Tea Culture Tea culture is de!ned by the way tea is made and consumed, by the way the people interact with tea, and by the aesthetics surrounding tea drinking. Tea is commonly drunk at social events, and many cultures have created intricate formal ceremonies for these events. Western examples of these are afternoon tea and the tea party. In the east, tea ceremonies di"er among countries, Japan's complex, formal and serene one being the most known. Other examples are the Korean tea ceremony or some traditional ways of brewing tea in Chinese tea culture. Unique customs also exist in Tibet, where tea is commonly brewed with salt and butter, or in the Middle East and Africa where tea plays an important role in many countries. The British empire spread its own interpretation of tea to its colonies, including places like Hong Kong, or Pakistan which had existing tea customs. Di"erent regions also favor di"erent varieties of tea, black, green, or oolong, and use di"erent #avourings, such as milk, sugar or herbs. What’s not?1 Tea has an image of being a healthy drink and there is certainly a lot of recent newsy advice about its potential health benefits due to its anti-oxidant content. Black tea, green tea, white tea, red tea, herb tea – what to drink? First, the word “tea” properly refers to drinks made from a shrub Camellia sinensis, native to southeastern Asia. Its name tells you that it is a camellia native to China, although the plant is now grown in many subtropical areas. These teas include black, oolong, green, and white tea; the difference among these teas is their decreasing degree of fermentation (oxidation) between when they are picked and when they are packed up and shipped out to consumers. Second, red tea (rooibos) and herb teas are water solutions of leaves gathered and prepared from other plants. They have no caffeine, or the caffeine related compounds, theophylline (in tea) and theobromine (in tea and chocolate). Black tea is the most common form of tea available in stores, cafes, and our diets. After the tea leaves are picked, they are “withered” and fermented. Oolong tea has been fermented for less time than black tea, and green tea has not been fermented at all. White tea, which is fairly new to the American market, is prepared from buds and young leaves, which are merely steamed and dried before packaging.

Modern science seems to be showing that this is indeed a healthy practice as research indicates tea may help with cancer, heart disease and diabetes, encourage weight loss, lower cholesterol, bring about mental alertness and contains antimicrobial qualities. American Dietetic Association spokeswoman Katherine Tallmadge, MD, RD, LD explains "There doesn't seem to be a downside to tea...I think it's a great alternative to coffee drinking. First, tea has less caffeine. It's pretty well established that the compounds in tea - their flavonoids - are good for the heart and may reduce cancer." (Edgar, 2009). Whether it is green, white, black, oolong or pu-erh tea it all comes from the Camellia sinensis shrub which grows in India and China. This plant is rich in unique antioxidants called flavonoids which may be useful in fighting cancer, heart disease and clogged arteries. "Tea has about 8 to 10 times the polyphenols (antioxidants) found in fruits and vegetables." Methods: A total of 80 samples (20 of each type of tea) were analyzed by ICP-OES. Results: The highest concentrations of Cd, Co, Mg, Pb and Zn were found in samples of white tea, those of Cr, Fe and Ni in the red tea, and those of Cu in green tea. While the lowest levels of Cd, Co, Fe, Pb and Zn were found in black tea, those of Cr, Mg and Ni in the green tea, and those of Cu in the white tea. Conclusion: The calculated intakes of each metal (assuming the consumption of a cup of tea 2 g/ day) shows that Cr, Cu, Fe, Mg and Zn make a negligible contribution to the RDI, and the same applies to Cd to the PTMI and Pb to the PTWI.
