Seyahatname için çıktığım yolda 15 seneyi ve yaklaşık 250.000 km’yi geride bıraktım. 7 bölge, 80 il ve yüzlerce ilçe… İlk yolculukta da son gittiğim yerde de aynı heyecanla çarptı yüreğim. Her seyahatten sonra da Anadolu’nun, insanı- nın, memleketin kıymetini daha da anladım. Anadolu bitmez bir yol, büyük bir kültür ve bence dünyanın en büyük öğretisiy- di. Ortadan yemek yemenin adabını da öğrendim, çorbamı bölüşebilmeyi de; acıyı içine atmayı da öğrendim, acıyla yaşayabilmeyi de; bir bardak çayla mutlu olmayı da öğrendim, aza kanaat edip şükretmeyi de… Elbet ki benim için yolun sonu değil! Anadolu geze geze de yaza yaza da bitmez. Benim bu memlekete duyduğum aşk da bitmez. Ama sizler için bu 15 yıllık yolculuktan birkaç bin kilometre derledim, umarım yazdıklarımı siz de aynı heyecanla okursunuz. İyi yolculuklar. M. Bir bayram sabahı evinden çıkıp ne olduğunu anlamadan limana geldiğinde, gözyaşları içinde bindiği kayıkta gitgide uzaklaşan çocukluğuna bakıyordu. Nasıl her şeyi orada bırakıp gidebilecekti, bir daha buraları göremeyecek miydi? Üzerinden geçen uzun yıllara rağ- men hatırlamak istemeyeceği anılarıydı tüm bunlar. In this research, drinkable fermented milk products from goat's milk with different starters were studied. The aim of this study was to describe and compare Fatty Acid (FA) profiles of ayran from goat milk produced by Saanen breeds. The microbiological, chemical (pH, lactic acid, total solids, protein), rheological and sensory properties of ayran samples were investigated during a 10-day storage period. This study found that both samples (Micromilk and Sacco) have little difference in the basic content and chemical composition of selected physical characteristics according to the instrumental and organoleptic evaluation results. However, although the first starter culture (Micromilk) sample had the highest overall evaluation score, the second sample (Sacco) had a tighter clot and shorter fermentation duration. Also, it was found that during storage of the concentrations of lactic acid microorganisms in fermented beverages, the type of sourdough was insignificant.

Some physical (diameter, thickness, spread ratio and color), chemical (moisture, ash, crude protein and mineral content) and sensory properties of bread samples were investigated. High protein levels of lupin flour (LF) increased the protein content of bazlama and yufka samples from 11.85% and 11.62 % to 19.97% and 19.74 %, respectively. The highest ash content was obtained with addition of 30% buckwheat flour (BF) in flat breads. Generally all of the minerals in breads containing LF, BF and oat flour (OF) or their blends were found significantly higher (p<0.05) than that of control breads. BF addition increased the darkness and redness o f the bread samples. While the lowest sensorial scores for flat breads were obtained with 30% LF or 15% LF+15% OF addition, bazlama containing 30% OF or 10% LF+10% BF+10% OF and yufka containing 30% OF or 15% LF+15% BF or 10% LF+10% BF+10% OF appreciated with higher rates after control breads by panelists.

Because of this close relation between the two concepts; translation studies have recently put emphasis on the study of translation and culture. The aim of this study is to descriptively analyse translation of material culture elements in Buket Uzuner’s novel Uzun Beyaz Bulut-Gelibolu translated into English as The Long White Cloud-Gallipoli by Pelin Thornhill Arıner within the framework of domestication and foreignization strategies. The study focuses on determining how translation procedures by Peter Newmark that are used in translation of cultural elements affect the governing translation strategy, namely domestication and foreignization in translation of the selected novel.The procedures are divided into two strategies as domesticating and foreignizing strategies. Naturalization, Cultural equivalent, Functional Equivalent, Descriptive Equivalent, Synonymy, Modulation, Translation Label, Compensation, Componential Analysis, Reduction and Expansion and Paraphrase are analysed under domestication strategy while Literal Translation, Transference, Through Translation and Paraphrase, Notes, Additions are analysed under foreignization strategy. The results indicate that out of 75 material culture elements, domestication was used 39 times while foreignization was used 36 times and there is no prevailing translation strategy in the translation Keywords: translation, culture, Newmark, procedures, domestication, foreignization 1.

Pestil örneklerinin toplam -1 aflatoksin (AFs), AFB2, AFB1 içeriklerinin sırasıyla, 0.20-5.83, 0.20-1.88 ve 0.48-4.96 µg kg aralığında değiştiği -1 belirlenmiştir. AFG1 2.75 µg kg olarak sadece 1 örnekte saptanırken, AFG2 ise hiçbir örnekte saptanamamıştır. Ayrıca, örneklerde 0.12-0.84 µg kg-1 arasında değişen miktarlarda OTA tespit edilmiştir. Çalışma sonucunda, tüm pestil örneklerinin mikotoksin içeriklerinin Türk Gıda Kodeksinde belirtilen yasal sınırların altında kaldığı görülmüştür. All Balkan languages have given and taken from each other. The impacts on these languages have been merely of local character and were limited to border dialects. In contrast to these effects, Turkish borrowings are spread so uniformly in the Balkan languages, that a significant number of them can be defined as"Balkan Turkisms". In this work, we aim to bring to readers attention a clear overview focusing on: Common fund of Balkan Turkisms and its lexical and grammatical characteristic. Examples of the use of Turkish words in texts of different Balkan languages (Albanian, Bulgarian, Serbian, Croatian, Macedonian, Bosnian, Greek, Romanian) can be traced to the early fifteenth century. The process of borrowing from Turkish culminated in the nineteenth century. For the Balkans, Turkish was the language of communication within the Ottoman Empire. Most of Turkish lexeme has not only been adapted to Balkan languages, but has also become a natural component of the general and regional language.
