Five Questions for Amelia Saltsman To paraphrase the age-old question, how is this Jewish cookbook different from all others? We tend to compartmentalize the different aspects of our lives. We have one box for the seasonal, lighter, healthier way we eat today, and another for Jewish food, which is often misunderstood as heavy, only Eastern European (Ashkenazic), or irrelevant to today’s lifestyle. (This box also often holds wistful memories for beloved foods we think we’re no longer supposed to eat.) In The Seasonal Jewish Kitchen, I want to open up all those boxes and show how intertwined tradition and modern life actually are. I’ve read the Bible for history and for literature, but now I’ve mined it for food, agriculture, and sustainable practices, and wow, what a trove of delicious connections I discovered! What kind of surprises will readers discover? First, the great diversity of Jewish cuisine. The Jewish Diaspora, or migration, is thousands of years old and global. Jewish food is a patchwork of regional cuisines that includes the deli foods of Eastern Europe and the bold flavors of North Africa, the Middle East, the Mediterranean, and more. My hope is that The Seasonal Jewish Kitchen will keep you saying, “That’s Jewish food? Who knew?” Remember the line from Ecclesiastes about there being nothing new under the sun? The ancient Hebrews were among the world’s early sustainable farmers, and many of today’s innovative practices have their roots in the Bible. Also, the Bible contains quite a few “recipes” that are remarkably current (think freekeh, fire-roasted lamb, and red lentil stew). -

German Gymnasium Grand Café Group Dining
GERMAN GYMNASIUM GRAND CAFÉ GROUP DINING Summer 2018 OUR HISTORY Designed by Edward Gruning, the German Gymnasium was the first purpose-built gymnasium in England and was influential in the development of athletics in Britain. It was built in 1864-65 for the German Gymnastics Society. This sporting association was established in London in 1861 by Ernst Ravenstein. The building cost £6,000 and was funded solely by the German community in London. The National Olympian Association held the indoor events of the first Olympic Games here in 1866. These games continued annually at the German Gymnasium until the White City games in 1908. The main exercise hall was a grand and elegant space with a floor to ceiling height of 57ft. Long forgotten sports were practiced here, including Indian club swinging and broadsword practice. The German Gymnastics Society had a forward-thinking approach to women's exercise, with classes taking place here from as early as 1866. The building ceased to be used as a gymnasium some time pre-war and has been used as offices, storage and an arts and exhibition space since that time. 1 WELCOME TO GERMAN GYMNASIUM Areas of the Grand Café can be reserved for groups wishing to enjoy the buzz of the open kitchen and bar. KAYEM SLOW COOKED CHOICE BEEF POT ROAST RREECCIIPPEE GGUUIIDDEE AU JUS SLOW COOKED FOR HOURS,-EXTRA TENDER GLUTEN FREE ALL NATURAL SPICES NO MSG SHEPARD PIE WITH POT ROAST INGREDIENTS 7.75 pounds Kayem Slow Cooked Choice Beef Pot Roast, (drain au jus, reserve) 1/3 cup wondra 1 cup water 14 ounces creamed corn 2 pounds mashed potatoes 3 tablespoons unsalted butter 12 teaspoon paprika (preferably smoky paprika) DIRECTIONS Pre-heat oven to 350 F Cut the pot roast into 1 1/2" strips lengthwise. Trim away any fat or connective tissues. Hand shred the beef into a baking dish. (Meat breaks apart very easily since it is already slow roasted). Using a small bowl, mix the Wondra into the water, stir well. Transfer the reserved au jus to a medium sauce pan over medium high heat, and wisk in the flour/water mixture. Bring to a boil stirring frequently, sauce will begin to thicken and become a gravy. Mix 2 cups of the beef gravy with the shredded beef and the creamed corn. Cover with the mashed potatoes, sprinkle top with paprika and melted butter. Bake for 45 minutes or until an internal temperature of 165 is achieved. GERMAN STYLE POT ROAST INGREDIENTS 8 ounces Kayem Slow Cooked Choice Beef Pot Roast, drain au jus set aside 2 ounces cooked baby carrots 1 ounce celery 1/2" sliced 1 ounce sweet onion 1/2 " sliced, sautéed 1/2 cup red wine 1/3 cup ginger snap cookie, crush 1 cup egg noodles, cooked 1 tablespoon parsley, chopped 1 tablespoon unsalted butter, melted DIRECTIONS Separate the meat from the broth in the bag. -
