An Evening of Fine Dining for 10 provided by DYC Manager and Chef Jim Sides - 5 Course Meal and Wine Pairings Chef Sides attended culinary school through the Royal Academy of Culinary Arts, at the time an advanced program administered by Le Cordon Bleu. Chef Sides transferred to the Paris campus full time in his second year. During school, and immediately after graduation, Chef Sides took several apprentice positions in some of the finest hotels and restaurants in Paris and London including stints with notable chefs such as Albert Roux at Le Gavroche and with Marco Pierre White. After his apprenticeships were completed Chef Sides held Head Chef positions at some of the best hotels throughout the United Kingdom before hanging up his toque to focus on running hotels. During his chef career Jim Sides was able to earn several titles such as: Certified Executive Chef Certified Culinary Director Master Culinarian During his career he won a Silver medal in Hot Entrée’s in the European Chef’s Culinary Olympics, earning an appearance at the International Culinary Olympics. He was also admitted into the British Branch of the Culinary Academy of France. He has extensively studied the cuisines of China, Greece, Italy, and Continental Europe as well as the cuisine of America. Although now a General Manager, Jim Sides says “once a chef, always a chef” and keeps his skills honed by constantly cooking and experimenting. Although trained classically in French Cuisine Jim has been fascinated with, and experimenting with the new Molecular Gastronomy movement. Donated by The Detroit Yacht Club 2.
