Welcome everybody home with a savory fall soup! Mushrooms are delicious, and they’re good for you, too. Chef Kirk Larsen of Carmel Valley Manor sent photos of the finished dish that include a small grilled cheese sandwich made with Leerdammer cheese, a Dutch version of Swiss cheese available at the Cheese Shop in Carmel Plaza and in larger grocery stores. While Chef Kirk’s version calls for exotic varieties of mushrooms, you can use whatever you find in your store or farmers market. “Mirepoix” refers to the mix of chopped vegetables that form the base of the chowder. This recipe makes plenty of soup, so you can have some now and freeze the rest for a rainy winter’s day.
