WETHER’S BOILED MEAT Piedmontese wether’s boiled meat is to be cooked only according to the traditional recipe: sparkling water, carrots, onion, a big pot with 20 kg of excellent piedmontese breed wether’s cuts. Either contained in the 1kg magnum or in the 500 g jar it is worth the try. You will have the impression to be at the “Bue grasso”(the “fat ox”) fair. Our Piedmontese breed wether’s boiled meat has both a most savory meat and a lightest broth. We only use first cut meats for it. Extra Virgin Olive Oil Sabina Dop “Lux” Extracted By Cold Pressing Process Production:The Sabine Dop is our point of excellence. It comes from certified olive groves. The olives from these groves are the first to be picked. The gathering is done manually, the olives are picked from the trees and are placed in wicker baskets. Once full, the olives are passed onto a sorting table where the leaves and the olives considered inadequate are eliminated by hand. The olives gathered are then stored in small perforated crates which allow for good ventilation. The small crates are then immerged one by one under fresh running water in order to eliminate dust debris and residue from harvesting. This operation is extremely important especially as in this way the olives maintain their freshness and fragrance until the moment of milling. Once these operations have been carried out, the olives are then taken to the mill to be pressed. This is a very delicate phase, as if the right precautions are not taken, all of our harvesting efforts will have been in vain. To begin with, every component of the mill, which will be in contact with the fruit before pressing, is washed thoroughly using abundant hot water; not forgetting those that will then come into contact with the oil produced. Temperatures for carrying out this process have to be rigorously inferior to 27° C. Having reached this point, the fruit which is still fresh and fragrant is poured with care into the circuit of the mill. After about an hour our oil begins to flow out; only 5 to 6 hours have past since the olives were picked from the tree but an entire year of care and attention has passed. Although the whole process is carried out on a homemade basis, our company respects and applies every health and hygiene measure required for this activity. Harvest The harvest, in the second ten days of August, is mechanized and is completed just before sunrise, in the coolest moment of the day thanks to the land breeze. Vinification Once the grapes have been pressed they undergo cold maceration for some hours to accomplish the extraction of the aromas from the skins. When this process has finished, with a soft pressing we obtain a free- run juice that is fermented at a strictly controlled temperature, as in traditional white wine-making, in stainless steel tanks. Flere, aged in steel, is bottled at least two months before its consumption, but the structure it is born with does not disdain longer periods of bottle ageing. Colour Straw yellow with golden hues. Bouquet Crisp and joyous, with intense sensations, fine and delicious fruit. Taste A pleasant balance between freshness and structure. Enjoyable and tasty, it maintains and enhances the taste characteristics of the grape cultivated by us close to the sea. DOC Cerveteri Bianco – Mastarna Mastarna was an Etruscan leader who reached Rome and rose to power under the name of Servio Tullio, the sixth king (578-539 BC). He was the author of the first and most important military reform that laid the foundations for what became the greatness of the army of the Roman Empire. This wine, produced from a careful selection of Trebbiano, Malvasia and Chardonnay grapes, is an authentic expression of the area of the Etruscan coast, volcanic and Mediterranean, though the interpretation that the winery has made of the DOC Cerveteri Bianco. A classic wine that is young, fresh and pleasant. Grapes 70% Trebbiano, 20% Malvasia, 10% Chardonnay. Harvest Harvesting by hand allows a careful selection of the grapes, it happens in the second ten days of August for the Chardonnay, the last ten days of September for the Trebbiano and Malvasia. Vinification Thanks to soft crushing and gentle pressing of the skins, only the most noble part of the musts, the free-run juice, is destined to become Mastarna. The alcoholic fermentation is carried out in stainless steel tanks at a controlled temperature. The wine is bottled at least two months before consumption, its structure makes it suitable also for long periods of storage. Colour Straw yellow with greenish hues. Igt Lazio Bianco – Zio Carlo “It is a wine I wanted to dedicate to my uncle. He came from Puglia when he was very young and settled here in the area in the early Fifties with the land reform, he started to build the winery with his brothers, and with their wisdom and toil they laid the foundations of what is now the winery Tenuta Tre Cancelli.” A pure expression of our area through the varietal characteristics of the Chardonnay with all the distinctive characteristics obtained from the production process that is unique in the area. This wine, born to be long living, claims that it wants to emerge in the wine scene as a confirmation of the quality that can be obtained from our vineyards. Grapes Chardonnay. Harvest The harvesting by hand happens between the second ten days and the end of August. Vinification Once the grapes have been pressed they undergo cold maceration for some hours to accomplish the extraction of the aromas from the skins. After this process the skins are separated from the free-run juice, the alcoholic fermentation starts, this takes place in 500 litre oak barrels at a controlled temperature for almost a month. It remains in the same barrels, on its lees, for another 8 months during which batonnage is carried out with a decreasing frequency until bottling. Igt Lazio Rosato – Emira …”It is a wine I want to dedicate to my mother. She became part of the family when she was very young, and brought with her the freshness of youth and the will to live, of her Tuscan origins, she also contributed with her work and her tenacity to lay the foundations of what is now the winery Tenuta Tre Cancelli. I wanted to pay homage to her and give her name to this wine because in this product I found those sensations that I see in her character and in her way of life”. It is a young wine where all the characteristics of the freshness of Sangiovese and Merlot are enhanced, harvested early and vinified as in white wine-making. Grapes 80% Sangiovese, 20% Merlot. Harvest It is done by hand, anticipating the harvest to the last ten days in August, when the state of ripeness of the grapes is not as advanced as for the traditional red wine-making of these varieties. Vinification The grapes, carefully selected, are crushed and cooled, immediately. The skins are immediately separated from the free-run juice and fermentation starts at a very low temperature in stainless steel. It can be consumed a couple of months after bottling. Fragrant aromas of strawberries and pomegranates well- blended with flowery notes of roses and freesias. Grappa Lituo Grappa from the marc obtained from the crushing of the Merlot grapes destined for the production of Lituo. Distilled in discontinuous copper pot stills and aged in oak barriques at the famous distillery, Berta, in the province of Asti, shining, light amber with golden hues. The nose expresses intense and elegant aromas, hints of raisins, dried apricots, sandalwood and beeswax stand out, framed by light toasty hazelnut.
