When I decided to open Genki back in 1996, my goal was to create a restaurant that served an amalgamation of the foods I grew up eating that enriched my life with feelings of comfort, health and happiness; hence the name of the restaurant, Genki. Combine flour and next 4 ingredients in a food processor and pulse 3-4 times. With machine running, pour in water through feed tube and process about 15 seconds, or until ingredients begin to come together.
