I am honored to have the opportunity to recognize the outstanding work of the Children of Bellevue, Inc., its leadership and this year’s honorees on this auspicious occasion.

As the fundraising entity of Bellevue Hospital Center, the Children of Bellevue provides vital secondary pediatric medical support ranging from the Children’s Comprehensive Psychiatric Emergency Program to its Reach Out and Read Program, and Frances L. Loeb Child Protection and Development Center.

Founded in the 1940’s, Children of Bellevue holistically assists underserved children reach their full potential through initiatives including asthma treatments and assisting at-risk youths. Today, Bellevue Hospital Center and Children of Bellevue are committed more than ever to offer the most comprehensive healthcare and patient services available. I applaud your commitment and dedication to providing New Yorkers with quality healthcare services.

As you know, Children of Bellevue has 65 years of experience advocating for pediatric patients and their families, and provides unparalleled early childhood development and school-readiness programs for children at risk of falling behind due to family poverty. By distributing books, nurturing children with psychiatric disorders, and helping victims of abuse and neglect recover, Children of Bellevue has made a tangible impact on the lives of kids from all over the community.

I wish to salute tonight’s host and event founder Tom Colicchio for successfully sustaining this important event for eighteen years. Community-based nonprofits like Children of Bellevue are vital to our city in so many ways.

In addition to providing life-saving services to those in need, they also employ thousands of New Yorkers and help keep our economy strong and growing.

They also serve as key allies in our efforts to create a more equal and just , where everyone, regardless of what borough they are from or what neighborhood they were raised in, has access to the support and services that they need to lead the healthiest, most rewarding lives here in our city.

Tonight’s Culinary Honoree, José Andrés, as a chef, author, and television personality, has made Spanish culture and food both accessible and entertaining. And Children’s Literacy Honoree Jerry Pinkney has inspired many young people toward a love of reading through his award-winning contributions to children’s literature. Their hard work and achievement in their respective fields is impressive and commendable.

Welcome to Toast to the Children 2014, and thanks to all of you for supporting Children of Bellevue, an organization that has been making a difference in the lives of underserved children at Bellevue Hospital Center since 1949.

Bellevue Hospital represents a 278-year tradition of caring for those least able to care for themselves – a vision of personal and civic generosity that has helped millions of New Yorkers achieve their hopes and dreams by having access to needed health care services.

That same sense of mission and spirit of generosity inspire the work of Children of Bellevue, a remarkable organization with a record of distinguished service, unparalleled giving, and effective leadership and advocacy. When it was founded 65 years ago, Children of Bellevue provided basic recreational services and activities for hospitalized children to make their hospital stay more tolerable. Today, Children of Bellevue initiates, funds, and develops programs that improve the health and well-being of more than 25,000 children and teenagers who come to Bellevue Hospital Center each year.

Thanks to the generous philanthropy of a dedicated Board of Directors and staff, Children of Bellevue has improved the lives and experiences of generations of young patients, their families and loved ones. Please join me in saluting their work and wishing them continued success.

Congratulations to this evening’s special honorees, Illustrator Jerry Pinkney, Chef Jose Andres, and especially to Bellevue’s very own Lynda D. Curtis. Over nine years as the Senior Vice President of the South Manhattan Healthcare Network and Bellevue’s Executive Director, Lynda has unfailingly supported children’s programs. Most notable are New York City’s only Children’s Comprehensive Psychiatric Emergency Program and the new, state-of-the-art Neonatal Intensive Care Unit lovingly named after Children of Bellevue’s Founder, Barbara P. Gimbel. Recently, HHC and Bellevue had the privilege of acknowledging Lynda’s many years of outstanding public service and wish her much success in her well-deserved retirement.

Dear Friends:

Welcome to Children of Bellevue’s 18th Annual Toast to the Children event. Whether this is your first year celebrating with us, or your 18th in a row, you are in for a big treat.

Tonight some of New York City’s most celebrated chefs will outdo themselves and serve mouthwatering delicacies prepared especially for your pleasure. We can’t thank them enough for taking time out from their regular businesses to be with us tonight. Thanks to sommeliers John Burns-Paterson, Greg Majors, and Ryan Mills-Knapp, some of the world’s finest wines have been selected just for tonight. Top shelf liquors have been donated to be sipped and savored.

