You also receive 20% off all our whisky tastings. Lowlands Lowland whiskies are commonly referenced as feminine drams, ‘the Lowland Ladies’. The terrain of the Lowlands is characterised by rolling fields that are ideally suited to growing grain for whisky. The softer landscape is mirrored in the regions single malts that tend to be lighter in both colour and body than those of the Highlands. Auchentoshan is the only distillery in Scotland to triple distill all their whisky, giving their spirit a light character while retaining the malt character. With little or no peat traditionally used in the drying of the malt, the whiskies distilled here are generally fresh and light, fragrant and floral with cereal flavours. This however is changing in the modern era, with Ailsa Bay, distilled at the Girvan grain distillery, coming onto the market with a peated malt whisky. The Highlands are such a diverse region that is difficult to categorize their whiskies accurately. That said, it is common to split the Highlands into the Eastern and Western regions with Speyside in the middle. Technically speaking, the 'Islands' have not been officially recognised as a region of its own and, as such, is included in the Highlands region. For the sake of precise classification, we choose to note the separation as the maritime style of all the islands seperates them from most of the Highland whiskies. As a very vague rule of thumb, the Highlands region is one of big-bodied whiskies, often have a subtle peated smokiness and can be very powerful and oily. Use of traditional refill barrels allows the character of the spirit shine on many of the whiskies from this region. Speyside: the lush, fertile valley of the River Spey is undoubtedly the heart of single malt whisky distilling in Scotland, and possibly the world. It’s classic flavours of honey, vanilla and fresh orchard fruits combine to create whiskies that are both sophisticated and elegant. Whiskies from this region are genrally lightly, or completely unpeated. We can split the Speyside style into two catagories; one is light and grassy with fresh apples and light delicate flavours. The other is rich and bold with christmas cake and sweet spice vharacteristics. There are so many different characteristics to be found in whisky form these Islands, although usually a slight salinity is to be found, thanks to the vicinity to the sea. To the very north there is Orkney, whose single malts are coastal and full, with plenty of honey, malt, heather and light floral smoke. Then there is the Isle of Skye with its sole distillery, Talisker. Single malts from here are often described as being 'volcanic' in character with plenty of body. To the west of the mainland lies Arran, whose sole distillery makes a malty, rich whisky.

In this E-pistle I would like to highlight a few aspects of whisky casks that for some strange reason do not get very much attention, even though their consequences are rather significant. 1. Seaweed? What Seaweed? Tasting notes of Islay malts usually feature descriptors like “seaweed”, “sea spray”, “Atlantic jetty” or the likes. We all know that Islay is both caressed and mistreated by the powers of the Irish Sea, so in a way it is not a surprise that we can find maritime flavours in Islay whisky.

    A History of Campbeltown & Islay 12 pages written by Professor Michael Moss Islay and its neighbour Jura are the innermost of the Hebridean Islands. Islay is largely low lying and fertile, well- suited to growing grain, while Jura is mountainous with only a small coastal strip on the east side. Like Kintyre, both enjoy the warming currents of the Gulf Stream. Campbeltown lies at the end of the long Kintyre peninsula that stretches from Ardrishaig down to the Mull. Sheltered from the west by high ground (and the north of Ireland) and warmed by the Gulf Stream, it enjoys a mild temperate climate. Campbeltown and Islay were until not that long ago reached easily only by sea, but the waters around the Mull are perilous with strong tidal currents that made access dangerous, particularly in winter months. By 1816, LAGAVULIN was converted to the first legal distillery in the area by John Johnston, who was a local farmer at the time. • In 1861, the lease for the LAGAVULIN Distillery was acquired by James Mackie. • Mackie’s nephew, “Restless Peter” Mackie would join in 1878 and tirelessly promote the brand, expanding into export markets and making LAGAVULIN a household name. LAGAVULIN IS NESTLED IN A SMALL BAY GUARDED DID YOU KNOW? BY THE RUINS OF A CASTLE, IT CAN NEVER BE EXPANDED TO INCREASE PRODUCTION. Production • LAGAVULIN uses peated barley from Port Ellen Maltings (in the west of the island) which imbues the barley with that distinct smoky flavour. LAGAVULIN uses the rich peaty water that runs down the brown burn from the Solan Lochs and into the distillery. • At the Lagavulin Distillery, the barley is dried over peat fire and Whisky is aged in ex-Bourbon and Sherry casks, while being exposed to the influences of the sea.
