Boil-out or Bleeding It is normal to see boil out on fruit pies. If too much boil out occurs, check the following: Baking time—reduce bake time. Fruit juice seen bubbling and a golden brown crust is a good indication that the pie is done. If fruit juice is excessive, but crust is not golden brown, then increase oven temperature. Increasing oven temperature may result in a reduced baking time.

 Brush the uncooked products with egg white before placing them in the oven. This ensures a nice shine after baking.

 Add steam at the start of the baking process. This will allow you to obtain a crunchier product and more volume. Five minutes before the end of the baking time, let the steam escape, otherwise the products will not be completely baked through.

 After baking, allow enough time for the products to cool on the baking trays before displaying or packaging them.

 If you have a freezer room, then it is best not to place the products too close to the door. If you regularly open the freezer room, temperature fluctuations can occur near the door which can have a harmful effect on your product.

 Pre-heat the oven sufficiently (25°C/ 77°F more than the recommended baking temperature). When the oven is filled, the temperature will drop. If the temperature drops too quickly, the products will not have enough color at the end of the baking time.

 The baking instructions provided are guidelines. Every oven bakes differently and small adjustments to the baking program can be recommended.

 If the products are too dark on the outside and still very moist (doughy) on the inside, then it is best to lower the temperature. If the products are too dark on the outside and too dry on the inside, then it is best to reduce the baking time.
