Regional tourist board of New-Aquitaine - 23 - Bottled gold, with a new saffron-infused wine produced in Lot-et-Garonne A wine grower from Duras and saffron producer from Casseneuil teamed up to produce the first saffron wine and 1,000 bottles have just been put on sale. It took several months to perfect the wine, to neutralise the bitterness produced by the spice and time was also needed to find the right balance between the three grape varieties (Cabernet-Sauvignon, Sémillon and Muscadelle) so that the combination with the saffron and the wine was both harmonious and inte- resting. The slightly sweet wine is best drunk chilled and is a good match with aperitifs or desserts. The saffron-infused wine is produced by Jean de Blanc and the Maison du Safran. http://maison-du-safran.com/

Le Blanc des Cabanes white wine, made among the oysters of the Bay of Arcachon The Blanc des Cabanes white wine comes from com- bining oyster farming and wine growing in the Bay of Arcachon. The wine sits 3 metres down among the oyster beds. The bottle is ‘adorned’ with natu- ral deposits from the basin and comes with a basket of oysters. Philippe Faure-Brac, is one of the world’s twelve top wine waiters and thinks that this technique alters the final taste of the wine, giving it a touch of originality that goes perfectly with shellfish. www.chateauducoureau.com

Egiategia makes wine in Saint-Jean-de-Luz bay As an ardent admirer of vines since his childhood, Emmanuel Poirmeur became an agronomist and oenologist. After a career packed with intense expe- riences both in France and abroad, he returned to his home to the Basque Country, in 2007, where he founded EGIATEGIA and developed a patent for winemaking and ageing wines underwater. Fermen- tation happens in tanks 15 metres below the waves in Saint-Jean-de-Luz Bay. This pioneering and sur- prising winemaking method produces aromas in the wine that would not otherwise develop without this unique patented subsea fermentation process. The wine cellar is based in the port area of Socoa, in Ci- boure, and is open to the public for visits. www.egiategia.fr

Flavoured oysters from the So’ooh company This is a world first! The So’ooh Company is marke- ting oysters flavoured with ginger, shallots and mus- cat grapes, or even raspberries! So’ooh is based in Marennes, next to the oyster far- mers’ huts and is the only oyster farming company to produce favoured oysters. It took Joffrey Dubault 4 years to perfect his secret recipe. The temperature, saltiness of the water, density of natural flavours and the oysters themselves are all variables that must be scrupulously adhered to. When the oysters reach maturity, they are moved to a settling tank in which the natural flavours have been added. By filtering this water for several hours, the flavour of the oysters is transformed and the whole process is completely natural. Joffrey Dubault - Tel: +33 (0)6 66 10 18 80

Regional tourist board of New-Aquitaine - 27 - Jo&Joe, an “alternative and cool place” for surfers Hossegor AccordHotels has taken an innovative approach to create an “Open House” called Jo&Joe, to appeal to mil- lennials. Neither a hotel, nor a youth hostel, nor rental, it is actually a hybrid concept. The idea is to create a place where travellers (or tripsters) and people living in the local area (townsters) can meet. The Basque and Landes-style house and outbuilding are just undergoing the finishing touches to renovation work. The house sits in a wooded 1-hectare plot, just 400 metres from the sea, in this seaside resort renowned for surfing. Inside, the decor is rather cool and stylish and has been though out jointly with designers from Quiksilver and Roxy. Jo&Joe Hossegor has 145 beds in a choice of sleeping arrangements. These include, the Together (for 7 to 12 people), the Out of the Ordinary (for 10 people) and the Yours (which can accommodate 2 to 5 people). For common areas, there is the Happy House, reserved for tripsters (washing machines and dryers, kitchen, etc.) and the playground, with bar and restaurant, open to all guests. Activities include masterclasses, yoga, paddle boarding, or events held in conjunction with Quicksilver and Roxy. www.joandjoe.com
