Drain eggplant, rinse with plain water and drain again then place in pan. Cover with water and 81!! !P~1I simmer until tender. Soak bread crumbs in milk. .Saute onions, green peppers and celery in melted butter for about 15 minutes, or until tender.
Drain eggplant and combine with bread crumbs, and sauteed vegetables. Add eggs, pimiento and seasonings, blend thoroughly. Place in a greased • I baking dish and bake at 350 degrees for 45 minutes. These shows have been runl)lng almost continuously at least twice a month, often weekly, resulting in 379 shows since just 2004 and around 600 since 1989.
It all started back in the late 1980's when the AIDS epidemic first really hit the Dallas/ Ft. Worth area. "We were burying a friend every week sometimes two or three a week." That's when Rhonda Mae decided to get involved. "We did benefit shows at the Office Lounge and Breakroom." These shows benefited the AIDS Outreach Center, then called the Community Outreach Center. At that time they were taking cash donations in to the organization. One week after having previously taken in $3,000.00 in cash donations, Rhonda Mae was shocked to find that they didn't have any more food than they had

Then we took the food to the bar so people could see what their donations tumed into. We built the Wall of Food. We'd often go to Sam's an~ .It would take two PlCIi~loads to bring the foocfhome." Since 1989, Rhonda and her guest perfolmers have raised $575,000 worth of food and "I've handled almost every case of it," Rhonda Mae chuckles.