Our deepest appreciation goes out to our host, Tom Colicchio, whose passion for Children of Bellevue’s mission began with the premature birth of his first child – now a grown man himself – and continues to this day. Tom’s commitment to Children of Bellevue has generated several million dollars in donations over these past 18 years, donations used carefully and meaningfully to care for some of New York’s neediest children and teens.

It takes a small army of hardworking volunteers to make an event like this one seem effortless and my thanks go out to the entire benefit committee, led by co-chairs Judy Keating, Ron Longe, Rebecca Gordon and Helen Niblock. Jocelyn Morse-Farmerie, Laura Ryan, and our good friends from Riverpark and Apella deserve a deep bow of appreciation for their work behind the scenes.

We are privileged to recognize three outstanding honorees this evening. Jerry Pinkney inspires a love of reading with his beautifully illustrated children’s books, José Andrés is an inspired chef, author and TV personality. Lynda Curtis leaves an indelible mark on Bellevue, HHC and the children of New York, with forty years of visionary leadership and a real passion for children and their families. I feel extremely honored to have worked with her in my role as President of Children of Bellevue, Inc. when she was CEO of Bellevue Hospital Center, and wish her the very best in her retirement from HHC as SVP of the South Manhattan Healthcare Network.

Dear Friends –

We believe that children need more than medicine to thrive. But what do we mean by more than medicine?

Way back in 1949, children with tuberculosis, and other highly communicable illnesses, spent months at a time in the hospital to prevent contagion because there were no antibiotics to treat them. They received the medical care they needed but failed to thrive and develop.

Thanks to the actions of a few visionary women, activities and programs were introduced that ended the children’s isolation and loneliness, and brought some warmth and joy to the healing process. These were the early days of Children of Bellevue.

Since then, we have kept in step with best practices in early childhood development, providing innovative, life-changing programs and services to a patient population that could otherwise not afford them.

Who are these patients? Our pediatric and psychiatric patients have diverse cultural backgrounds, often living in single-parent households with limited economic and social resources. Many are new immigrants with little or no support network in this country.

Twenty-six percent of children in New York City live in households below the poverty line, with even higher rates among ethnic minorities, and are consequently at substantial risk for being underserved. As many as six New York City congressional districts each have more than 30% of children living below the poverty line.

Where do they come from? Your support will touch the lives of more than 25,000 children and teens from all five boroughs of New York City who pass through the doors of Bellevue Hospital Center eachyear.

What does your donation do for them?

Simply stated: MORE THAN MEDICINE

• GIVES a brand new book, at every check-up, to a child between the ages of six months to five years as a standard component of primary pediatric care, through our Reach Out and Read Program.

• PROVIDES teenage mothers with the support and direction they need to nurture healthy babies and children and care for themselves, too, in our Child Life: Adolescent Parents Program.

• TEACHES parents to “play smarter” with their children, improving the cognitive, language and social development that gives them an advantage when they start school, via our Video Interaction Project.

• HELPS children and adolescents in psychiatric crisis gain skills that help them cope and manage in daily life. We have the only Children’s Comprehensive Psychiatric Emergency Program in New York State, and have 45 beds on the inpatient unit.

• ALLAYS the fears and concerns both children and parents may have preceding surgery through our Child Life: Pre-Hospitalization Program. Children can “play doctor” while all of their parents’ questions are answered, making surgery day less stressful.

• SUPPORTS the very special care needed by victims of abuse or neglect in the calm, healing environment of the Francis L. Loeb Center for Child Protection and Development.

• AFFORDS early diagnosis and intervention for children with Autism or developmental and behavioral disorders, because advocacy for services, and long-term management lead to life-long improvements in language, learning, attention, regulation of behavior, and social engagement with teachers, parents and peers.

19 TOM COLICCHIO Chef/Owner Craft restaurants & ‘wichcraft Operator, Topping Rose House Honorary Chair and Host

Tom Colicchio spent his childhood immersed in food, cooking with his mother and grandmother. It was his father, however, who suggested that he make a career of it. Tom taught himself to cook with the help of Jacques Pépin’s legendary illustrated manuals on French cooking, La Technique and La Méthode. At age 17, Tom made his kitchen debut in his native town of Elizabeth, New Jersey, at Evelyn’s Seafood Restaurant.

