    Beef Rendang Minang recipe Author: KP Kwan Recipe type: Main Cuisine: Indonesian Prep time: 30 mins Cook time: 3 hours Total time: 3 hours 30 mins Serves: 2.5 kg Ingredients Ingredients (A) 1 kg of beef 600ml of coconut milk 100ml of vegetable oil Ingredients (B)- to blend ● 4 candlenuts ● 12 cloves of garlic ● 300 g of red chili ● 250g of onions, ● 50g of ginger ● 50g of galangal Taste of Asian Food 1 ● 50g of turmeric ● 1½ tsp of coriander ● 1 tbsp (15g) of salt ● 1 tsp of sugar ● 4 green cardamoms ● 11/2 tsp of cumin ● 10 cloves Ingredients (C)- Seasonings and Spices ● 4 stalks of bashed lemongrass ● 3 kaffir lime leaves ● 1 piece of assam keping ● 2 turmeric leaves, tied up Instructions 1. Cut the beef into 4 cm squares, half cm thick. Do not cut the beef too small as the meat can break into smaller pieces during cooking. 2. Blend all the ingredients in (B), set the blend aside. 3. Remove the green section and the outer sheath of the lemongrass. Use only the white portion. Bash them so that the lemongrass to ensure the release of the flavor. 4. Heat up the vegetable oil in a wok. Saute the spice paste (B) over low heat until aromatic. 5. Add the coconut milk and lemongrass into the wok. 6. Add the beef and cook over medium heat. Bring the coconut milk to a boil. 7. Once it is boiled, continue simmer over low heat. Add water from time to time when the stew is about to dry.

Karim1* , Farah Adibah Che Ishak1, Mohd Mursyid Arsyad2, Supatra Karnjamapratum3 and Jiraporn Sirison3 Abstract The Malaysia’s cultural heritage is authentic, unique and colourful with various local cuisines of different races and cultures. It is mainly originated from the Malay culture being the largest ethnic group in the country. The Malays themselves have contributed to many local cuisines ranging from appetiser, soup, main course and dessert. However, some Malay heritage foods have almost been forgotten and jeopardized in quality. This is especially happening to the Malay sweets or desserts which have gradually become less appealing to the younger generations. They are not even familiar with Malay foods, let alone consuming them. Among the popular Malay heritage foods in Malaysia are lemang, ketupat, rendang, wajik and dodol. Dodol specifically has been listed as one of the endangered heritage foods in Malaysia. Preserving the Malay cuisines is part of sustaining the Malay culture and this should begin with a great amount of knowledge and understanding about any elements within the culture itself. This article highlights a nostalgic and evergreen Malay’s traditional sweet, known by the locals as dodol by discussing its history, different types and names of dodol, as well as the recipes, preparation, cooking methods and packaging.

Youth is an initiative by the Malay Heritage Centre where students get to put on the hat of a programmer/educator by working with the museum staffs and their school teachers to conceptualise and facilitate their own programmes. • This programme inculcates a deeper appreciation and understanding of Singapore’s multi-cultural society and enable students to be more informed and sensitive individuals. At the same time, students will gain a variety of soft skills including leadership, research, public speaking and project management skills. • In our 2020 collaboration, the programme objective was for the RVHS students to design experiences in MHC for lower primary and pre-school students to learn about Hari Raya Puasa. Due to COVID-19, the activities were adapted into this deck of resource instead. • We hope this resource will be helpful for you to facilitate your Home-Based/Classroom-Based Learning.
