A Brief History of the Grand Wine Cellars of Houmas the Short List A Brief History of the Grand Wine Cellars of Houmas The Plantation was originally surrounded by five Moorish styled water cisterns beside and behind the mansion. In the 1940’s Dr. Crozat demolished the five cisterns and replaced them with two matching Douglas Frerret designed high pitched terracotta tile roofed brick cisterns. Since then we have converted these beautiful water cisterns into extraordinary wine cellars. With a collection of fine wines from the mountains of Washington to coastline of New Zealand our wine cellars truly have a worldwide selection to choose from. The large water tanks that originally were enclosed in the cisterns have been replaced with bottle holders that are attached to the masonry walls, cast iron balconies, and circular staircases. The white wine cellar is located on the upriver side of the mansion while the red wine cellar is located on the downriver side of the mansion. La Cuvée is a blend of Chardonnay, Pinot Noir, and Pinot Meunier aged in unoaked barrels. Notes of citrus and white fruits allows this dry champagne to be enjoyed as an aperitif or as a paring with vibrant seafood dishes. 10810 The Hilt Estate $71 Santa Barbara, California 2016 Chardonnay Set in the valley of Sta. Rita Hills, Rancho Salsipuedes, where The Hilt winery resides, has an unobstructed view of the Pacific Ocean from 13 miles inland. Strong ocean winds and colder climate allows the vines extra time for the grapes to ripen and develop more complex flavors while the soil they’re planted in bring a nice hint of acidity. The Estate is the full representation of The Hilt’s vineyards selecting grapes from across their property. 10900 Poseidon Vineyards $50 Carneros, California 2016 Chardonnay In 1973, on a piece of land that was never imagined producing wine and only used a grazing land before, Poseidon Vineyards started their winery. Set too far south this land was told to would never produce quality grapes. Poseidon Vineyard has proved those naysayers wrong for over 40 years now with their rich flavors. This Chardonnay is also barreled using Hungarian Tokaj Oak barrels, which accounts for only 4% of the world’s wine barrel production, with have a tighter grain structure which allows the wine to develop a more aromatic flavor. 20407 Orin Swift “Blank Stare” $43 Russian River Valley, California 2017 Sauvignon Blanc Since 1998 Dave Phinney, who founded Orin Swift Cellars, has been producing exquisite wines. Blank Stare is Dave’s venture into the Russian River Valley with his former Sauvignon Blanc, Veladora, coming from Napa Valley. Blank Stare is a perfect balance of old world meets new world in classic Phinney style. Fresh notes of fruits with crisp acidity gives this Sauvignon Blanc a refreshing finish. 20406 Cliff Lede $52 Napa Valley, California 2016 Sauvignon Blanc Cliff Lede, an admirer of the Bordeaux style, founded Cliff Lede Vineyards in 2002 in the Stag’s Leap District of Napa Valley. This Sauvignon Blanc is an ode to the Bordeaux style with heritage Musqué clones and Sémillion blended into the wine while also maturing for most of the aging process in French oak barrels. Cliff Lede Vineyard also recently was awarded the Napa Green Land and Napa Green Winery certification. 21603 Goldeneye “Rosé of Pinot Noir” $34 Anderson Valley, California 2017 Rosé Dan and Margaret Duckhorn crated Goldeneye with the intent to showcase Pinot Noir and to show that it could rise to the prestige that their Duckhorn Merlot achieved in California. Since 1996, Pinot Noir has shown its worth and Goldeneye has been at the forefront of that movement. This rosé or Vin Gris of Pinot Noir, which is 100% pinot noir shows the versatility with the grape and deviates from the classis red wine style of Pinot Noir. Light and acidic, this rosé is the perfect wine to enjoy with vibrant dishes or to just drink to enjoy. 31206 Neyers “Left Bank” $57 Napa Valley, California 2017 Cabernet Sauvignon and Merlot Blend A former winner of Food and Spirits Magazine’s Artisan Winery of the Year, Neyers Vineyard was founded in 1992 by Bruce and Barbara Neyers. Since a quarter of production grown at their Conn Valley ranch is Merlot and Cabernet Sauvignon, it’s only fitting that they made a great Bordeaux inspired blend using the grapes that grow on the “Left Bank” of the Conn Creek that runs through the property. This blend has a bond fruit forwardness beginning and finishes with a dryness from the tannic nature of the blend. 31103 Obsidian Ridge “Half Mile” $112 Sonoma County, California 2016 Cabernet Sauvignon Co-founder of Obsidian Ridge, Peter Molnar designed the vineyard with the idea of having one of the wine blocks to be set at the highest point of the property hopeful that the wine produced there would be vin de garde, or wine that was meant to be aged then enjoyed. Set at 2,640’ above sea level, or “Half Mile” this block is one of the highest grown blocks in California when it comes to wine. Labeled as a Cabernet Sauvignon, this vintage is 80% Cabernet Sauvignon blended with 12% Petite Sirah and 8% Petit Verdot. 31003 Justin “Isosceles” $125 Paso Robles, California 2015 Cabernet Sauvignon Since 1987 Justin has been producing Isosceles, first labeled as Justin Reserve, with the intent to produce a classic Left Bank Bordeaux blend in the heart of Paso Robles, California. Grapes grown in this area are subject to the wild day-night shifts in temperature allowing for much bolder taste while limestone in the vineyard give characteristic of classic Bordeaux. The 2015 vintage of Isosceles is 76% Cabernet Sauvignon, 11% Cabernet Franc, and a 11% Merlot. 