A real example of innovation with a wide range, not only of wines, but also of spirits and sparkling wines, importing and applying all the necessary methods, such as "champenoise". Antonio Guerra was a pharmacist and a real visionary, who was able to understand and value the potential of the vine- yards of Bierzo, far before the appellations, the architectural & design wineries, the wine tours and the poetic back labels even existed. Applying revolutionary winemaking techniques and marketing, when the term wasn't probably even invented, Vinos Guerra showed the virtues of the wines from Bierzo to the world. Wines produced with old vineyards of Bierzo, along the Pilgrim Way to Santiago de Compostela, on sunny slopes that conceal Roman and Visigothic treasures. An emotional marketing always combined with the quality of the many products of the winery.

The festival takes place from Sun 24th Nov - Sun 1st Dec. saltirefestival.com SCOTTISH RECIPES Cock-A-Leekie Soup with Chicken and Puff Pastry INGREDIENTS DIRECTIONS 1 lb of diced chicken breast Often referred to as 'Scotland's national soup', cock-a-leekie blends leeks, chicken and sometimes prunes. 2 quarts of chicken stock This dish is the perfect pick me up in the winter months. ¼ cup of white wine Prepare the vegetables: Peel and chop the carrots 1 cup of butter Chop and then finely dice the leaks 1 cup of flour Make the soup: Melt ¼ cup of butter in a pan over a medium heat 2 leeks Add the vegetables Cook over a medium heat for 5-10 minutes 2 carrots Add the chicken to the pan Cook for 5 minutes 1 cup of heavy cream Add ½ cup of barley and stir Add 2 quarts of chicken stock ½ cup of barley Add 1 cup of heavy cream Add ¼ cup of white wine salt and pepper Bring soup to a boil, then reduce heat to simmer Simmer for 1½-2 hours 1 sprig of Italian parsley Make the blonde rout: Puff pastry Melt ¾ cup of butter in a pan Add ½ cup of flour Stir constantly over a medium heat Add rout to the soup and stir Bake the soup: Add the soup to oven safe bowls Add salt and pepper for taste Cover each bowl with puff pastry Baste the puff pastry with melted butter Place in oven and bake at 425 degrees for 30 minutes Final presentation: Remove from the oven Garnish with Italian parsley Serve and Enjoy!     Characterization of Wines Produced from Fungus Resistant Grapes Claudia Koraimanna, Erich Leitnera, Uwe Oppermannb a Graz University of Technology, [email protected], Graz, Austria b Shimadzu Europe GmbH, [email protected], Duisburg, Germany Introduction The vineyards of the Styrian wine region are located in the southern part of Austria close to the Slovenian border covering approximately 4.500 hectares. Predominantly steep slopes are cultivated with inclinations up to 60%. This area is a classical cool-climate region with an average annual temperature of 10.5°C and precipitation of approximately 1.000 mm per year. Main rainfall months are especially May, June, July & ,August and September in which 55 to 70% of the annual precipitation falls. The mechanical management of the steep slopes is difficult and quite dangerous, too. The establishment of fungus- resistant grape varietals can clearly reduce plant protection efforts and also brings economic advantages. First experiments with fungus resistant grape varieties date back to the early '80s. Most varieties of the initial trials were not accepted by the consumers due to their sensory properties. The recent generation of fungus-resistant grape varietals show much more compromising results and a higher acceptance on the market. Sensory Analysis Analytical Methods Sensory analysis was performed by a trained panel with specific Aroma compounds were analyzed by HS-SPME using a 2 cm 50/30 µm expertise in wine tasting consisting of 12 members.
