    Traditional Spanish music and dances While many first-time travelers to Spain think of passionate flamenco as being Spain's so-called "national" music, traditional Spanish music is far more complex. In fact, flamenco music didn't even formally hit the Spanish music scene until around the beginning of the 19th century, centuries after the evolution of other traditional Spanish music. However, while most of Spain's regional dance and music fly well beneath the international music radar, flamenco has become a recognizable sensation around the globe. Traditional Spanish Music – history Spain's traditional music is essentially a multi-faceted mosaic of the many cultures of Spain's long and colorful history. For this reason, the traditional music and dance vary as you travel from region to region. The traditional music of the Islas Canarias(Canary Islands), for example, boasts influences from the archipielago's mysterious indigenous Guanche civilization while the bagpipe music of Galicia and Asturias speaks volumes about these northern regions' rich Celtic heritage. Traditional Spanish music throughout Spain's vastly diverse regions first flourished while the country was still under Moorish rule. For much of these period (up to eight centuries, in some areas), Spain's Christian, Jewish and Muslim communities coexisted rather peacefully and various facets of their respective culture were free to develop. With the Reconquest, the development of traditional Spanish music came to a temporary standstill, as the ultra-Christian Spanish monarchy (Fernando and Isabel were called the "Catholic Kings," after all) eventually banned Sephardic and Islamic music. The Renaissance and Baroque periods were clutch for the evolution of traditional Spanish music.

With more than two million visitors descending on the Alhambra, a Unesco World Heritage site, every year, the city’s tourism industry had settled into a somewhat formulaic routine of shuttling visitors in and out of the city in about 24 hours. But recently, some other ancient structures have been restored, and the region’s distinc- tive gastronomy has come into its own. The city that was home to the poet Federico García Lorca, the painter José Guerrero, and the composer Manuel de Falla has deep cultural roots, but now a new crop of small foundations and independent exhibition spaces has revived its arty buzz.     Smoky Salmorejo – Chilled Spanish Tomato Soup By Chef Veera Gaul, Ph.D. Ingredients 2 ½ lbs vine ripened tomatoes, cored and chopped 4 one-inch thick slices of ciabatta (or other rustic white bread) 2-3 garlic cloves, chopped 1 tablespoon sherry vinegar * ¼ cup Smoky Garlic Oil (or any other smoked EVOO) plus more for drizzling * Kosher salt 2 hard boiled eggs, peeled and chopped (see Chef Tip below) ½ cup chopped Serrano Ham or prosciutto Toasted, salted Marcona Almonds or regular whole blanched almonds Parsley for garnish Vegan option garnishes 1 cup garlicky croutons 1 tablespoon Smoky Garlic Oil (or any other smoked EVOO) 8 oz cremini mushrooms, sliced Preparation Remove the crusts from the slices of bread and cube. Measure out about 2 cups of bread cubes. Chop the tomatoes, add the measured bread cubes, garlic and pour into a food processor. Let sit for 15 minutes till the bread softens. Add the vinegar and pulse until smooth (add up to ½ cup of water or vegetable broth to get a soup consistency). This Andalusian classic, Salmorejo, incorporates a loaf of bread into a blended tomato base. The result is creamy, refreshing, and oh, so satisfying! Ingredients: 8 large tomatoes 2 cloves garlic, minced 1 medium sweet onion, chopped 1 jalapeño pepper, stems and center removed, minced 1 red pepper, stems and seeds removed, chopped 1 tablespoon Sherry vinegar 1/3 cup extra virgin olive oil, plus 2 tablespoons for drizzling 1/2 teaspoon sea salt 1/4 teaspoon fresh cracked black pepper 1/2 teaspoon Spanish smoked paprika 1/2 loaf day old French bread, crust removed, cut into 2” cubes Directions: 1. Bring a medium pot of water to a boil. With a sharp paring knife, cut an X on the bottom of the tomatoes and boil them in the water for 2 minutes until the skin begins to separate at the cut. Place tomatoes in an ice bath until cool quickly. Once cooled, peel o the tomato skin with your fingers. Discard the skin, remove the tomato core, and chop into 1” pieces. 2. Combine the tomatoes, garlic, onion, jalapeño, and red pepper in a high powered blender, and begin to pulse. Add the vinegar and olive oil, and blend until smooth. 3. Add the salt, pepper, and paprika and blend. Slowly add the cubes of bread and continue blending until the soup is creamy in consistency, adding 1-2 tablespoons of water if necessary.
