Grape bunches are manually selected at the winery. - Winemaking & Aging: Maceration with pre-fermentation for 12 hours at 7ºC. Alcoholic fermentation for 12 days, between 16 and 20ºC and partial malolactic fermentation. Three months aging with its own lees in stainless steel tanks. . - Tasting Notes: Straw yellow color with light golden shades and glints of shiny green. On the nose it is clean and delicate with fruity aromas and floral hints. Full-bodied, delicate, with plenty of character. Dry, tasty, elegant with great balance and length. Ribeira Sacra. - Varietals: 100% Mencía. - Harvest: Handpicked harvest in 20 kg. boxes between the 15th and the 30th of September. Grape bunches are manually selected at the winery. - Winemaking & Aging: Alcohohic fermentation in truncated-cone shaped french allier oak vats with pre and post fermentative maceration for a higher extraction of aromas and polifenols. The wine is after moved to French (80%) and American (20%) 400 liters oak barrels where the wine will be aged for six months on its own lees while malolactic fermentation takes place. After one more decanting the aging will continue in the same barrels for 6 months. Additionally, the wine is aged in the bottle for a minimum of 6 months. The wine is not filtered or clarified to preserve its natural flavours. It is possible to find deposits at the botton of the bottle which do not alter the quality of the wine. . - Tasting Notes: Deep red bordeaux colour, clean with brilliant glints and ruby sparkles. Very complex and intense aromas. Ripe red fruit, spices, chocolate, tobacco. All of these are brought together with an oaky touch. Full- bodied, seductive with an elegant, lengthy finish.

Ribeira Sacra. - Varietals: 85% Mencía and 15% Tempranillo. - Harvest: Handpicked harvest in 20 kg. boxes between the 15th and the 30th of September. Grape bunches are manually selected at the winery. - Winemaking & Aging: maceration for 6 days and alcoholic fermentation during 8 days at less than 28ºC in truncated-cone shaped french allier oak vats with daily manual pipeage. The wine will stay after in these oak vats for another 10 days before being moved to new frech oak 400 liters barrels where the malolactic fermentation will take place. In the same barrel the wine will be aged on its lees for three months with regular batonages. After one more decanting the aging will continue in the same barrels for a total of 9 months. Additionally, the wine is aged in the bottle for a minimum of 12 months. The wine is not filtered or clarified to preserve its natural flavours. It is possible to find deposits at the botton of the bottle which do not alter the quality of the wine. . - Tasting Notes: Bright cherry colour. Appellation of Origin Orujo de Galicia. - Alcohol Content: 39% Vol - Process & Aging: to achieve a smoother spirit base we distil a blend of 50% grape pomace from 100% Mencía grapes and 50% of Mencía wine lees coming from our own production of Ribeira Sacra wines. The blend is double distilled in our own facilities in copper stills. The first destillate runnings are re-circulated for a higher level of purity and from the second destillate the early part of the run ( foreshots ) and the end of the run (feints ) are removed, keeping only the more pure middle run . The distillate is then oak aged in new american oak barrels. - Tasting Notes: Attractive, clean and shiny pale amber colour. In the nose the aromas to Mencia grape pomace come clear together with complex and elegant notes to balsamic aromatic herbs.
