so. But we need the green light from government for this to happen. It is important to remember that Ireland’s experience sector contributes €4.5 billion in wages, salaries and employment taxes every year. More than 330,000 people are either employed directly or supported directly by demand from the sector. In the longer-term, the sector, which is vital to the Irish economy, can play a crucial role in the economic recovery which will follow this pandemic, as it did during the recovery of the last economic crisis, when it accounted for one in every seven jobs created. Regrettably, this recovery will not be the case if many of these businesses are forced to permanently shut their doors. This is why the Christmas period and beyond matters so much to the sector. As you will recall, we wrote to you in October highlighting how Ireland’s ‘experience sector’, has been hit exceptionally hard by Covid-19. Since then more businesses have closed their doors. In October, we cited Ireland’s response which we believe is centred on restricting economic activity to a much greater extent than any other country in Europe.

So it was that old money that kept the Russell and the Hibernian and probably the Red Bank and to a degree Jammets all going. There was no tourism in it. It was sort of old, old money. 2. MM: Sort of Horse Show week and the Spring Show week and they were the big one? 3. DC: They were the big ones yeah. You'd earn an extraordinary amount yeah. 4. MM: Well part of the model I'm following is I'm sitting down talking to people and to come up with a life history model, you know what I mean. I'm looking at people when they were born, where they were born, education, sort of were there catering fumilies, that sort of stuff. Looking for patterns in things like that. 5. DC: It was quite extraordinary hitting it in Dublin at that time, as I did. They spoke a Dublin accent so dense that I could hardly understand what they were saying never mind anything else (laugh) but there was a tradition of apprenticeship. 6. MM: You were born in Cork. 7. DC: Oh yes. Born in 1943 and then I worked in the Russell I had already done a hotel management training course in London, in Hendon College of Technology so because of that the guys in the Russell kitchen used to call me 'scoff - short for Escoffier because you see I knew all the classical garnishes and all that sort of thing straight out of my head, they had it in the hands but I had it in the head (laugh).