Colicchio then cooked at prominent New York restaurants such as The Quilted Giraffe, Gotham Bar & Grill, Rakel, and Mondrian. During his tenure as executive chef of Mondrian, Food & Wine magazine selected him as one of the top ten “Best New Chefs” in the United States and The New York Times awarded the restaurant three stars.

In July 1994, Colicchio and his business partner Danny Meyer opened Gramercy Tavern in Manhattan’s Gramercy Park neighborhood. Colicchio’s cooking at Gramercy Tavern won consistent recognition, garnering three stars from Ruth Reichl of The New York Times and earning him The James Beard Foundation’s 2000 “Best Chef-New York” Award.

In 2001, Colicchio opened Craft one block south of Gramercy Tavern. Soon after, The New York Times awarded Craft with three stars, deeming the restaurant “a vision of food heaven.” Craft was awarded The James Beard Foundation Award for “Best New Restaurant” in 2002. That same year, he received The Bon Appétit American Food and Entertaining Award for “Chef of the Year.” The New York Times revisited Craft in September 2011, ten years after its debut, upholding its three stars and stating that the restaurant is “as magical and delicious as it was when it opened.”

With Craft and its casual sibling, Craftbar, established in New York City, Colicchio set out to expand his simple, elegant brand of cooking. He has since opened Craftsteak at the MGM Grand in Las Vegas (2002), Craft and Craftbar in Los Angeles (2007; 2009) and Craftsteak at the MGM Grand at Foxwoods (2008).

Colicchio opened his first ‘wichcraft – a sandwich shop rooted in the same food and hospitality philosophies as Craft – in New York City in 2003. Today ‘wichcraft has 14 New York City locations, as well as locations at the MGM Grand in Las Vegas and the Westfield Center in San Francisco.

Colicchio has published three cookbooks to date. The first, Think Like a Chef (Clarkson Potter/Publishers, 2000), won The James Beard Foundation “KitchenAid” Cookbook Award in May 2001. Tom’s second cookbook, Craft of Cooking, was released by Clarkson Potter/Publishers in 2003. A sandwich book inspired by ‘wichcraft, was released by Clarkson Potter/Publishers in March 2009.

Since 2006, Tom has been applying his experience and expertise to cable television as the head judge on Bravo’s hit reality cooking series “Top Chef.” The Emmy-winning show is currently in its 11th season.

In January 2010, he opened Colicchio & Sons in New York. At Colicchio & Sons, he improvises with small-batch ingredients from the micro-producers and family farmers with whom he has forged decades-long relationships. The restaurant earned three stars from The New York Times. Later that year, Colicchio opened Riverpark in New York with chef and partner Sisha Ortuzar. Riverpark features views of the East River and an urban farm supplying produce to the restaurant. In May of the same year, Colicchio was awarded The James Beard Foundation’s coveted “Outstanding Chef” award, the culmination of his 30 years of hard work in the restaurant industry.

In fall 2012, he opened the restaurant at Topping Rose House, a new inn he is operating in Bridgehampton, New York, which made its full debut in 2013.

Tom appears in and served as executive producer on A Place at the Table, Participant Media’s documentary about food insecurity in America, produced and directed by Kristi Jacobson and Colicchio’s wife, Lori Silverbush, which premiered at the 2012 Sundance Film Festival. Magnolia Pictures released the film March 1, 2013.

Tom brings his passion for cooking with fire to the Las Vegas Strip with the opening of Tom Colicchio’s Heritage Steak at The Mirage. Opened in August 2013, the 250-seat restaurant focuses on meats prepared entirely over an open flame – from wood-burning ovens to charcoal grills. Looking ahead, Tom will open a restaurant at 1 Hotel & Homes South Beach with a Mediterranean inspired menu showcasing South Florida’s local farms and fishermen.

Tom and his restaurants give back to the community by supporting charities including Children of Bellevue, City Harvest, Alex’s Lemonade Foundation, United Way of New York, and Food Bank for New York City. He lives in the West Village with his wife, Lori Silverbush, and three sons.

