  • Pfeffernusse Is a Cookie. a Variant of German Lebkuchen, Or Gingerbread
Pfeffernusse Is A Cookie. A Variant Of German Lebkuchen, Or Gingerbread December 23rd is reserved for this German spice cookie. It is National Pfeffernusse Day. Very popular around the holidays, pfeffernusse are fluffy cookies made with ground nuts and spices and covered in powdered sugar. The exact origin in unknown however the Dutch believe that pfeffernusse (or pepernoten) are linked to the feast of Sinterklaas, which is celebrated on December 5 in the Netherlands and December 6 in Germany and Belgium. This holiday is when children receive gifts from St. Nicholas, who is partially the inspiration for the Santa Claus tradition. Pfeffernusse is a variant of German Lebkuchen, or gingerbread. Pferffernusse cookies differ from regular German gingerbread is that they are rolled into balls and then glazed with powdered sugar after baking. Pferffernusse literally means “pepper”. A traditional Pfeffernusse cookie will be too hard to eat without dipping in liquid for the first few days. The cookies do soften with age and more modern recipe adaptations have been made to make them soft from the start. If you were curious, the pronunciation is: [FEHF-fuhr-noos]. Though recipes differ, all contain cinnamon, cloves, mace, nutmeg, cardamom, and anise. Some variations include powdered sugar. Molasses and honey are used to sweeten the cookies. In Germany, the pfeffernüsse is more closely associated with Christmas. The biscuit has been part of European yuletide celebrations since the 1850s. ‘Pfeffernüsse’ are also known as ‘peppernødders’, ‘pfeffernusse’, ‘peppernuts’ and ‘pebernødder’. Pfeffernüsse are typically ginger-coloured, with a snowy white coating, and home made cookies are best left to develop their flavours and soften for a few days before being eaten.

Link for the 2020 Gingerbread House Contest Fun Gingerbread Fact #2 – Gingerbread has a history that goes back to ancient times. The history of baking with ginger and spices goes back to ancient Egypt and Rome. Gingerbread is thought to first have been brought to Europe in 992 by an Armenian monk. He moved to France and taught the French Christians how to make gingerbread. Returning crusaders also spread the spicy treat across Europe. Gingerbread soon became associated with religious culinary traditions as often it was monks and priests who prepared it. By the 1600s, Nuremberg, Germany was recognized as the “Gingerbread Capital of the World” when the guild used master bakers and skilled workers to create elaborate works of art from gingerbread. By the 17th century only professional bakers could make gingerbread except at Christmas and Easter, when anyone could make it.

  • Home for the Holidays the Sweet and Spicy Smell of Gingerbread Is a Clear Indicator That the Holiday Season Is in Full Swing
Home for the Holidays The sweet and spicy smell of gingerbread is a clear indicator that the holiday season is in full swing. By the time Gingerbread House Day arrives on December 12, you may have already indulged in eating this seasonal treat. Gingerbread, made with ginger root, is believed to have originated in East Asia, where ginger was originally culti- vated. It is believed that ginger and gingerbread were introduced to Europe after the Crusades of the 11th centu- ry. Gingerbread was adopted most heartily in Germany, where monks perfected their heart-shaped lebkuchen cookies. These cookies were first made as unleavened honey cakes, made in the same fashion as communion wa- fers. With the introduction of ginger, German bakers transformed lebkuchen into their beloved gingerbread. In 1487, Emperor Friedrich III presented the 4,000 children of the city of Nuremberg with gingerbread cookies shaped to his likeness. The shape of gingerbread was not limited to hearts, faces, and people; miniature houses made of the cookie were also common. This is why a gingerbread house figured so prominently in the tale Hansel and Gretel, first published by German folklorists and brothers Jacob and Wilhelm Grimm in the 19th century. What better way for a witch to lure Management Team two children into her home than to build a home out of Germany’s favorite cookie? Through this tale, the Brothers Grimm spread the popularity of making gingerbread houses beyond Germany. Jamie Maul - Executive Director It may be surprising that one of the most enduring holiday traditions was popularized by the tale of a witch attempt- ing to eat two children by luring them into her gingerbread house.

