What came first, the chicken or the egg? These breakfast recipes prove the egg reigns supreme, along with coffee cake, pancakes and muffins. 2013 Special Edition Breakfast For a healthier take on these recipes, try substituting egg whites or a cholesterol-free egg substitute for whole eggs. You’ll get full for the morning with less fat and cholesterol. Meri’s Low-Sodium Cinnamon Pancakes If you’ve ever been on a low-sodium diet, it is a major surprise when you find out how much sodium is in pancake mix. This recipe has been a nice treat for my husband. — Meri O., Employee, Omaha, NE 1 egg Beat the egg in a bowl and then add the rest of the ingredients and mix. Cook on a flat griddle with 1 cup no-salt flour no-salt butter. Use pure maple syrup or flavored 1 cup milk syrup with no salt in it. 1 tablespoon no-salt baking powder (I use Featherweight® brand) 1 tablespoon sugar substitute ¼ teaspoon salt substitute 1 teaspoon cinnamon Meri’s Fake-Him-Out Low-Sodium “Sausage” My husband loves sausage, but he is on a low-sodium diet. I faked him out one time, making him “sausages” to go with his low-sodium pancakes — he loved them! — Meri O., Employee, Omaha, NE 1 pound ground turkey Mix ingredients in a bowl. Shape into small patties and brown in skillet until done. 1 tablespoon sage 2 teaspoons black pepper 1 teaspoon garlic powder Breakfast | 9 Ham Strata This was served at a friend’s home as brunch and over the years we’ve added or changed some ingredients. This has become a Christmas morning tradition with our family. — Linda D., Customer, Presque Isle, WI 12 slices bread In a bowl, combine the eggs, half-and-half, nutmeg, (crusts trimmed) salt, white pepper and mustard. Beat and set aside. Butter 1 side of 6 slices of bread and put face down 2 cups diced ham in a greased 9" x 13" pan. Sprinkle the diced ham 3 cups shredded over the bread and top with half of the cheese. Next, Swiss cheese place 6 unbuttered slices of bread over the ham and cheese layer.
