Sarah Nasello / The Forum Meringue Kisses Makes: About 4 dozen 1-inch kisses Ingredients: 4 large or extra-large egg whites, room temperature ½ teaspoon cream of tartar ½ cup superfine sugar (blitz granulated sugar in food processor for 30 seconds) 1 cup powdered sugar ½ teaspoon pure vanilla extract Directions: Preheat oven to 200 degrees. Line 2 baking sheets with parchment paper; set aside. Make sure your mixing bowl and whisk or beater attachments are completely clean, as any grease or residue can prevent the egg whites from whipping properly. Add egg whites to your mixing bowl and beat on medium speed until foamy, about 30 seconds. Add cream of tartar and beat on medium-high speed until soft peaks form, about 1 ½ to 2 minutes. With the mixer on medium-high speed, slowly add the superfine sugar, 1 tablespoon at a time. Continue beating until the meringue is stiff and glossy and most of the sugar has dissolved, about 2 minutes. Rub a little meringue between your fingers; if it is still gritty, continue to mix on medium-low speed until there is barely any sugar grain when you test it. Add the vanilla extract and mix on medium-low for 10 seconds. Use a rubber spatula to fold in the powdered sugar, adding it in 3 stages so that the meringue doesn’t deflate. Gently fold the sugar into the meringue until fully incorporated. If using food coloring or melted chocolate, fold in just 3 to 4 times lightly for a swirled effect, or fold in completely for a solid effect.

The lemon pie can be refrigerated up to 4 days of frozen for weeks without the Italian meringue though. The meringue can be kept frozen separately and add the day of serving. Spoon or pipe meringue over the chilled lemon custard. Right before serving torch the meringue to give its golden color or bake in a 450ºF (230ºC) preheated oven for about 8 minutes. It can actually be both; torched and baked! Measuring by weight is far more accurate than measuring by volume.     PAVLOVA ROULADE Serves 8 ANNA POLYVIOUPUNK When the master pâtissier Christophe Michalak came into my pastry kitchen on a promotional tour of Australia, he said the one thing he wanted to try was a pavlova. I quickly whipped up my all-time favourite recipe and sent it to his room. He requested the recipe for his book, which I bought just to see my name in it. He’s a good looker and super-talented too. METHOD Preheat the oven to 160°C. Line a 30 cm square baking tray with baking paper and spray with cooking spray or oil. In the clean bowl of an electric mixer fitted with the whisk attachment, whisk the egg whites for 2 – 3 minutes to soft peaks. Reduce speed to low, then gradually add the caster sugar and cornflour together until combined, then gradually add the vanilla paste. The meringue should be thick and glossy. Spread the meringue evenly over the baking paper, taking it right to the edges. Bake for 15 minutes or until a light golden colour. Don’t open the INGREDIENTS door while cooking. Sprinkle the extra caster sugar over a fresh sheet of baking paper on a flat surface. Turn the cooked meringue onto the Meringue sugar-dusted paper. Flip the paper over onto a clean tray and gently peel 6 egg whites, at room temperature the baking paper away. Even if you have to use store bought lemon juice it will still be a tart and sweet favorite. Pie Crust Instructions: Bake Pie Shell at 350 degrees. Once you have pressed the pie crust dough into the pie tin, cover it with clean glass marbles. This will prevent bubbles from forming under the crust. Bake crust by itself before putting in lemon meringue filling for 8 to 10 minutes or until golden brown. Pie Filling Ingredients: • 1 1/2 Cups sugar • 1/3 Cup plus 1 TBS cornstarch • 1 1/2 Cups water • 3 egg yolks, slightly beaten • 3 TBS margarine or butter • 2 tsp grated lemon peel • 1/2 Cup lemon juice (fresh squeezed is best) • 2 drops yellow food color if desired Lemon Filling Directions: • Pre-heat oven to 400 degrees. • Mix sugar and cornstarch in 1 1/2-quart saucepan. Gradually stir in water. • Cook over medium heat, stirring constantly until mixture thickens and boils. • Boil and stir 1 minute. • Gradually stir at least half of the hot mixture into egg yolks. • Stir into hot mixture in saucepan. • Boil and stir one minute; remove from heat. • Stir in margarine, lemon peel, lemon juice and food color. • Pour into pie shell. May be chlorinated, which increases its water holding ability and reduces gluten strength. Shortening and oil Gives a tender structure. Fats are foam destabilisers so the way in which fat is mixed with other ingredients needs to be considered, and use of emulsifiers is essential. Sugar Provide sweetness, tender structure. Fine castor sugar readily dissolves in butter. Eggs, egg white Foam stabilisers, which slow down the coalescence of air bubbles. Emulsifiers Reduce the foam destabilising effect of fats. Cake emulsifiers reduce surface tensions so it is easier to incorporate air into a batter during mixing. Baking powder Double acting baking powder; with Mono Calcium Phosphate as the fast-acting leavening acid to produce a lighter batter directly after mixing, and slow-acting Sodium Acid Pyrophosphate to produce carbon dioxide gas for extra leavening during baking. The rate of the slower leavening agent is most critical – it must be fast enough to give sufficient leavening before the cake structure sets but not so fast as to cause tunnels when the gas escapes early in the baking when the batter viscosity is low. Baking powder affects pH of the product, which affects final colour.
