Dasher & Fisher Meadow Tasmania 11.90 15 botanicals showcase the lavender and oranges picked from the local gardens and fields. Wild meadow florals like lavender and sage with overtones of freshly picked oranges remind you more of the Amalfi coast than Bass straight. Green Ant Gin Adelaide Hills 11.90 The Green Ants display vibrant flavours of coriander and kaffir lime leaf, with a big citrus And lime burst on the palate further enhanced by Finger Lime. Native juniper is evident in The oral, perfumed aromatics, while the spicy notes of Pepper Berry serve to balance the Citrus flavours. English Bombay London 8.50 This gin is a light style and is named after the 182 carat star of Bombay diamond, this gin has a lighter more floral taste compared to those gin using a copper pot still Plymouth Plymouth 9.50 This gin is slightly less dry due to the root ingredients which brings a more earthy feel to the gin as well as softened juniper flavour Scottish Hendricks Scotland 11.90 This gin is infused with Bulgarian rosa damascene and specially selected cucumbers. It is also a blend of two different stills and has angelica root, caraway, chamomile, coriander, orris root, cubeb berry ingredients plus citrus added Hendricks Orbium Scotland This gin consists of Quinine and Wormwood flavours that are rounded out by blue lotus blossom which adds bright floral notes to the mix. 12.50 Hendricks Midsummer Solstice This gin has aromas of raspberries, roses and natural strawberries. On the palate is Lavender, strawberry and rose hip and the mid palate is sandalwood, juniper and pine 12.50 Choose your tonic Fever Tree Indian tonic, Fever tree Aromatic Capi Tonic Schweppes Indian Tonic 3 Sommelier’s Selections Since arriving in Australia in1988 and playing golf in the hunter valley where I did my first wine tour of Australia I fell in love with how passionate winemakers are. I then proceeded to the Yarra valley and Mornington on frequent visits to the Melbourne cup, then Barossa Valley, New Zealand and finally Margaret river in Western Australia. This then led me to also be very passionate about wine. Here are some of my favourites. 2017 Vasse Felix Heytesbury Margaret River, W.A 160 The nose has exotic floral details, with white peach and grapefruit, interweaving struck match, Nougat and a nutty/mealy, custard complexity. The palate is bursting with a luscious lemon freshness and stone fruit power that is sustained For incredible length. It builds in the mouth to reveal flavours of citrus tart and moreish sweet Crust. 2015 Langmeil ‘1843 Freedom’ Shiraz Barossa Valley, S.A 220 The aroma has a smell of Satsuma plum, mocha vanilla and savoury notes mingle with hints Of cedar spices. Rich sweet fruit is balanced wonderfully with briary and sweet spices and Lovely, silky tannin. A full bodied, textured wine showing great complexity with hints of cedar And allspice and in combinations, flow through to lengthy, brambly fruit finish. 2013 Tyrrells HVD Semillon Hunter Valey, N.S.W 98 A fuller, softer incarnation of HVD Semillon lifted white flower and citrus aromatics. The palate shows good length a reat balance with its clean, soft acid structure. 2016 Piazzo Langhe Nebbiolo Langhe, Italy 96 This wine is expansive and fragrant, fairly complex with raspberry, wild strawberry and Damson jam joined by geranium and spicy hints of cloves. The taste is round and Full-bodied, with delicate tannins. 4 Wines by the Glass Sparkling Wine by the glass 125mls NV Howard Park Petit Jete Chardonnay and Pinot Noir Mt Barker/Pemberton, W.A 15.00 Pale gold in colour with notes of citrus zest, peach and freshly baked macaroons. The fine mousse of the palate captures bright flavours of citrus, red berries and baked apple. Time on yeast lees has added creamy lemon curd and subtle wafer biscuit layers of flavour and texture. A wine rich and full of flavour, balanced by a fine and gently lingering acidity. White Wine by the glass 150mls 2018 Spy Valley Sauvignon Blanc Marlborough, N.Z 13.00 This wine has an aroma of grapefruit and lime zest, with sweet underlying passionfruit pulp. The palate is dry with a vibrant acid tension, there is a sweet fruit character showing The classic Marlborough interplay of tropical fruits, citrus and zesty currant and guava flavours. 