Thank you for purchasing this Vollrath gas appliance. Before operating this appliance read and familiarize yourself with the following installation, safety and operating instructions. SAVE THESE INSTRUCTIONS FOR FUTURE REFERENCE.

Function and Purpose: This appliance is intended to be used to as a appliance in commercial foodservice operations only. It is not intended for household use.

Before using this equipment it must be cleaned thoroughly. Clean all surfaces before use. Failure to clean surfaces before using the appliance could cause food contamination and excessive .

This griddle is a medium duty appliance capable of a wide variety of applications. Models 40722 and 40723 only: These thermostatically controlled models provide temperature control between 120°F and 570°F. The gas valve control also functions as the ON/OFF control.

Make sure griddle surface is free from any dirt or oils. 2. Turn the appliance on and set the temperature control to 350°F 3. After allowing the appliance to reach full temperature, pour onto the griddle surface to completely cover the griddle surface. 4. Let the oil heat into the pours of the surface of the griddle for 5-10 minutes. 5. Turn Griddle off and let cool. 6. Wipe away excess oil 7. This procedure may need to be repeated several times during the first week of use.

Using the Flat Top Griddle: 1. Make sure the appliance is sitting securely on the work surface and the work area is free from hazards. 2. Make sure the cooking surface of the appliance is free from anything that is not suited for high heat. 3. Turn temperature dial to the desired temperature and preheat the griddle. 4. When the griddle reaches temperature, it is ready for food preparation.

Cleaning: Clean this appliance at least daily to maintain the appearance and performance and to increase the service life. 1. Before cleaning, be sure the appliance is turned off and cooled to less than 200°F. 2. Wipe the entire appliance with a clean, damp cloth. 3. Empty and clean the grease drawer daily.

4. Using warm water and a moderately stiff spatula, scrape the griddle surface to remove any food residue. This is best done while the appliance is still warm (less than 200°F.)

Note: A griddle stone or fine scouring pad may be used periodically to remove buildup. The appliance should be re-seasoned after this type of cleaning.

Repair: There are no user serviceable parts within this flat top griddle. To avoid serious injury or damage, never attempt to repair yourself. Contact a qualified professional repair service.

Warranty Policy for The Vollrath Company L.L.C

The Vollrath Company L.L.C. warranties all products it manufactures and distributes against defects in materials and workmanship for a period of one year - except as listed below:

. Refrigeration compressors – 5 year warranty . Intrigue & Classic Select cookware – Limited lifetime warranty . Replacement parts – 90 (ninety days) on the part only . Fry pans and coated cookware – 90 (ninety days)

All warranties cover normal use and service only and are void if the product has been damaged by accident, neglect, improper use or other causes not arising out of defects in material or workmanship. The Vollrath Company shall not be liable for loss of use of the product or other incidental or consequential costs, expenses or damage incurred by the purchaser.

Warranty work must have prior approval from The Vollrath Company L.L.C.

All Vollrath equipment is repaired or replaced at the discretion of The Vollrath Company L.L.C., in accordance with the warranty policy listed above.
