They really were a mess… what to do with them? We collected the best bunches and set them to dry on trellises, then pressed the remaining unblemished grapes in the cellars, racked the must off after a brief maceration on the skins, and refermented the must with the grapes we'd dried on the trellises, using the traditional “governo alla toscana” technique. The result was a huge success: a pale ruby, richly perfumed wine that was light, fresh, and extremely pleasant to drink. It was barely 12 % alcohol and was therefore especially suited to those "adhering rigidly to diets" and the abstentious who fled the notion of alcohol.     Central Italy Toscana Tuscany has a maritime-influenced climate, winters can be harsh and summers can be hot. There is a wide variation in microclimates throughout the appellations of the region: Montalcino in the southern province of Siena is much drier and Montepulciano, further inland, has a more continental climate. The soil structure of the region is also diverse. Sangiovese is the principal red grape of Tuscany. Typically, Sangiovese wines are light in colour, high in acidity, tannic, and medium- to full-bodied. Sour cherry and herbal flavours are common. Sangiovese traditionally spends time in large casks, but new small barriques are also used. In appellations where blending is permitted, Cabernet Sauvignon or the local Colorino & Canaiolo are used to add colour and power to Sangiovese, & to soften the blend Sangiovese is the principal red grape in the DOCGs: Chianti/ Chianti Classico, Carmignano, Vino Nobile di Montepulciano, and Morellino di Scansano. It is the only grape permitted in Brunello di Montalcino DOCG. In addition to the Colorino & Canaiolo Nero,. Cabernet Sauvignon and Merlot can be added in small proportions to the Chianti blend, Trebbiano, & Malvasia are also widely planted in the region. Vernaccia is limited to the area of San Gimignano. In the Maremma vineyards, the Vermentino shows promise, Chianti DOCG Chianti was one of the first delimited zones in Europe. It is immersed in the distinctive Tuscan countryside, amidst olive- groves, cypress trees and vineyards. The estate totals around 80 hectares, with 40 hectares covered by vineyards and the remainder devoted to olive groves. Suave and seductive, it's a full rounded 100% Sangiovese, aged for eight months in barrels. A portion of grapes were left to dry for 20 days, which adds terrific concentrationto the wine. Full and fruity, with hints of earthy minerals combinated with touches of choccolate spices and leather. Governo all'uso Toscano is a winemaking technique reportedly invented in Tuscany in the 14th century to help complete fermentation and stabilize the wine . The technique involves saving a batch of harvested grapes and allowing them to partially dry . If fermentation of the main batch starts to slow or appears to be nearing stuck fermentation , the half dried grapes are added to the must which then gives the yeast cells a new source of sugar to enliven the batch . From there , the must can be fermented dry or stopped with the wine having a higher level of residual sugar .

    Natale Verga Governo It never fails, just when we think we know a thing or two about wine, we learn something new! When we found the Natale Verga Governo Rosso, we had no idea that Governo referred to a winemaking tech- nique. This technique was once widely used in Chianti, but is rarely used now. The technique consists of harvesting grapes as usual, then setting them aside to dry out. The dried grapes are pressed in late fall and then added to young wines which have already concluded their fermentation. Combining these two juices results in a second round of fermentation, which encourages malolactic fermentation. The wine produced has a softened, rounded mouthfeel, especially noticeable with Sangiovese, which can be quite robust and acidic. Casa Vinicola Natale Verga was founded in Tuscany by Enrico Verga in 1895, and has been passed down for four generations. This blend of Sangiovese, Cabernet Sauvignon and Merlot is ready to drink now but can cellar for up to 5 years. Serve at 16C.