2018 Reverend V Chardonnay Mount Barker, W.A 13.00 Brilliant in colour, this wine displays white peach and citrus on the bouquet and a touch of Toasty oak. On the palate, these nuances intensify and manifest themselves. 2018 Corte Giara Grigio Delle Venezie, Italy 12.00 A Medium Bodied wine with an alluring textrual crispness, this wine is sweet, sharp and Bursting with light juiciness. 5 Wines by the glass cont… Red Wine by the glass 150mls 2018 Rabbit Ranch Pinot Noir Central Otago, N.Z 15.00 A bright eyed red with hints of briar patch and a whiff of gun smoke. This wine is made In a very soft, fruit forward, low tannin style- a wine to be savoured and supped. 2016 Rolf Binder Reserve Shiraz Barossa Valley, S.A 18.00 This wine is matured in American oak and shows aromas of vanilla and ripe cherries. The Full bodied palate displays flavour of plums, dark cherries and blackberries fruits, with The rich, soft tannins giving the wine an intense finish and great length. 2017 Terrazas Reserva Malbec Mendoza, Argentina 15.00 The nose is intense floral and fruity notes. Presence of violets, ripe cherry and plum aromas, Reveals a toasty and spicy character of black pepper and chocolate. Its sweet and juicy mouth feel delivers finesse, delicate tannins and an elegant finish of Black fruits. 2017 Dandelion Cabernet Sauvignon Fleurieu, S.A 15.00 This wine has a taste of blackberry and blueberry flavours complete with the additional Structure of drying tannins. This wine’s fruit weight makes it lavish and rich in the mid-palate, But then more late-gifting tannin stretches out the wine, extending the back palate on and on. Rose Wine by the glass 150mls 2018 Reverend V Pinot Noir Rose Margaret River, W.A 13.00 This rose is modelled on a southern provence style; bright salmon in colour, the perfumed nose Of cherry, spice and herbs entice you to a pure berry compote palate with an ever so light Touch of fruit sweetness on the mid-palate. The wine finishes crisp, clean and dry. 6 Cocktails The Ardbeg Rob Roy A Spin on the classic cocktail using Ardbeg 10 year old Whisky mixed with Cinzano Rosso to add a little bit of sweetness to balance the peat in the whisky. Served in a chilled Martini glass garnished with orange. 20 The Woodford Reserve Old Fashion One teaspoon of sugar and dash of fee brothers orange bitters, Cinzano Rosso, add woodford reserve and ice stir and add orange peel and Marachino Cherry 20 The Classic Martini Served with a twist of lemon or olives. Available in Absolut Vodka, Plymouth, Bombay Sapphire 17 Also available in Belvedere, Grey Goose vodka and Hendricks 18 Amaretto Sour Amaretto, lemon juice, egg white and sugar syrup. 17 French Martini Chambord Black Raspberry liqueur, Absolut vodka & pineapple juice, shaken. 17 Negroni Plymouth Gin, Campari and Cinzano Rosso on the rocks with an orange peel. 17 Espresso Martini Made with half a shot of dark crème de cacao, half a shot of Tia Maria and a A shot of Absolute Vanilla vodka shaken with a shot of espresso.

Guests will have the opportunity to experience 11 of Margaret River’s most premium wineries over a stunning five-course dinner at three-hatted restaurant, Vue de monde on Monday 4 September, and Bentley Restaurant + Bar on Wednesday 6 September. Winemakers and sommeliers from wineries including Cape Mentelle, Voyager Estate, Howard Park and Woodlands will showcase their flagship varietals, predominately chardonnay and cabernet sauvignon, with all wines awarded 95+ points by James Halliday, or Gold Medals by the Langton’s Margaret River Wine Show. For Deep Woods Estate chief winemaker Julian Langworthy, the events offer a unique opportunity to bring together some of the region’s finest wines under one roof. “It’s great to see so many fantastic winemakers and wineries taking part in these events. I’m excited to showcase some of Deep Woods’ most notable wines alongside my industry peers,” he says.
