And rightly so. They are easy to prepare, they taste good, and they supply real food values. In the quantities that you eat them, they can supply some of your daily requirements of Vita­ min C, the B Vitamins, iron, starch, and a small amount of good quality protein. While their energy value is high, they need not be fattening. It’s the butter, gravy, or other fats that we put on them that pile up the calories. To get the most food value from potatoes, boil them in their jackets and eat them as soon as they are cooked. If potatoes must be peeled, peel them thin and put them in salted water.
