Microbiology Dept., Fac. of Agric., Damietta University, Damietta, Egypt 2Dairy Dept., Fac. of Agric., Damietta University, Damietta, Egypt Abstract The fungal counts on Ras cheese samples obtained from ripening rooms of different factories from were determined. The lowest total fungal count was in Akel's factory samples, but El-Eman's factory was the highest count being 0.8×105 and 1.6×105 colony forming unit/gram (cfu/g), respectively. A total of 66 fungal isolates were examined in this study. The classification position of obtained fungal isolates were classified in three families (Endomycetaceae, Mucoraceae and Trichocomaceae), 6 genus and 13 species as following Geotrichum candidum, Aspergillus ochraceus, A. alliaceus, A. oryzae, A. niger, A. nidulans, Emericella nidulans, A. flavus, A. glaucus, A. flavipes, Penicillium sp., Mucor sp. and Rhizopus stolonifer. Most of fungal strains were found in El-Ashmawy's factory and Abdo Gohar's factory being 7 strains, but Akel's factory and El-Eman's factory were lower being 5 species and the last were El-Safa's factory and El-Faiomy's factory being 4 strains belonging to the genus Aspergillus being A. ochraceus; A. oryzae; A. niger and A. glaucus. A. oryzae was observed in all factories except Abdo Gohar and El-Eman's factories being 39.39% while the other strains were attributed according to their percentages.

    47 Banquet March 7, 2010 48 49 Gebna Makleyah Gebna Makleyah Oven-Fried Cheese Ingredients: 1 cup firm feta cheese , crumbled, or traditional Egyptian cheese such as labna or gebna 1 tablespoon flour 1 egg Salt and freshly ground black pepper , to taste Olive oil Lemon wedges Pita bread cut into triangles, for serving Directions: Preheat oven to 400°F. Place the cheese, flour, egg, salt, and pepper in a bowl and mix well with very clean hands. Roll the mixture into 1-inch balls. If the mixture seems too loose to hold the ball shape, add a little more flour. If the mixture seems too dry, add a bit of lemon juice, vinegar, or water. Pour 2 or 3 Tablespoons olive oil onto a cookie sheet to grease. Arrange the cheese balls on the cookie sheet, rolling them around to coat thoroughly with the oil. Bake 5 minutes. Wearing an oven mitt, open the oven door and shake the cookie sheet to prevent cheese balls from sticking and to turn them. Bake 5 more minutes, until golden brown. Remove with a spatula and drain on absorbent paper.     Englishization as a Linguistic Phenomenon among Egyptian Youth with Reference to Selected Egyptian Traditional Dishes: A Lexical-Cultural Approach Englishization as a Linguistic Phenomenon among Egyptian Youth with Reference to Selected Egyptian Traditional Dishes: A Lexical-Cultural Approach Marwa Adel Eissa Mahmoud Nasser Assistant Professor of Linguistics Faculty of Women for Arts, Science &Education Ain Shams University [email protected] Abstract This paper discusses Englishization in the language of Egyptian youth as manifested in the borrowings of food-related terms. In the past few years, the use of English, and the neglecting and belittling of the Arabic language, have been a trend among a group of Egyptian youth who belong to a high socio-economic level which makes it worth to study and examine. Therefore, this paper attempts to shed light on this trend by describing the borrowed words to find out the motivations behind it and the consequences that result from it. By reviewing the literature, it is found that lexical borrowing in Egypt has been extensively studied by many researchers from different perspectives (e.g., Hafez 1996; Ibrahim 2006; Nasser 2014). Some other studies have focused on the language of Egyptian youth such as Nassar (2011); Abdoun (2008); Srage (2014); and, Warschauer, Said, Zohry (2002). The data includes examples of English borrowings of Egyptian traditional dishes and it is collected from Twitter. Moreover, Englishization is examined within the framework of contact linguistics as proposed by Kachru (2005). Then, a discussion of the impact of this trend on the social and cultural identity of Egyptian youth is included.
