What makes our festival special is the contribution and dedication of countless individuals, seen and unseen. Without them, this festival would not be possible, nor in the past few years would tens of millions of dollars have flowed into the local economy and tens of thousands of dollars in scholarships have been generated. Hundreds of are submitted for judging from Vintners, Importers, and Distributors such as Republic National Distributing Company, Southern Wine & Spirits, Breakthru Beverage Group, and Grapevine Distributors, to name a few. Chefs demonstrate their skills, and restaurants offer their space for luxurious wine dinners and make sure the Food in Hilton Head Island Wine and Food presenting sponsor Festival is not lost. He got his start Kworking at a restaurant at that young age and was supported and influenced by his family. His grandmother, a chef at a large company in the hospitality industry, inspired him greatly, and he quickly found his focus centering on high quality and creative cuisine. That passion has driven him throughout his 40 year career in restaurants and catering, and has led him to work with top chefs such as Emeril Lagasse in New Orleans' French Quarter.

After the return from New Orleans, Chef Ken opened a group of Cherrywood Barbecue where he brought his bold VIPs. This is New England flavors and “stirred the pot” with old- where he made the school New Orleans flair. Ingredients Directions

3 Tbsp Olive Oil 1 Heat the oil & butter in heavy saucepan. Add onions, cook until translucent. 2 Tbsp Whole Butter Add rice, stir until coated with butter/oil mixture. 1/2 C. Finely Chopped Onion 2 Add white wine, stir continually over medium heat until absorbed. 1 C. Arborio Rice 3 Start to add 1/2 c hot broth, stirring as it absorbs. Continue ladling hot broth; 1/2 C. Dry White Wine stir continuously 20-25 min (until rice is cooked but slightly firm to the teeth). 2 C. Chicken Broth, Heated 4 Stir in cheeses; season with salt & pepper. Mascarpone Cheese 5 Next: Dry and season the scallops with salt & pepper. Roasted Beet, Diced 6 Heat sauté pan, add oil, sear scallops 3-4 mins per side; remove from pan, Salt & Pepper set aside. 1/2 C. Grated Parmesan 7 Deglaze risotto with white wine. Add fresh thyme, then reduce. Cheese 8 Add 4 Tbsp heavy cream. Reduce, then whisk in 4 Tbsp butter. 4 Jumbo Sea Scallops 9 Finish with sea scallops.
