With a hectic schedule of meetings and seminars, business travellers to Singapore may only have time to grab a quick or burger for lunch or dinner. Rather than settle for the usual fast food fare, take advantage of the country's eclectic cuisine and try these creations with added local flavours to take the flavours up a notch.

Ramly Burger by Loof

Ramly Burgers are commonly found in pasar malams, or local night markets. They are easy to spot at these pop-up bazaars as they often attract a queue of Singaporeans patiently waiting for their beef or chicken burger patties to be pan-grilled, wrapped in omelette or topped with a fried egg, slathered with mayonnaise and chilli sauce, all held together between toasty buttered buns. Yum! Loof has created an upmarket version of this humble burger with 100% prime Australian beef, also wrapped in omelette, and topped with their secret sauce. These are served with Loof Flies, their signature French fries with a trio of Asian sauces – cucumber and wasabi, curry ketchup, and spicy mustard.

Satay Burger by The Quarters

Satay is simply a “die-die must try” Singaporean delicacy. Skewers of bite-sized marinated pieces of meat, often chicken, mutton or beef, are grilled over hot charcoal until just done – juicy, intensely flavoured and mildly charred. Diners dip them in a piquant , accompanied by or rice parcels, cucumbers and onions. The Quarters’ interpretation of a Satay Burger is a must-try, with a piece of chicken thigh marinated in 11 different spices over 24 hours. Freshly grilled to order, it is placed between two chewy yet crisp rice patties, and served with savoury peanut sauce and a cucumber, onion and chilli salad.

Ayam Buah Keluak Burger by Hambaobao

Peranakan or Straits Chinese (http://www.yoursingapore.com/about-singapore/people-of- singapore.html) cuisine unique to this part of the world is a fascinating fusion of Chinese flavours and the spiciness and richness of standard Malay fare. Ayam buah keluak is a chicken stew, served in spicy and sour tamarind gravy with buah keluak, an indigeneous black nut.

Inspired by the owner’s grandmother’s recipe, Hambaobao’s decadent burger reinterprets the popular Peranakan dish. A chicken burger is cooked in a rempah (spice paste) of ayam buah keluak, and complemented with chap chye (stir-fried vegetables) and belacan (spicy chilli ) to offset the natural bitterness of the buah keluak.

Prawn Toasties by Chopsuey Café on Martin Road

Belacan, a slightly salty and pungent fermented shrimp paste, is a common ingredient in many Malay and Peranakan dishes. Chopsuey Café serves up Prawn Toasties, reminiscent of the prawn one typically finds in Chinese restaurants in Western countries, with the added mild kick of local belacan . Homemade king prawn paste is spread on whitemeal bread and encrusted in black and white sesame seeds. For added spice, it is paired with a sweet chilli sauce.