21 Jerry Pinkney Illustrator CHILDREN’S LITERACY HONOREE

A native of Philadelphia, Jerry studied at the Philadelphia College of Art (now the University of the Arts) where, in 1992 he received the Alumni Award. He has been illustrating children’s books since 1964, illustrating over one hundred titles and has been the recipient of five Caldecott Honor Medals, a Caldecott Medal, and five The New York Times “Best Illustrated Books”. He has received five Coretta Scott King Awards, and four Coretta Scott King Honor Awards. His books have been translated into sixteen languages and published in fourteen countries. Furthermore, he has received numerous awards for his body of work. In 2003, he received an Honorary Doctor of Fine Arts from the Art Institute of Boston at Lesley University; in 2010 the Doctor of Fine Arts, honoris causa from the Pennsylvania College of Art and Design, Lancaster, PA; and in May 2012 an honorary Doctorate of Humane Letters from the Bank Street Graduate School of Education in New York. Jerry was also a United States nominee for the l997 Hans Christian Andersen Illustration Medal. The Society of Illustrators in New York, NY has presented Jerry with four gold medals, four silver medals, the Hamilton King Award, and in 2006 their Original Arts Lifetime Achievement Award. In 2011, he was elected into the Society of Illustrators Hall of Fame.

In addition to his work in children’s books, Jerry has had over thirty, one-man exhibitions in such venues as the Art Institute of Chicago, Chicago, IL; the California African American Museum, Los Angeles, CA; the Brandywine River Art Museum, Chadds Ford, PA; Schomberg Center, New York, NY; and The Norman Rockwell Museum in Stockbridge, MA. He has exhibited in over one hundred group shows within the USA, and has been exhibited in Japan, Russia, Italy, Taiwan, Jamaica, Bermuda, and Honolulu. Jerry has illustrated for a wide variety of clients, including the US Postal Service, National Parks Service, and National Geographic Magazine. Jerry created art for the Harry Chapin Run Against Hunger commemorative poster, a foundation that helps bring food to those in need. He was invited to create a painting for the 30th Bologna Book Fair, Bologna, Italy and for the NASA Art Collection of the John F. Kennedy Space Center. He was appointed to serve on the US Postal Services Citizens Stamp Advisory Committee from 1982 to 1992. In 2001 Jerry was invited by First Lady Laura Bush to illustrate and design the White House Christmas Program for the Visitor’s Center. He has held several professorships and taught at Pratt Institute, Brooklyn, NY; the University of Delaware, Newark, DE; and the University at Buffalo, Buffalo, NY.

In 2003, Jerry was appointed to the National Council of the Arts - NEA, and served from 2003 to 2009. His art can be found in the permanent collections at the Library of Congress, the New York Public Library, the Delaware Art Museum, the Brandywine River Art Museum, and the National Museum of Wildlife Art as well as in private collections. Also works have been featured in The New York Times, American Artist Magazine, The Horn Book Magazine, The CBS Sunday Morning Show, and the PBS Reading Rainbow. Pinkney is also a Trustee Emeritus for the Eric Carle Museum of Picture Book Art, Amherst, MA and is presently a Trustee on the Board of the Katonah Museum of Art, Katonah, NY. He lives with his wife, author, Gloria Jean in Westchester County, NY. 22 José Andrés Chef CULINARY HONOREE

Named to Time’s “100” Most Influential list and awarded “Outstanding Chef” by the James Beard Foundation, José Andrés is an internationally-recognized culinary innovator, passionate advocate for food and hunger issues, author, educator, television personality and chef/owner of ThinkFoodGroup. TFG is the team responsible for renowned dining concepts in Washington, DC, Las Vegas, Los Angeles, Miami, and Puerto Rico.

He is Dean of Spanish Studies at the International Culinary Center and has recently launched his own line of artisanal products, José Andrés Foods. He is host and executive producer of the culinary series “Made in Spain.” His cookbooks include Made in Spain: Spanish Dishes for the American Kitchen and Tapas: A Taste of Spain in America.

Often considered the unofficial ambassador or Spain, Jose has been recognized for his efforts in promoting the culture and cuisine of Spain including the prestigious Order of Arts and Letters medallion in 2010, the Español Universal prize by the US-Spain Chamber of Commerce in 2012, “honorary ambassador” award of Brand Spain in 2013, and the “Premio Extraordinario Alimentos de España” by the Ministry of Agriculture, Gastronomy and the Environment, as well the “Exporting Spain” Award by the Spanish secretary of commerce. He was also the first chef to receive the Hispanic Heritage Award by the Hispanic Heritage Foundation. He is the founder of World Central Kitchen and culinary ambassador to the Global Alliance for Clean Cookstoves. Andres is chairman of LA Kitchen and chairman emeritus of DC Central Kitchen.

