Acknowledgements I would like to express my thanks for the help of so many different people, without which there would simply have been no thesis. The funding of the AHRC (formerly AHRB) and the support of the School of History at the University of Leeds made this research possible in the first place. I am grateful too for the general support, and advice on reading and sources, provided by Dr. A. J. Metcalfe, Dr. P. Skinner, Professor E. Van Houts, and Donald Matthew. Thanks also to Professor J-M. Martin, of the Ecole Francoise de Rome, for his continual eagerness to offer guidance and to discuss the subject. A particularly large thanks to Mr. I. S. Moxon, of the School of History at the University of Leeds, for innumerable afternoons spent pouring over troublesome Latin, for reading drafts, and for just chatting! Last but not least, I am hugely indebted to the support, understanding and endless efforts of my supervisor Professor G. A. Loud. His knowledge and energy for the subject has been infectious, and his generosity in offering me numerous personal translations of key narrative and documentary sources (many of which are used within) allowed this research to take shape and will never be forgotten.

  • The Heart of Puglia
THE HEART OF PUGLIA C ONSORZI O DI TUTELA OLIO DOP TERRA DI BARI 1 Historical sources tell us that, in the 13th century, in Venice, the oil from Bitonto was sold at a price three times higher (3 ducats to 1,000 pounds) than the one coming from all other areas. Such prosperity lasts up to the dawn of the 17th century, when there was a se- vere crisis in the agricultural sector. Nevertheless, in the next century the economy recovers with the olive grove going to establishing itself increasingly on the agricul- tural landscape thanks to the skilled hands of tree trim- mers and plant breeders from Puglia who transform the Mill workers in the first half of ‘900 wooded areas in well-maintained lands, functional to (Photo by Centro Studi Biscegliese) harvest. Millenary olive tree in the rural area of Molfetta A natural heritage that today makes Puglia the first re- gion for olive culture in Italy, with the highest number of enterprises (147,000, representing 33% of enterprises specializing in olive growing) involved and the largest farm area specialized in olive cultivation (34%) (source: INEA 2014). History of olive trees in Puglia and in the Terra di Bari area People at work, 2000s The first findings of olive trees in Puglia are dated around the 6th century BC and they are located in the area between Torre a Mare and Fasano. It was the Phoenicians and the Greeks who introduced the olive tree cultivation in the region, in particular in the prov- ince of Bari and, after them, the Benedictine monks and the Cistercians, to whom we owe the transformation, around the 5th century A.D.

Italian Botanist 5: 1–24. doi: 10.3897/italianbotanist.5.22297 Abstract In this work, we present a summary of an ethnobotanical research carried out in the whole Administrative Region of Apulia (southern Italy). The main topic of the investigation is the traditional knowledge about wild plants, focusing on their common names, on which parts were used in cooking and how they were used. The main aim was to establish a botanical knowledge about these culinary uses through a systematic identification of the species involved, directly in the field. In addition to this, we focused on the ecological aspects of these species and on their biological and chorological forms. Results suggest the existence of very strong ties between the local communities and this particular flora, without substantial differences between rural and urban areas or among different zones of the Apulia Region. On the other hand, in each area we found peculiar food uses, species, parts used, and recipes.
