Combine ingredients. Press firmly and evenly onto bottom of parchment-lined half sheet pan. 2. Bake in 350°F standard oven (or 325°F convection oven) 8 to 10 min. or until firm to the touch and golden brown. Cool pan completely on wire rack. Crumble into pieces. Chocolate Custard 3. Bring cream, sugar and salt to boil in heavy saucepan on medium-low heat. Place melted chocolate in medium bowl; add cream mixture. Blend with immersion blender until smooth. 4. Add egg yolks, 1 at a time, blending well after each addition. Stir in vanilla. Strain mixture then let stand at least 10 min. to allow bubbles to rise to the surface. Pour 4 oz. custard into each of 6 (5- to 7-oz.) clear ovenproof jars. 5. Place jars into deep steam table pan. Place pan on center rack of 350°F standard oven. Pour hot water around jars to 1-inch depth. Bake 20 to 22 min. or until all but the center third is firm. The center will still jiggle slightly, but will become firm as the mixture cools. Remove from pan and cool completely on wire rack. Refrigerate at least 1 hour before serving. 6. Divide Graham Cracker Mixture evenly over custards. Top each with 2 marshmallow pieces; brown using kitchen torch. Add 2 additional marshmallow pieces. Brown with torch on all sides. Serve immediately. Roll dough on lightly floured surface to /16-inch thickness. Cut out 34 circles using 4.5-inch round cutter. Moisten edges with water. Place 1 oz. pie filling in center of each circle. Fold dough in half to enclose filling, pressing to seal with tines of fork. Place round cutter over edge and press to even the edge of the dough. 3. Place on parchment-lined sheet pan. Repeat with remaining dough and filling. Cover and refrigerate empanadas 30 min. Coating 4. Rub vanilla extract into sugar, then blend in NILLA crumbs. Place in shallow bowl large enough to hold empanadas; set aside. 5. Deep-fry a few chilled empanadas at a time in 350°F oil 1½ to 2 min. or until golden brown. People in newspaper club like to talk and do weird things, which is no surprise why we have a blast and write amazing stories. We have competitions and talk a lot. We also do our interviews during this time. We have to have our questions ready, and then we go. Out of those 22 kids, some are quiet while others are really loud. We are all different, but we have one thing in common. We all enjoy writing and newspaper club! Never quite able to pinpoint why he felt that his family was some- how “different” from the others he observed as a young boy growing up in Northwest Indiana, Randy proceeded on with his life, marry- ing, becoming a father, and settling down in Long Beach. That nagging enigma evoked among other things, memories of out-of-earshot conversations between Randy’s grandmother and grandfather. Their words were spoken in a mystifying tongue, one unknown to Randy. And the bits of folk wisdom and remedies from his mother, such as suggesting he go out and find a willow bark branch when he lost his toothbrush, also hinted of the uncommon. Randy said that his family had told him he was of German and French descent, and who was he to question otherwise, with the surname, Vissing? So, it came as a surprise, but not exactly as a shock, when Randolph (a French name) Vissing (a German name) discovered his Shawnee heritage. Lenawe Nilla—I Am Shawnee “I found the information when I was looking for my mother’s birth certificate approximately four years ago,” Randy said. “I discovered that my grandfather had been a full-blooded Shawnee, and my grand- mother, one-half Shawnee.” Before this discovery, the Vissings— Randy, Sue, and Blake had attended sever- Red, yellow, black, green and white beads, ribbons, al public pow feathers and fringe adorn this young lady.
