• large pork shoulder roast or other cut of beef or pork roast • 2 28oz cans crushed tomatoes • 1 onion, diced • 2 tsp. cumin • 4 chilis from a can of chilis in adobo sauce, seeds scraped out and chopped fine • 1 tsp. salt • 1 recipe of cornbread

Place the roast in a slow cooker. Sprinkle it with salt and pepper and cook 5-6 hours on high or 7-8 hours on low. When it is fully cooked, shred the meat with a fork and return it to the slow cooker. You could also refrigerate or freeze the meat at this point to finish at a later time.

Add the other ingredients to the meat in the slow cooker. Stir to combine. Cook on low for another 2-4 hours. Serve over the cornbread.

• 3 Tbs. butter • 1 small onion, diced • 1-2 garlic cloves, minced or crushed • 2 cans kidney or pinto beans, drained • 1 can chopped green chilis • about 1 cup tomato sauce • salt to taste (I usually skip the salt)

Melt the butter in a skillet. Cook the onion and garlic in the butter until soft. Add the beans to the skillet and mash them with a fork. Stir in the chopped green chilis and tomato sauce. The original recipe calls for an 8 oz can of tomato sauce, but I didn’t have that size. I used a 15 oz can and just poured some in. I used about 3/4 of the can. Heat until hot and bubbly.

• 1 1/2 cups cornmeal • 3/4 cups flour • heaping TBS baking powder • salt • 1 egg • enough milk to make a batter

Heat the oven to 425 degrees. Put the skillet in the oven to heat (mine is 10 1/4 inches). Stir together the dry ingredients. Add the egg and milk and stir till well blended. Pull the hot skillet from the oven and add oil or spray with cooking spray. Pour in the batter and bake for 15-20 minutes.

• 1 lb. Italian sausage • 1 lb. Bowtie pasta • 2 cans Fire roasted tomatoes, lightly drained • 1 green pepper, chopped • 1 onion, chopped • 1 clove garlic, minced (my tomatoes had garlic so I skipped this) • 1 tsp. basil • 1 tsp. oregano • 1/2 cup mozzarella, shredded • 1/2 cup Parmesan

Cook the pasta according to the package directions. Brown the sausage with the onion, garlic and green pepper. Drain and rinse under hot water. Put the meat back in the skillet and add the tomatoes and seasonings.

When the pasta is cooked and drained, mix it with the sauce and cheese. Serves 6-8 people.

Serving Suggestion: salad

• boneless pork chops • onion slices • green pepper, rings • pineapple rings • salt and pepper

Place the pork chops in a casserole dish. Layer the onion, green pepper and pineapple on top of each pork chop. Sprinkle with salt and pepper. Bake for 1 hour at 350 degrees.

If you want to grill them outside, place them in individual foil packets and grill for about 20 minutes or so.

Serving suggestion: fresh green beans, rolls

• 2 cups chicken, cooked and shredded • 1 cup cheddar cheese • 1 cup rice • 2 cans chicken broth • 1 can cream of chicken soup • pepper

Place the chicken in a casserole dish and sprinkle the rice over it. Stir the broth, soup and pepper together and pour over the top. Bake uncovered at 350 degrees for an hour.

Serving Suggestion: favorite steamed veggie, tossed salad

• 1 1/2 lbs. ground beef • 1 onion, diced • 1 jar of beef gravy • salt and pepper • 1/4 tsp. thyme • dash of sage • 2 cups mashed potatoes • butter, to dot pie with

Brown out the ground beef with the onion. Drain and rinse the meat under hot water. Add the thyme, sage, salt and pepper and gravy to the meat. Pour into a lightly buttered casserole dish. Top with mashed potatoes. Dot with butter. Bake at 400 degrees for 15-20 minutes or until the potatoes are browned a bit.

Serving Suggestion: Favorite steamed veggie

• Eggs - the amount depends on how many people are eating and how hungry they are • Ham lunchmeat, torn into pieces • American cheese slices - I think I used 2 for 5 eggs. That made it plenty cheesy for me. • Salt and pepper • Butter to cook the eggs in

Scramble the eggs and toss them in the skillet. After they've cooked a few minutes add the ham pieces, letting them get hot in the skillet, then stir them into the eggs.

Toss in the cheese pieces when the eggs are just about done cooking. The cheese will melt into the eggs quickly.

Serving Suggestion: Frozen Fruit Cup and Toast or biscuits

• 1 stick butter, softened • 1 1/2 cups sugar • 2 eggs • 1 cup sour cream • 1 tsp. vanilla • 2 cups flour • 1 tsp. baking soda • 1/4 tsp. salt • 2 mashed bananas

Cream the butter and sugar in a mixer bowl. Add the eggs, sour cream and vanilla. Stir the baking soda and salt into the flour, then add the dry ingredients to the wet. Mix well. Add in the bananas. Spread into a greased 10″x15″ pan. Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean. Cool completely before frosting.

For the frosting you'll need:

• 8 oz cream cheese, softened • 1 stick butter, softened • 2 tsp. vanilla • 3 3/4 cup powdered sugar

In a mixer bowl, beat the cream cheese and butter together. Add in the vanilla. Gradually mix in the powdered sugar until it reaches a spreadable consistency. Spread on the cooled banana bars. Store the bars in the refrigerator.
