Results: seeds only have 3.98% of palmitic acid. Sacha inchi seeds have a high content of unsaturated fatty acids with 34.98% of ɷ6 α- Linoleic and 47.04% of ɷ3 α- Linolenic. Sacha inchi Conclusions: functional foods. Sacha inchi seed is a good source of fatty acids ɷ3 and ɷ6, being ɷ3 and ɷ6 in a good proportion. Abstract During the last years, the world avocado trade is on the rise, however, approximately 20% of the production is rejected for low caliber. This avocado discarded by low caliber can be used in the elaboration of other products, to give it added value. The objective of this study was to determine the shelf life of Hass avocado oil, type of discard, obtained by: (a) Drying by stove/Soxhlet (b) Lyophilized/Expeller. For the physicochemical characterization of the oil, density, melting point, acidity index, refractive index, iodine index and peroxide index were determined. The induction time was carried out by the RANCIMAT method, for which three temperatures of 140 °C, 160 °C and 180 °C were used and the shelf life of the oil was obtained by extrapolation at 25 °C. The results indicate that there is a significant statistical difference in the physicochemical characteristics of both oils. The shelf life was for the oil obtained by drying stove/Soxhlet 5.94 years and for the oil obtained by freeze-dried/Expeller 4.41 years, since both oils had a high content of unsaturated fatty acids 16.98% and 17.12%, respectively.

In this study, the encapsulation of sacha inchi oil in alginate (AL) and chitosan (CS) nanoparticles was achieved with the assistance of high-intensity ultrasound. Nanoemulsion is the most effective delivery and high stability system for lipophilic bioactive agents. Chitosan and surfactant concentrations were varied to study their effect on particle formulations. Size, zeta-potential, polydispersity, and stability of particles were determined in time to optimize the preparation conditions. Sacha inchi oil encapsulated in AL-CS nanoparticles showed a higher loading efficiency and stability for short and long periods compared with other vegetable oils such as olive and soybean. Also, because of the types of tocopherols present in sacha inchi oil (γ- and δ-tocopherols), a much higher antioxidant activity (95% of radical reduction in 15 min) was found in comparison with nanocapsules with olive oil, which contain α-tocopherols.

    5 NOBLE SEEDS: SACHA INCHI FROM AMAZONIA TO THE CARIBBEAN BASIN? HANS NUSSELDER AND PAUL CLOESEN 1. Introduction Sacha inchi (Plukenetia volubilis) is a perennial vine native to tropical America, which is notable for the high oil and protein content of its seeds. Both this oil and protein are of great benefit to human health, particularly for young and elderly persons. Several species of the genus Plukenetia were described for Mexico, Costa Rica and Suriname in the 1960s. 1 However, its wide dissemination within and outside of Peru came two decades later and it adapted in small farms oriented to ecological production. The cultivation and processing of Sacha inchi, mostly in edible oil, may help slow the advance of the agricultural frontier and improve the income of farmers, despite possible phytosanitary and marketing problems. This chapter presents an overview of Sacha inchi production and commercial practices, its potential and the factors that limit the expansion of its cultivation and consumption in the Caribbean Basin. In the following sections, the economic and social context is described, followed by a brief analysis of its nutritional properties. The factors that influence the dissemination process are discussed with a view to potential integration into cropping patterns and consumption in Central America and the Caribbean. The discussion concludes with several issues that deserve to be developed in the agenda for academic research and pilot practices in the public policies of this region. 2.     Sustainable protein sources from greenhouses Desk study Shuna Wang Report WPR-1045 Referaat De afgelopen jaren is de vraag naar duurzame eiwitbronnen toegenomen. Eetbare insecten die gekweekt zijn op reststromen uit de glastuinbouw en eiwitrijke gewassen die in kassen geteeld worden, kunnen hierin voorzien. In een literatuurstudie heeft Wageningen University & Research de mogelijkheden verkend. Eetbare insecten zoals meelwormen, krekels en sprinkhanen bevatten naast hoogwaardige eiwitten ook onverzadigd vet, vitaminen en mineralen. Ze kunnen op verschillende reststromen of substraten worden gekweekt, maar het dieet zal aangevuld moeten worden met eiwitten en vetten. De belangrijkste plantaardige eiwitbronnen zijn peulvruchten en oliezaden, die vaak worden gebruikt om dierlijke eiwitachtige producten te maken. Verschillende gewassen zijn gescreend op potentie voor kasteelt. Daarbij is gekeken naar voedingswaarde, geschiktheid voor hogedraadteelt en afwezigheid van juridische problemen. Lupinesoorten en tuinbonen voldoen aan deze eisen. Abstract De demand for sustainable protein sources has increased in recent years. Rearing edible insects using side streams from greenhouses and high protein crops grown in greenhouses can contribute to this demand. Wageningen University & Research has explored the possibilities in a deskstudy. Edible insects such as mealworms, crickets and locust species contain quality proteins, but also unsaturated fat, vitamins and minerals. They can be reared on various waste streams from greenhouse crops, but proteins and lipids should be added to the diet. The major plant protein sources are legumes and oilseeds, which are often used to generate animal protein-like products. Several crops were screened on their potential for greenhouse production on the criteria high nutrition value, suitability for high-wire cultivation and absence of legal issues.
