Blueberries are in season, and while it’s hard to beat eating them fresh, baking them in a cake that can be eaten at breakfast, dessert, or snack (or a midnight Blueberry Lemon Cake meal if we’re being completely honest here) is a close second. Double the recipe and freeze one.

Ingredients: This cake is moist, dense, and delicious.

• 2 large eggs • 1 cup granulated sugar • 1 cup sour cream (8 oz) • 1/2 cup sunflower oil • 1 tablespoon vanilla extract • 1/4 tsp salt • 2 cups all-purpose flour • 2 teaspoons baking powder • zest and juice from one medium lemon, divided • 1/2 tablespoon corn starch • 16 oz fresh blueberries Directions:

Lightly butter the sides of a 9-inch springform pan and line the bottom with baking parchment. Preheat oven to 375˚F.

Rinse blueberries and drain well. In a medium bowl, toss blueberries with 1/2 tablespoon of corn starch and 1 teaspoon of lemon juice, stirring until well combined and no dry white cornstarch remains.

Beat 2 eggs and 1 cup sugar until light in color and thick. Add 1 cup sour cream, 1/2 cup oil, 1 tablespoon vanilla, 1/4 teaspoon salt, and beat on low speed until well combined.

Combine 2 cups flour with 2 teaspoons baking pow- der then add to batter 1/3 at a time, mixing to incor- porate with each addition. Do not overmix. Finally, add 1 tablespoon lemon juice and 1/2 tablespoon zest.

Pour half of batter into prepared springform pan and spread evenly. Evenly dot with half of the blueberries. Spread with remaining batter then dot with the rest of the blueberries, push- ing them gently, about halfway into the batter.

Bake at 375˚F for 45 to 55 minutes, or until a toothpick inserted in center comes out clean. Let cake rest in the pan 15 to 20 minutes, then remove springform ring and cool until room temp.

The Pony Express is seasonal transportation service provided by the Town of Chincoteague. This service is open to the public. Many of the motels, restaurants, shops, parks, recreational areas, ice cream par- lours, and campgrounds are along our routes. Trolleys are equipped with wheelchair lifts.
