CALIFORNIA 2015

Our 2015 Cabernet Sauvignon opens with aromas of cherries, berries, cedar, brown sugar, and toast. Flavors of berries, toasted marshmallow, chocolate, and graham cracker follow with a toasty caramel finish. This medium-bodied pairs deliciously with grilled meats and tomato- based pasta dishes.

VINTAGE The 2015 growing season started with a dry, mild winter and ramped up quickly from there. Similar conditions continued throughout the spring with the summer months warming up a bit, causing the to fully ripen. The season ended just as it began, earlier than usual. After the two previous delivered large crops, this one hit the reset button with lower-than-average yields. The result: with highly concentrated flavors and bright acidity.

GROWING REGION The grapes for our Cabernet Sauvignon were harvested in the Lodi American Viticultural Area (AVA) surrounding our . One of the first recognized winegrowing appellations in California, here warm VARIETAL COMPOSITION 76% Cabernet Sauvignon days are tempered by cool breezes from the San Joaquin Delta, allowing 5% Ruby Cabernet Sauvignon grapes to reach full maturity, yielding a well-balanced, fruit-expressive 4% Petite Sirah wine, after vintage. 4% Rubired 3% Tannat 3% 5% other red varieties To achieve optimum flavor maturity and sugar-to-acid balance, the grapes were destemmed and gently crushed immediately after APPELLATION harvesting. We then fermented with a selected yeast strain at a California slightly warmer temperature for increased complexity of flavors. After fermentation, we allowed a portion of the wine to undergo extended TOTAL ACID: 5.6g/L to increase richness and soften tannins. The wine was finally aged in French and American , adding a rich and toasty finish. RESIDUAL SUGAR: 3.4g/L
