Unmistakenly the best sweet wine on earth. from a truly special vintage where botrytis was fully developed by an atypical season, the entire crop was picked in one single pass. elegant, atypical and memorable. 3 premium champagne offering by the glass… preserved by perlage systems dom pérignon… unceasingly striving for perfection, from its early years, there has been an arduous ambition to ‘create the best wine in the world’ dom pérignon. established in 1743 in épernay, nowadays custody falls in the hands of richard geoffory as dom pérignon chef de cave, creating exceptional vintage wines from the best crus in champagne. 2009 dom pérignon, épernay, champagne, france -125ml- 80 a supple and expressive vintage. a complex and persisitent champagne displaying baked bread and roasted almonds on the nose, bracing acidity, citrus and oily toast-like characters on the palate. premium wine offering by the glass… (taste glass/glass) (75ml/150ml) preserved by enomatic wine serving systems penfolds… an australian icon and arguably the most influential winery in the southern hemisphere. founded in adelaide in 1844 by christopher rawson penfold. few would argue the importance of penfolds influence on australia’s winemaking industry. at 360 bar and dining, enjoy some of the best grange vintages by the bottle and perhaps by the glass… 1998 penfolds grange, shiraz/cabernet sauvignon, regional blend, sa 121/229 one of the four great vintages of the 90’s. this 20-year-old wine is a powerful, concentrated and well- balanced multi-regional masterpiece. showing crème de cassis mixed with blueberry and floral notes, as the wine sits in the glass, aromas of meat, plums and cola also emerge. 2016 penfolds 407 cabernet sauvignon, regional blend, sa 22/37 launched with the 1990 vintage in 1993. inspired by bin 707, bin 407 offers varietal definition and approachability, yet with structure and depth of flavour. it is a textbook cabernet sauvignon, bright red colour, savoury spices and cassis. great tannins and cutting acidity. 2015 penfolds st henri shiraz, regional blend, sa 29/55 st henri is a time-honoured and alternative expression of shiraz, and an intriguing counterpoint to grange. It is unusual among high quality australian red wines as it does not rely on any new oak. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. 2016 penfolds 16a chardonnay, adelaide hills, sa 29/55 reserve bin a chardonnay has evolved into a wine that is now a distinctive, single-region style in its own right, with a contemporary and expressive adelaide hills chardonnay persona. fruit is hand-picked into small bins and then whole-bunch pressed. enhanced mouthfeel and complexity is achieved by fermenting and maturing on solids with regular yeast lees stirring. 100% malolactic fermentation (all natural) 4 premium wine offering by the glass… (½ glass/glass) (75ml/150ml) preserved by coravin systems -75ml/150ml- 2011 josé antonio lópez ‘tricó’ albariño riasbaixas, spain 20/34 with a vast experience gained since 1985 in winemaking and viticulture, josé antonio lópez is undebatably the responsable for the resurgence of quality albariño in rais baixas by successfully proving that albariño is a variety with long ageing potential. trico is a medium body white wine displaying a vibrant fragrance of rockmelon and riped yellow peach. Flavourful palate driven by the tipical mineral character of the variety and precise mouth-watering acidity.. 2014 olivier leflaive meursault burgundy, france 25/45 one of the biggest villages of la côte de beaune which produces mainly white wines. the soil is rich and deep (at the bottom of the hillside) or limestone and marly in the ‘mountain’. This is a cuvee that comes from blending about fifteen different but complementary plots in order to obtain rich and elegant wines. 2013 vasse felix ‘tom cullity’ cabernet sauvignon/malbec margaret river, wa 36/69 an incredible release for vasse felix’s 50th anniversary. this wine descends from the original vines tom cullity planted in the 60’s. a refined and elegant cabernet blend showing characteristic notes of cassis, cherry and cedar. classy and fine tannins with a prolongued fine finish. a finely crafted example true to its terroir, the quality of its old vines and a blessed approach by virginia willcock. 2005 château montviel pomerol, merlot/cabernet franc bordeaux, france 26/49 dominated by merlot and complemented by cabernet franc, this pomerol comes from vines with an average age of roughly 30 years. the best parcels are located near château clinet and benefit from micro- vinification done in new barrels that contribute complexity and vigour to the sum of its parts. the 2005 shows a distinct evolutionary character with an inviting and very surprising aroma of cedar, plum, forest floor, pine, nuts and black cherry. 2013 tenuta san guido sassicaia cabernet blend tuscany, italy 45/80 sassicaia is today one of the finest wine in the world.
