    KAY BROTHERS CELEBRATES 125 YEARS OF WINE HERITAGE The Kay family has been synonymous with McLaren Vale region for 125 years. It is the oldest family winery in McLaren Vale still in founding family hands with the reputation of crafting some of the finest Shiraz and Cabernets in Australia. The unique old vine Block 6 Shiraz is classified Outstanding in the Langton’s Classification of Australian Wine and rated as one of the Best Wineries of the Region, 5 Red Star Winery in James Halliday Wine Companion 2016. Established in 1890 by brothers Herbert and Frederick Kay, the Amery vineyards nestle between St. Vincent’s Gulf, 40 kilometers south of Adelaide, and the rolling foothills of the Southern Mt. Lofty Ranges. The winery itself is located on the top of a hill 5 kilometers from the McLaren Vale Township and its cellar door, which is part of the original winery complex, boasts stunning panoramic views of the surrounding picturesque valleys and hillsides. The original parts of the winery, as well as the family homestead that was built in the early 1850s, are now “Heritage Listed” by the government as important historic sites in Australia. The winery celebrated its first grape crush in 1895. Today, the third and fourth generations of the Kay family – Herbert’s grandsons Colin and Bill, granddaughter Alice, and great-granddaughter Elspeth – continue the family winemaking tradition. The family’s winemaking philosophy is to make rich, full-bodied, fruit-driven wines (using the 1896 open fermenters and 1928 basket press) with a minimum of 18 months maturation in a combination of American, Eastern European (Bulgarian or Hungarian) and, most recently, French oak casks.

This booklet is designed to give you all the key information you need to sell our wine, or to become a brand ambassador. We look forward to working with you! About Us Willunga 100 was founded by David Gleave MW and John Ratcliffe, two Australian wine devotees passionate about making outstanding wines from McLaren Vale. Before our first vintage in 2005, David and John explored McLaren Vale and came across plots of 50-year-old Grenache vines. At the time, most of the wine produced from this fruit was destined for blending as there was little demand for top quality Grenache. David and John decided this had to change, so they made these vines their focus and gave them the attention they deserved. We haven’t looked back since. The Tree The tree featured on our bottles is an old River Red Gum that stands tall over the vineyards. It was well over a hundred years old when the first vines were planted in Australia in the 1840’s. The Willunga 100 Name We take our name from the historic ‘Hundred’ of Willunga that was established in 1839, only three years after the settlement of South Australia. At the time, 100 households were needed to occupy an area in order to qualify for a place on the map, this was called a ‘Hundred’. Today, the Hundred of Willunga is where much of our fruit comes from. Our Winemaker Skye Salter, Winemaker Skye Salter is a passionate and established winemaker who has spent much of her career working in South Australia for wineries such as Hardy’s Tintara, Penny’s Hill, Wirra Wirra, Shaw & Smith and Project Wine.

Vintage as a result was late, but the quality was outstanding.” UPPER TINTARA VINEYARD Andrew ‘Ox’ Hardy, Winemaker. SHIRAZ BACKGROUND When Thomas Hardy purchased the Upper Tintara Vineyard in McLaren Vale in 1871, it heralded the foundation of one of Australia’s greatest winemaking dynasties. Today the picturesque property is still owned by the Hardy family, and consists of native protected scrub and approximately 45 Ha of vines, including millennium Shiraz plantings which are the fruit source of this wine. WINEMAKING Following harvest, the fruit was destemmed and crushed into Potter heading-down board fermenters. The must was inoculated with a chosen yeast strain and, once per day, the fermenting juice was drained to another tank, before being pumped back, re-floating the cap of skins, gently extracting colour, tannin and flavour. The wine was drained off and the skins bag-pressed before the combined wine was transferred to French Oak - second fill barriques and three new hogsheads. The wine spent eighteen months maturing in oak before bottling with minimal filtration.     Wine Alumni Newsletter April 2018 Patron’s message It has been a while since we have produced a newsletter. Everyone seems to live such busy lives these days. Since the last newsletter we have conducted several events including dinners with the students and Barossa winemakers/viticulturists on their annual student tour of the Barossa, a breakfast at the 16th Australian Wine Industry Technical Conference, ROCA visits and Vintage Conversations. About 80 people attended the Breakfast Reunion at the 16th Wine Industry Technical Conference at the Convention Centre in Adelaide. It was a great success with a mix of young and mature, recent and not so recent, graduates and staff. It was pleasing to see so many staff attend, both from the Roseworthy days and now Waite. This is a great opportunity to catch up with friends and we intend to make this a continuing event at the Technical conferences. Thank you to all who helped organise this event. The next breakfast event will be at the Wine Industry Technical Conference in Adelaide in 2019. Members of the steering group and winery staff hosted the annual visit of members of ROCA (Roseworthy Old Collegians Club) to the Waite winery. My role is easy as I welcome them and tell a few stories of the period when Roseworthy amalgamated with The University of Adelaide and then hand over to Paul Grbin, Associate Professor in the wine group and Steve Clarke (winemaker) to take the tour of the winery and conduct a tasting of wines produced by staff and students. We then finish with a morning tea and enjoy biscuits and cakes baked by my wife, Judith.

  • Vintage 2019 Slate Shiraz
    VINTAGE 2019 “It is really exciting to make wine in the fermenters that have not been used for over 90 years.” SLATE Andrew ‘Ox’ Hardy, Winemaker. SHIRAZ BACKGROUND When Thomas Hardy purchased the Upper Tintara Vineyard in McLaren Vale in 1871, it heralded the foundation of one of Australia’s greatest winemaking dynasties. Today the picturesque property is still owned by the Hardy family and consists of native protected scrub and approximately 45 Ha of vines. WINEMAKING 2.3 tonnes fruit from the Moreton Bay block was destemmed, crushed and chilled into a picking bin before being emptied with bucket and shovel into an open slate fermenter at the original Tintara winery. The winery was built by a consortium of wealthy Adelaide businessmen led by the legendary Dr A.C. Kelly in 1863, the slate mined at nearby Delabole quarry in the Willunga Hills. These fermenters were last used in 1927. The cold must was inoculated with a chosen yeast strain, Melody as well as a mixture of wild yeast strains, and the open ferment was hand plunged three times a day. Fermentation lasted 9 days after which the wine was pumped out and the skins dug out with bucket and shovel. The skins were then pressed in a basket press straight to older French oak barriques for 18 months maturation before bottling on November 11th 2020.
