Recently, the Lynch’s had the opportunity to expand their business and are looking at using a 200 sq. ft. area within the building that is currently part of the bar area, but is dead space. “It allows us to serve food and grow in the community,” said Patrick Lynch. “It’s always been our goal to be a full-service restaurant.” Lynch added that he plans on serving food for both lunch and dinner, and will remain at a maximum occupancy of 95 customers. Residents in attendance during Tuesday’s hearing spoke in favor of the business owners and their intentions to add a kitchen. “They’re a family that is trying to run a fam- ily business,” said Kimberly LaMarche. “I would like to see our town have more busi- nesses like this.” Ryan Mullen, who noted he has worked for a number of food establishments in the com- munity, has worked for the SkyBox and knows what the owners stand for. “These are two people that believe in family and the community,” said Mullen. The combina- tion of spicy and chocolate just plain works, and I wanted to see how it would translate into another beloved treat, the good old American brownie. A few things to note: 1) Yes, yes, I get the humor in having the word “pot” and “brownies” in the title. I have another One Pot Fudgy Brownie in The Mom 100 Cookbook, and I’ve had to answer for the word choice more than a few times. Tee hee, very funny, but seriously, they are in fact made in one pot, so cleanup is awesome. 2) The kick from the spices — cayenne and cinnamon — is at first subtle, then more pronounced, and then fades, which means of course that you must go back and have another bite. And another. You could also add a pinch of ancho chili powder instead of the cayenne, or in addition to it if you’re feeling frisky as all get out. Don’t substitute regular chili powder or chili spice blend. New Boat Ramp Continued from Page 1 The addition of the South boat ramp could be a tremen- dous benefit for the community as the Congamond Lakes features nearly 80 bass fishing tournaments per year from April through November. Congamond Lake is well stocked with largemouth bass, yellow perch, black crap- pie, and trout. A number of fisherman throughout the local area were also in attendance for the event, including members of the Northeast Bass Anglers, a local bass fishing club out of Agawam. The scholarship was created by faculty and family members in memory of Dr. Wefing’s dedica- tion to students and to the journal- ism field. Since 2016, the Henry Wefing Journalism Scholarship has been awarded annually to stu- dents pursuing a journalism-relat- ed career. Tournament participation is $65 for students, $90 for individuals, or $350 per foursome. All prices include lunch and 18 holes of golf.