He teaches at Harvard and George Washington University.

23 Lynda D. Curtis Senior Vice President, South Manhattan Healthcare Network CORPORATE HONOREE

Lynda D. Curtis served as the Executive Director of Bellevue Medical Center until September 1, 2013 and continued as the Senior Vice President and Executive Director of the South Manhattan Health Care Network until her retirement on March 1, 2014 after 40 years with HHC. During her tenure, she administered a network of nationally renowned institutions: Bellevue (America’s oldest public hospital); Coler-Goldwater (America’s first public hospital devoted solely to the treatment of chronic diseases and the City’s largest long term care facility), Gouverneur (America’s first public hospital to establish a tuberculosis clinic), and Metropolitan Hospital Center (the oldest American partnership between a public hospital and a private medical school – New York Medical College).

Combined, the Network operates 3,133 beds (acute care, sub-acute, rehabilitation, skilled nursing and long term care specialty); a Diagnostic and Treatment Center; and five community based treatment centers. Annually, there are more than 27,000 discharges and 789,000 outpatient visits. Ms. Curtis managed a workforce of over 7,700 full time staff and a budget of nearly $998 million. Ranked among the nation’s top hospital administrators as well as a troubleshooter extraordinaire, Ms. Curtis adeptly led complex organizations through strategically focused culture change initiatives to dramatically advance the efficiency, effectiveness, and safety of patient care and to render that care in a decisively more patient-friendly and family-centered way. While CEO of Bellevue, she initiated major strategic initiatives in the areas of patient safety, quality and safety performance, improved access and modernization.

A Manhattanite by birth and upbringing, Ms. Curtis graduated from the State University of New York at Buffalo with a degree in childhood education, and earned her Master’s in special education from Fordham University. In 1974, she entered the municipal hospital system (NYC Health and Hospitals Corporation (HHC)) as a senior children’s counselor at the Sydenham Neighborhood Family Care Center in Harlem. She quickly advanced through the administrative ranks eventually becoming acting Deputy Executive Director at Harlem Hospital before assuming key corporate-wide assignments in the areas of operations, facilities management and quality management. In 1993, she served as Corporate Vice President for Quality Management Services responsible for implementing HHC’s Total Quality Management Initiative. From there, Ms. Curtis assumed key facility leadership positions including the directorship of HHC’s largest Diagnostic and Treatment Center, Cumberland, and the COO of HHC’s largest Network -- the Generations +/ Northern Manhattan Network, consisting of Harlem, Metropolitan and Lincoln Hospitals.

In 2001, Ms. Curtis became Network Senior Vice President/Executive Director of the North Brooklyn Health Network (NBHN)/Woodhull Medical Center where she steered the network through a fundamental change in its performance improvement process, employing successful elements that included the realignment of network clinical and administrative management structure, the development of a case management approach, and the realignment of physician performance expectations.

Without Children of Bellevue I couldn’t have done my job! Not only did Children of Bellevue help provide basic necessities for the children such as non-hospital toiletries, but they gave me the majority of my funding for art supplies. The children on the unit were there for long periods of time, often for over a month, so creative expression was important. We were able to paint on canvas boards with acrylics, do printmaking, bead bracelets, and start a library with computers!

Willamae’s Deep Dish Peach Cobbler

One of my most cherished memories from my growing up years was the sweet taste of my mother, Willamae’s peach cobbler. She knew it to be my favorite, and often prepared it in a deep baking dish especially for me. I am certain that this childhood memory of Mother preparing my most loved treat has, over the years, added to its unforgettable flavor. Mother was from Georgia, and Dad worked in produce. Therefore when Georgia peaches were in season, peach cobbler was a must. When Mother’s honey-colored cobbler came out of the oven, and had reached a warm enough temperature, I was always the first to be served.

