Az idei év egy szomorú, de mégis magasztos eseménynek a kerek évfordulója. Az 1956-os események az újabbkor magyar történelem nehéz s feledhetetlen pillanataiként maradtak meg bennünk.

De kik is vagyunk mi akik ünnepeljük e 50 éves kerek évfordulót, kik is vagyunk valójában mi magyarok?

Sajnos nemzetünk sok erénye mellé sok gyengeség, hiá- nyosság is felsorakozik, fleg az utóbbi évtizedekben. Miért tapasztalható e komoly széthúzás, irigység s nem- tördömség saját nemzettársaink iránt? Pedig büszkék lehetnénk magunkra, hogy magyarok vagyunk. A világ nemzetei között eltörpülünk mi, a 15 milliós létszámunk- kal, s mégis a világtörténelem formáló egyénei között tartanak minket számon. Hány Nobel- és Nobel-díjas tudóst és Oscar-díjas színészt, s sorolhatnám itt a jelz- ket, adtunk már ki sorainkból! Nemzetünk, megtörve is, de, már több mint 1000 éve állja a próbákat Közép- Európa viharos színpadán. This year marks the 50th anniversary of a sad and yet uplifting occasion. Memories of the events of 1956 remain with us as difficult, unforgettable moments of Hungary’s recent history.

But who are we who are about to celebrate this rounded anniversary? Who are we really, we Hungarians?

Sadly, next to our nation’s many strengths there are plenty of weaknesses that seem especially to have come to the fore in recent decades. Why do we find ourselves seriously pulling apart, or swallowed up in envy, and indifference towards our own compatriots? Why, when we have every reason to be proud of being Hungarian? Numbering just 15 million we are but a tiny nation, at the same time we are regarded as a formative participant on the world stage of history. Just consider how many Nobel prize-winning scientists and Oscar-winners have come out of our ranks. For over a thousand years, even in spite of being down-and-out, our nation withstood the various trials that fate bestowed upon her in a histori- cally turbulent Central Europe. Following Árpád’s con- quest of the Carpathian Basin, the neighbouring tribes and nations prayed they would avoid the wrath and the arrows of the Hungarians. The —Damjanich redcaps expedition movement“ exist in the spirit of —lest we forget“. It preserves the memories of the well-known and the lesser well-known children who fell in the 1848-49 Freedom Fight and W ar of Inde- pendence. Every two years the Damjanich movement organises expeditions to the 33 places of remembrance.

Easter is nearly upon us! I like to make this special time of year unique not only with the celebrations and festivities we have with family and friends, but also with the food we share. Eggs are symbolic of Easter and so I like to have Töltött tojás, (Stuffed Eggs). You can serve this on its own when guests come over or as an entree or as part of your Easter meal with ham and potato salad. Another traditional recipe that is a favourite for those with a sweet tooth is Vaníliás kifli, (Vanilla Cres- cents). It‘s easy to make and is like shortbread that melts in your mouth!

Stuffed Eggs (Töltött tojás)

6 eggs 250 g sour cream 100 g butter ) 1 tbs bread crumbs 100 ml milk ) for white sauce 300 gm butter 100 g flour ) salt, ground pepper to taste

Additional choices of flavourings: 150 g sautéed chopped mushrooms; 100 g ground ham; 100 g grated cheesed with caraway seeds; finely chopped parsley.

Cook the six eggs until hard boiled, (about 10 minutes). Peel them and cut them in half once they have cooled. Spoon out the yolk from each half into a bowl. Break the yolks with a fork until it is like a smooth paste. Make a white sauce out of the butter, milk and flour. Add this to the yolk and stir in well. Add salt and ground pepper to taste and any other flavourings of your choice. Stuff each egg white with the flavoured yolk. Place these into a baking dish. Stir the sour cream to soften it. Pour it over the eggs and then sprinkle the bread crumbs on to the eggs. Put a tiny bit of butter on the bread crumbs to make them go crisp. Bake in pre-heated oven at 180°C for 30 minutes. This can be served hot or cold.

Vanilla Crescents (Vaníliás kifli) (makes 50-60)

250 g flour 200 g butter 80 g icing sugar 60 g ground walnuts a few drops vanilla essence extra icing sugar for sprinkling

Place all the ingredients in a large bowl and mix thoroughly by hand until a smooth dough is formed. If the dough is rather soft, place mixture in the fridge as it is easier to work with if and the crescents hold their shape better if the dough is not too soft. Tear a little piece of the ball from the dough, roll between the palms of your hands and make a —sausage shape“ about 5-6cm long, then place on a lightly greased tray, making a crescent shape. W hen the first tray is full (leave a little room for each to grow), bake in pre-heated oven at 180°C for 12-15 minutes or until the crescents are a pale brown. W hile the first tray is baking continue filling the next tray until all the dough is used up. You will need at least two trays. W hen the crescents are ready take the tray out of the oven and allow to cool, before sprinkling each crescent with icing sugar using a sieve. Vaníli- ás kifli keep well in an airtight container (if they last that long that is).