  • Gingersnaps Originated in 1206 in Lebkuchen, Germany
Gingersnaps Originated In 1206 In Lebkuchen, Germany Mmmmmm, hungry? Join National Gingersnap Day on July 1st by enjoying this sweet and savory treat. Recipes for gingersnap cookies typically call for molasses, cloves, ginger, cinnamon, and brown sugar. The combination of sweet and spicy has long been enjoyed for generations. The lower calories in gingersnaps make them a healthier alternative to other cookies, but they also have additional benefits. For example, ginger, cinnamon, and clove all include anti-inflammatory and antimicrobial properties. They may also help fight heart disease. Cinnamon contributes to lower amounts of glucose in the bloodstream; ginger helps aid digestion, and cloves also help prevent oral diseases and headaches. Around the world, gingersnaps come in different shapes and sizes. In America, it’s much like a sugar cookie, but in Scandinavia, it’s more like a wafer. This tough little biscuit is often known as a ‘ginger nut’ in Australia, New Zealand and in the United Kingdom Ginger helps digest fatty foods and break down proteins. It can also treat motion sickness. It even reduces inflammation caused by arthritis. Ginger stimulates the circulation of blood. That’s how it helps reduce inflammation. It is also a natural decongestant and antihistamine. Gingersnaps were first baked commercially in 1862 The first published recipe for gingersnaps was in 1805 by Mrs. H.L. Webster. it is believed that gingersnap cookies originated in Germany during the early 13th century, and were first produced by medieval monks. It is also said that the previous version of these gingersnaps has been called Lebkuchen, which is the German version of gingerbread cookies for Christmas.

Desserts of the World: Germany Presented November 19, 2019, by Terri Fleming Lebkuchen are the Christmas cookie of Nuremberg, Germany. They date back to at least the 1300s, when the monks in Nuremberg first started baking them. In the middle ages, as merchants traveled inland from Venice and Genoa, Nuremberg was one of the central hubs of the continental spice trade. That gave the bakers of Nuremberg better access to exotic spices. Nuremberg was also surrounded by a dense forest was famous for its honeybees. • Elisenlebkuchen (Elizabeth's Lebkuchen)
Elisenlebkuchen (Elizabeth’s Lebkuchen) Yield About 27 (3-inch) cookies Time About 1d hours of active time, plus drying time, overnight chilling time, cooling time, and time to allow the glaze to set Baking Notes Lebkuchen is all about spices. Do yourself and this recipe a favor and buy some new ones! We like the Spice House. The flavor of ground hazelnuts contributes significantly to the magic that is Elisenlebkuchen. But those who love hazelnuts also know they are a nuisance to peel. Yet we urge you not to purchase whole blanched hazelnuts. The more any nutmeat is processed, the more quickly its oils grow rancid. Blanched hazelnuts age out faster than some other nuts, in our opinion. Or maybe it is simply that hazelnuts make fewer appearances in American baking than almonds, and the ones in grocery stores are thus likely to be old and stale. But SunOrganic Farm in California sells exquisitely fresh whole hazelnuts—and we provide easy directions for blanching them. You will discover Kühle Back Oblaten to be the singular brand of these thin baking wafers available for purchase in the United States. Yet they can be fresh or they can be stale. Some we purchased from Amazon stuck together and had to be pried apart with the tip of a small sharp knife. We don’t know who that particular vendor was, but we’re thinking German Deli is probably a safer choice. It can be a real test of patience to find good candied fruit in the U.S. Who really wants to bake with the jumbled-up mixed fruits stained with dyed cherries? The best you’re going to do is www.nuts.com’s candied citron and glazed orange peel, which comes in strips and isn’t sticky or gooey.