Recipe for four servings: 8 Georgia peaches ¼ cup brown sugar ¼ cup white sugar ¼ tsp ground cinnamon 1/8 tsp ground nutmeg 1 stick of sweet butter 2 tsp cornstarch 1 tsp fresh lemon juice

Pre-heat oven to 425 degrees Fahrenheit Combine peaches, ingredients, and toss. Pour in large baking dish and bake for fifteen minutes. Top with Jerry’s favorite sweet biscuit recipe and spoon biscuit mixture atop peaches. Combine sugar and cinnamon and sprinkle. Bake for approximately 30 minutes.

Jerry’s favorite sweet biscuit recipe

2 cups of Bisquick 1 pint of light cream (feel free to substitute with your favorite dairy beverage) 1/2 to 1 cup of your sugar, depending on your sweet tooth 2 eggs 1 tsp of vanilla Mix it all up until it is free of lumps, pour on top of the fruit Sprinkle lightly with cinnamon and brown sugar Cover with foil

Bake at 350 degrees Fahrenheit or 45 minutes

Uncover and bake until the top is golden brown

31 Recipe From the Kitchen of José Andrés

Garbanzos con Espinacas Moorish-style chickpea and spinach stew Serves 4

This dish is a specialty of my wife, Patricia. She learned it from her mother who learned it from her mother, and it’s one of our daughters’ favorites. We like to add a fried egg on top to make it extra special.

1 cup dried garbanzos or chickpeas Pinch of baking soda 6 cloves garlic, peeled ¼ cup Spanish extra virgin olive oil 2 slices white bread, crusts removed 2 tbs pimentón or Spanish sweet paprika Pinch of saffron threads, preferably Spanish 2 tbs sherry vinegar, preferably Spanish ½ pound spinach 1 tsp ground cumin Salt and white pepper, to taste

A day in advance, soak the chickpeas with the baking soda in a bowl of cold water overnight. Drain and rinse the chickpeas before using.

In a large saucepan, combine the chickpeas with 2 ½ quarts of water and bring to a boil. Reduce the heat to low and simmer until the chickpeas are tender and the water has reduced*, about 2 hours. Every 10 minutes or so, add ¼ cup of cold water to slow down the cooking process. Remove the saucepan from the heat and keep the chickpeas in the warm water until ready to use.

Heat the olive oil in a small sauté pan over a medium-low flame. Add the garlic and cook until browned, about 3 minutes. Remove the garlic from the pan and set aside. Add the slices of bread and brown on both sides, about 1 minute each side. Remove the bread from the pan and set aside.

Remove the pan from the heat and allow to cool for a few minutes. Add the pimentón, saffron and cumin to the pan and then immediately add the sherry vinegar to prevent the pimentón from burning. Leave the pan off the heat.

In a mortar, smash the reserved garlic and the browned bread to make a very thick paste.

Return the saucepan of chickpeas back to the heat and bring to a low boil. Add the spinach and simmer for 5 minutes. Add the pimentón-sherry mixture from the sauté pan and the garlic paste to create a thick, stew-like sauce. Simmer for 5 minutes more to let the flavors incorporate. Season with salt and white pepper, to taste, and serve immediately.

*José’s tips: To know when the chickpeas are soft and cooked, you should have only around one finger’s depth of water left in the bottom of the pan. If there is more, re- move some water from the pan before adding the rest of the ingredients. If you don’t have time to cook dried garbanzos, use 3 cups of good quality chickpeas from a can or jar and add ½ cup of water to the pan before adding the spinach.

Carrot Cake

2 cups flour, sifted 1 tsp baking soda 1 tsp salt 2 tsp cinnamon 2 cups sugar 1 ½ cups vegetable oil 4 large eggs 3 cups raw carrots, grated 1 cup chopped pecans or walnuts

Preheat oven to 350 degrees Fahrenheit.

Combine first four ingredients in a large bowl. In an electric mixer, combine the sugar and vegetable oil and add the dry mixture to the bowl of the electric mixer. Add eggs one at a time and mix. Add nuts and carrots last. Grease and flour a baking pan -- oblong, Bundt, or layer cake pan – and pour the batter into prepared pan. Bake in a 350 degree oven for 40 minutes if using a layer pan; bake 1 hour and 20 minutes if using Bundt pan.

Cream Cheese Frosting: (if desired)

3 oz cream cheese ¼ cup heavy cream 1 tsp vanilla 2 ½ cups confectioners’ sugar

Blend cheese and cream; add vanilla and sugar and mix until thickened to desired consistency. Cake may be frosted while warm.
