Omid Roustaei | www.thecaspianchef.com | www.instagram.com/thecaspianchef About Persian Cuisine Persian cuisine is one of the world’s great gastronomies, flourishing for centuries across an area that, at the height of the ancient Persian Empire (circa 550 to 330 B.C.), included modern-day Iran, along with parts of Iraq, Macedonia, Lebanon, Jordan, Syria, Saudi Arabia, Afghanistan, Pakistan, and Central Asia. The repertoire of dishes is fragrant, diverse, and highly refined, based on complex culinary techniques. They are imbued with fresh flowers and herbs like rose petals, fenugreek, and mint; spices like saffron, sumac, and cardamom; fruits like pomegranate and barberry; all kinds of citrus; and nuts, including pistachios and almonds. If this roster of ingredients sounds familiar, it’s because Persian cooking has influenced Middle Eastern, Moroccan, Northern Indian, and Turkish cuisines yet itself remains somewhat below the radar. Typical Iranian main dishes are combinations of rice with meat (such as lamb, chicken, or fish), vegetables, and nuts. Fresh green herbs are frequently used, along with fruits such as plums, pomegranates, quinces, prunes, apricots, and raisins. Characteristic Iranian flavorings such as saffron, dried limes, cinnamon, turmeric, and fresh herbs are mixed and used in various dishes. The agriculture of Iran produces many fruits and vegetables. Thus, a bowl of fresh fruit is common on Iranian tables, and vegetables are standard sides to most meals. These are not only enjoyed fresh and ripe as desserts but are also combined with meat and form accompaniments to main dishes. When fresh fruits are not available, a large variety of dried fruits such as dates, figs, apricots, and peaches are used instead. -

Baharat Seasoning (to taste) Pinch of freshly grated or dried Ginger Lemon Zest INSTRUCTIONS 3 Garlic Cloves Chopped Chicken/Beef Stock Begin by simmering chopped onions in ghee or butter until they Ghee or Butter1 Bay Leaf turn translucent. Then add long grain rice, toasting it as well before measuring in Baharat Spice Blend: stock, tossing in a bay leaf, covering, and cooking, bringing to a boil before letting it rest for 14 minutes. 1 tsp. Ground black pepper Salt and pepper the fish, cutting it into bite-sized portions and 2 tsp. Ground nutmeg setting aside. 2 tsp. Paprika In a pan, heat ghee (or butter), garlic, freshly grated ginger, chili 1 tsp. Ground Coriander peppers, turmeric, Baharat seasoning (black pepper, cumin, 1 tsp. Ground cinnamon coriander, clove, cardamom, paprika, cinnamon, and nutmeg, 1 tsp. Ground Cloves ground and blended), lemon zest, and a piece of cinnamon bark 1 tsp. Cumin until the garlic is nicely toasted. 1/4 tsp. Ground cardamom Then add a can of tomatoes and their water. Simmer for 5-8 minutes, until the water starts to reduce and form a sauce. Add fish and cook for an additional 5-8 minutes, or until the fish cooked through, with nice flakey skin, but not overcooked. Plate the rice first, topping it with the curry, and garnishing with fresh mint and/or cilantro. -

The confluence of these trends may significantly challenge governments, economies, societies, and food and water resources, contributing to instability and uncertainty in some countries in the region. Because of these trends, North Africa and the Sahel will require continuing focus and attention from Europe and NATO for the foreseeable future. Aubergine Chermoula with Date and Almond Couscous
Aubergine Chermoula with Date and Almond Couscous Roasted Aubergine marinaded in a Moroccan rub is topped with light, zesty almond and date couscous with spiced yoghurt. Ingredients Fresh Mint Ground Coriander Dates Saffron Almond Flakes Sweet Paprika Orange Cinnamon Couscous Cumin Fresh Parsley Lemon Fresh Coriander Tahini Aubergine Yoghurt Pantry Items Olive Oil. Salt and Pepper. Recipe #131 Livefreshr Timeline Pre-heat the oven to 200C and bring a pan of water to the boil. Refer to 0 the ingredient summary for correct amount. Halve the lemon and orange. FEZ STYLE LAMB WITH CHERMOULA FOR THE LAMB YOU WILL NEED 2 kgs Leg of lamb, bone in 1 tsp. Cumin seeds 1 Large onion, peeled & 1 g Saffron threads quartered 2 tbsp. Sea salt ½ Preserved lemon, rinsed 2 tbsp. Cracked black pepper 4 Garlic cloves, peeled ¾ cup Olive oil 2 tbsp. Rubyspice Ras El Hanout 2 cups Hickory or mesquite chips soaked for 1 hour in water then drained. (If using Weber) FOR THE CHERMOULA YOU WILL NEED 1 Small bunch parsley, stalks removed 1 Small bunch fresh coriander 2 cm Piece of ginger 1 Medium onion, chopped 3 Garlic cloves, chopped 3 tbsp. Smoked paprika 1 tsp. Freshly ground black pepper 1 tsp. Sea salt 1 tsp. Ground cumin 1.5 cups Extra virgin olive oil Water LAMB PREPARATION 20 minutes or overnight For the lamb, score the fat on all sides in a criss-cross pattern, about 2cms deep and 4cms apart. In a food processor or Thermomix, place the onion, preserved lemon, garlic, Ras el Hanout, cumin seeds, saffron threads, salt, pepper and olive oil. Whiz then spread the Ras el Hanout marinade all over the lamb and massage it well into the criss-cross cuts. At this stage, you can refrigerate the leg of lamb for a few hours or overnight or while you fire up the Weber, wood oven or conventional oven. Always have the lamb at room temperature before cooking. COOKING Kettle style BBQ 2 hours or Oven 5 hours Kettle style BBQ: Set up the BBQ as per instructions to a medium heat. -

They did not come to the colonies by their own choice. They were slaves, captured in their native land (Africa) and brought across the ocean to a very different place than what they knew at home. Often, slaves worked as cooks in the homes of their owners. The food they had prepared and eaten in Africa was different from food eaten by most colonists. But, many of the things that Africans were used to eating at home quickly became a part of what American colonists ate in their homes. Many of those foods are what we call “soul food,” and foods are still part of our diverse American culture today. Food From Africa: Most of the slaves who came to Maryland and Virginia came from the West Coast of Africa. Ghana, Gambia, Nigeria, Togo, Mali, Sierra Leone, Benin, Senegal, Guinea, the Ivory Coast are the countries of West Africa. Foods consumed in the Western part of Africa were (and still are) very starchy, like rice and yams. Rice grew well on the western coast of Africa because of frequent rain. Rice actually grows in water. Other important foods were cassava (a root vegetable similar to a potato), plantains (which look like bananas but are not as sweet) and a wide assortment of beans.
