Resources A Guide for Secondary School Educators The Educator’s Guide Created in conjunction with the exhibition, SINGAPO人: Discovering Chinese Singaporean Culture Discovering Chinese Singaporean Culture This exhibition examines how the Chinese community in Singapore developed its own distinctive culture. Here, visitors discover and rediscover what it means to be a Chinese Singaporean. The aim is to develop a stronger sense of the Chinese Singaporean identity amongst youths. This will help foster a greater sense of belonging while giving them an understanding of how we are similar to or different from other Chinese communities. This exhibition presents Chinese Singaporean culture through daily life in Singapore – through the things we see, hear, do and eat every day. Therefore, the experience is highly interactive where visitors can touch various stations, play games, listen to stories and have a dialogue with the gallery. Through this exhibition, we will explore ideas of: Chinese heritage Cultural interactions Public policies The exhibition content extends classroom learning and teaching, by complementing History, Social Studies and Character & Citizenship Education subjects taught in secondary schools. It is also self-guided, where students can learn and explore independently. One of the main interactive features of the exhibition is the use of wristband tags. Students can tap their wristband tags to answer questions scattered throughout the space, trigger videos and play games. At the end of the visit, students can print out their own personalised report card which summarises their exhibition journey along with prompts for further cultural exploration beyond the exhibition. This report card serves as a starting point for them to reflect about their identity in relation to everyday life.

The Globalization of Chinese Food ANTHROPOLOGY OF ASIA SERIES Series Editor: Grant Evans, University ofHong Kong Asia today is one ofthe most dynamic regions ofthe world. The previously predominant image of 'timeless peasants' has given way to the image of fast-paced business people, mass consumerism and high-rise urban conglomerations. Yet much discourse remains entrenched in the polarities of 'East vs. West', 'Tradition vs. Change'. This series hopes to provide a forum for anthropological studies which break with such polarities. It will publish titles dealing with cosmopolitanism, cultural identity, representa tions, arts and performance. The complexities of urban Asia, its elites, its political rituals, and its families will also be explored. D.131.15.0074. 2020. Length of Heating Time for Physical, Chemical, and Sensory Characteristics of Non-Vacuum Packed Wet Spring Lumps During Room Temperature Storage. Mentor: Adi Sampurno and Antonia Nani Cahyanti. His study aims to determine the effect of heating duration on physical, chemical and sensory properties in non vacuum spring lumps during room temperature storage. The result of this study are expected to provide information to the public, especially producers of wet spring lumps. The experimental design used is a Completely Randomized Design (CRD) with 4 treatments each treatment repeated 5 times as follows: P1 (without heating), P2 (5 minutes heating), P3 (10 minutes heating) and P4 (heating 15 minute). The data obtained were analyzed using ANOVA, and if there were differences due to treatment continued with Duncan Multiple Range Test (DMRT). Based on the results of the analysis of variance showed that the treatment of differences in heating time significantly affected the texture at 0 and 2 days observations, and significantly affected the texture preference at 2 days observation. But the treatment of the difference in heating time did not significantly affect the water content of observation 0, 2, and 4 days, the water holding capacity of observation 0, 2, and 4 days, the texture of the observation 4 days, and the texture preferences of the observation 0 and 4 days.

Beatriz Dykes, PhD, RD, LD, FADA Background The Philippines is an archipelago (chain of islands) comprised of over 7,100 islands in the western Pacific Ocean. Originally inhabited by indigenous tribes such as the Negroid Aetas and the pro-Malays. Beginning in 300 BC up to 1500 AD, massive waves of Malays (from Malaysia, Sumatra, Singapore, Brunei, Burma, and Thailand) immigrated to the islands. Arab, Hindu and Chinese trading also led to permanent settlements during by these different groups during this period. In 1521, Spain colonized the Philippines, naming it after King Phillip II and bringing Christianity with them. The Spanish colonization which lasted 350 years, imparted a sense of identification with Western culture that formed an enduring part of the Philippine consciousness, unmatched anywhere else in Asia. The prevalence of Spanish names to this day (common first names like Ana, Beatriz, Consuelo, Maria and last names as Gonzales, Reyes, and Santos) reflects this long-standing influence of the Spanish culture. The United States acquired the Philippines from Spain for 20 million dollars after winning the Spanish-American war through the Treaty of Paris in 1898, introducing public education for the first time. During this period, health care, sanitation, road building, and a growing economy led to a higher standard of living among Filipinos and the Philippines became the third largest English speaking country in the world. Above all, the US occupation provided a basis for a democratic form of government. World War II had the Filipinos fighting alongside the Americans against the Japanese. The Death March and Corregidor became symbolic of the Philippine alliance with the United States.

THE MEANING OF ‘KOTA’ IS CALLED A CITY IN INDONESIAN LANGUAGE. HOWEVER, IT IS ALSO THE SLANG THAT WE USED TO DESCRIBE CHINATOWN IN JAKARTA AS IT WAS THE HUB CLOSEST TO THE PORT WHERE TRADING TOOK PLACE BACK IN THE 1740’S. In Kota88, we serve Masakan Tionghoa Indonesia (Chinese Indonesian Cuisine), which is a mix of chinese dishes with local Indonesian culinary racteristics. It all started when Chinese immigrants settled in Indonesia centuries ago where its traditional cooking style became an expression of our cuisine. This is the inspirational backbone for our restaurant. Hailing from Glodok, Jakarta’s’ chinatown, we are proud to bring our succulent heritage to Singapore, and present the Kota88 Restaurant. We present our signature item from the menu called ‘Nasi Campur Babi’. It is a Chinese Indonesian adaptation of combination pork rice platter that is mixed to a palatable perfection along with other traditional dishes.