40407 Diora “La Petite Grace” $54 Monterey, California 2015 Pinot Noir Diora is named after the sun’s “d’Or” or golden rays that set along the surrounding sides of the Santa Lucia Mountain Range overlooking their San Bernabe Vineyard in Monterey, California. Winemakers decided to replant blocks in the early 90’s to use the natural wind flow of the valley to enhance their Pinot Noir grape’s attributes by allowing the winds to strengthen the grape’s weaker skin. This Pinot Noir is also blended with small touches of Grenache and Petite Verdot, enhancing its fruit forwardness while creating a more well-rounded finish. 40607 Orin Swift “Slander” $72 Napa Valley, California 2015 Pinot Noir When winemaker David Phinney first produced Pinot Noir from Orin Swift he did so only for his personal enjoyment. Those bottles were placed in his cellars with a simple piece of duct tape labeled “Pinot”. Upon releasing it to the public he chose to pay homage to that simple label instead of the more whimsical labels he has be known to use with other wines from his winery. Slander is Phinney’s quest to end the “Old World versus New World” comparison when it comes to Pinot Noir and to showcase the overall greatness of Pinot Noir. Phinney has achieved his goal with Slander which displays a wide range of flavor profiles that open with bold fruit and earth tones while finishing with a rich smooth tannic coating on the mouth. 40707 Spy Valley “Envoy: Johnson Vineyard” $80 Marlborough, New Zealand 2013 Pinot Noir Spy Valley gets its unusual name due to its proximity to a satellite communications monitoring station or as the locals call it a “spy base”. Named “New Zealand Producer of the Year” (2008 & 2010) Spy Valley has also been at the forefront of environmentally sustainability with the mentality of “Without the environment there is no Spy Valley Wines.” Johnson vineyard, which is named after the founding family, is cropped low meaning that since there are fewer grape bunches per block because of the thinning out process the grapes produced there are more highly concentrated in flavor because the soil isn’t overly populated. Spy Valley Pinot offers different and fresh take with more acidic and earther flavors than traditional Pinot Noirs 31408 Jonata “Todos” $63 Santa Ynez Valley, California 2014 Red Blend Jonata is a word meaning “Tall Oak” from the Chamsh Indians who populated the area in the 1800’s when pioneers started to settle in the area. Jonata wines are produced without the traditional mentality of the Old World wine producers giving winemakers more freedom in exploring different unique blend. Todos is one of those blends that go outside the norm, Todos is the Spanish word for everyone and this blend has “everyone” in it.

Natürlich sollten Sie die Möglichkeit haben, einen solchen Kalifornier, der sich in einer Blindprobe vor die 1er Cru Classé schiebt, auch zu erwerben. Es gibt weltweit nur noch vereinzelt Flaschen. Aber Dank meinem Besuch 2011 auf dem Weingut und dem ausgezeichneten Kontakt seit jener Zeit, konnte ich mir die letzten 180 Flaschen des Weinguts sichern, die das Weingut bereit war, an mich abzugeben. Nur noch einige Kisten für spätere Proben wurden zurückbehalten. Mittlerweile hat Stag’s Leap Anfragen aus aller Welt wegen dem 2005er. Aber keinen Wein mehr. Den hat sich der Grimm mal wieder für seine Kunden gesichert. Import läuft. Allerdings hat Stag’s Leap einen Mindestpreis im Internet verlangt.

Fining is a post-fermentation process used to clarify wine. This paper discusses several commonly used fining agents including: Bentonite, Chitosan and Kieselsol, and gelatin and Kieselsol. The following tests were conducted to compare the fining agents: visual clarity, mass change due to racking, pH, and gas chromatography-mass spectrometry. Bentonite was an F. Chitosan and Kieselsol were also successful with a wait time before racking of at least 24 hours. Reconceptualising the Worlds of Wine GLENN BANKS and JOHN OVERTON Original manuscript received, 08 April 2009 Revised manuscript received, 18 November 2009 ABSTRACT This paper argues that existing categories defining the geography of the world’s wine industry, principally the Old World/New World dichotomy, are flawed. Not only do they fail to represent adequately the complexity of production and marketing in those two broad regions but also, crucially, they do not acknowledge the significant and rapidly expanding production and consumption of wine in ‘Third World’ developing countries. Rather than argue for the addition of a ‘Third World’ category, we instead use the lens of recent work on globalisation to argue that such production requires us to re-examine the dichotomous Old/New distinction which structures much of the thinking around the global wine industry. It also requires us to more closely link changes in patterns of global wine consumption with developments in global production. Changing geographies of wine production have been driven, to a large extent, by the rapid expansion of both local wealthy elites and burgeoning middle classes in countries such as China and India. This has resulted in the development of local wineries, large and small, throughout the developing world. It has also seen new flows of investment both from established wine regions to these new sites of production and from companies and individuals in the developing world who have invested in established wine regions, whether in France or Australia.
