Dalwhinnie (dal-whin-nay) Winters Gold (Launched 2015) 43% ABV £3.00 The spirit is made between October and March in Scotlands highest and coldest distillery. Selected by Dr Craig Wilson ’s Master Blender. Colour: Golden. Nose: Sweet vanilla and honeyed malt, mandarin orange. Taste: Mild syrupy mouthfeel, still smooth. Peppery, B ginger, some drying oak spice, a lovely balance of orange and honey coated in a sweet barley sugar. Finish: A pleasingly long finish, malty, orange, honey and slowly fading and slightly drying oak spice.

Dalwhinnie (dal-whin-nay) Lizzies Dram (2018) 43% ABV £5.00 After 31 years’ service at working in the warehouse, mash house and the still house Liz Stewart - or ‘Lizzie’ as she’s known retired in 2018. In E recognition of her dedicated service and iconic role as Scotland’s first female operator, with the launch of a new exclusive distillery bottling aptly entitled ‘Lizzie’s Dram’. Matured in refill American White Oak casks. Colour: Golden. Nose: Sweet malt and apples. Taste: Mulled orange notes, oak rich and fruity. Finish: A pleasingly long finish

Dalwhinnie (dal-whin-nay) Rare Managers Dram 57.5% ABV £8.00 This is the rare Manager's Dram series of single malt. This delicious Dalwinnie is non chill- filtered. Nose: Lots of vanilla, with a pure sugary sweetness. Beeswax and acacia honey and G light lavender notes. Palate: Barley and oats with a malty sweetness. A bit of leather cut with citrus, developing into softer baked fruit. Finish: This is short with a soft sweetness. Overall: A soft, summery whisky, lighter than the standard expression. Glendronach (glen-dro-nack)15 Year Revival Single Malt 40% ABV £4.50 Est 1826 Owned by Benriach– One of the first licenced distilleries founded in 1826. This whisky is matured in Oloroso sherry casks. Colour: Deep gold with a lovely mahogony heart. Nose: Incredible concentration of aromas. Treacle toffee and chocolate orange. D Taste: A very dynamic and full bodied dram for its age. Chewy with coffee chocolate and treacle scones. Finish A veritable feast to enliven the senses.

Oban (oa-bun)14 Year Single Malt 43% ABV £3.75 Est. 1794 Owned by Diageo - Colour: Olive gold. Nose: Rich sweetness and oranges, lemons and pears, sea-salt and peaty smokiness. Body: Full, rich. Taste: Late autumn B fruits - dried figs and honey-sweet spices; then a smoky malty dryness. Finish: Long, smooth-sweet finish with oak-wood, dryness and a grain of salt.

Oban (oa-bun) Distillers Edition Single Malt 43% ABV £5.00 Est. 1794 Owned by Diageo Finished in Montilla Fino sherry casks. Colour: gold. Nose: Malty start, then sweet, fruity peaches on syrup, honey and drier, seaweed, manzanilla sherry. Hints of smoke. Palate: oily, sweet. Rich nutty and malty flavours, with E notes of tobacco, chocolate and spices (nutmeg). Finish: medium length, chocolate, vanilla, pepper. drier and slightly peaty in the end.

Old Fettercairn (fett-er-cairn) 12 Year Single Malt 40% ABV £3.75 Est.1824 Owned by Whyte & Mackay Colour: Medium gold. Nose: Light, stimulating fresh aroma with a hint of nutmeg. Taste: Nutty dryness, yet fresh with a toffeeish sweetness. Beautifully balanced. Finish: Medium length. Sweet, nutty, dry. Cù Bòcan Single Malt 46% ABV £3.75 Est. 1897 Owned by Takara Shuzo co. (Non Chill Filtered) Cù Bòcan is a mythical hellhound. Tomatin produced this lightly peated whisky, matured in a combination of ex bourbon, ex sherry & virgin oak casks Nose Initially hit with coconuts and cream with some B botanic notes, parsley & coriander. The smoke emerges, drifting past the nose. A mix of lime, grapefruit & tangerines with almond & aniseed. Taste Initially feather light, followed by a honeyed smoke; toasted almonds. The rich spice of cloves, cinnamon & star anise create an enigmatic elegance. Finish Light with a hint of sweet smoke.

Cù Bòcan 2006 Vintage Special Edition Single Malt 46% ABV £4.00 Est. 1897 Owned by Takara Shuzo co.- (Non Chill Filtered) Cù Bòcan is a mythical hellhound. Distilled using peated barley (not a common thing - they only distil peated barley for two weeks each year!) aged in a combination of Sherry and bourbon casks. Nose: C Flamed orange peel, oatcakes and bread 'n' butter pudding. Palate: BBQ embers followed by honey and stick Oloroso. Finish: Quite long and richly smoky.

The Deanston (deen-stun) Virgin Oak 44% ABV £3.75 Est 1965 Owned by Distell Int. Ltd. Deanston Virgin Oak is made with young whisky & finished in brand new oak casks from Kentucky. Certified Organic and they power their distillery using hydro energy, So a feel good dram in the hand. Nose: Fresh citrus, honeyed barley ginger lemongrass. Palate: Toffee sweets pop up first, followed by a dollop B of cream and oak nutmeg notes. Finish: Oak spices on the finish.

Aberfeldy (ah-bur-fell-dee) 12 Year Single Malt 40% ABV £3.75 Est. 1898 Owned by John Dewer & Son (Bacardi Ltd) - Colour: Warm Gold. Nose: Rich, perfumed aroma, rounded & heather, honey, notes of melon, butter toffee, toast cereal & vanilla. Taste: Great depth, sweet golden syrup and honey, spices, orange peel & apple. Finish: Glorious, perfume characteristics become more spicy, with a zesty hint of B orange peel in a dry finish. Dalmore (dal-moor) Millennium Release 57.7% ABV £8.00 Est. 1839 Owned by Whyte & Mackay Ltd (1263 Custodian Bottle) A truly special release to Dalmore Custodians Members. This bottling was aged initially in ex-bourbon American oak, final finish in a Matusalem oloroso sherry cask. Just 421 G bottles were released . Nose : Caramelised orange, sweet pear and ripe mango. Palate: Toffee apple, pineapple and Madeira cake Finish: Muscovado, roast coffee and cocoa (These retail now at over £500 per bottle)

Glenmorangie (glen-mor-run-jee) Quinta Ruban 14 Year 46% ABV £4.00 Est. 1843 Owned by Moët Hennessy Louis Vuitton Glenmorangie’s Quinta Ruban 14 year is new for 2020 as previously a 12 year old. Bottled at a higher strength. Aroma: Seville oranges and walnut build into rich dark chocolate, sandalwood spicy pepper. C Taste: Notes of mint chocolate, walnuts and orange develop Turkish delight and summer flowers, and rich dark chocolate-enrobed walnuts. Raisins, lemony-rose, crystallised orange segments, Finish: Lingering memories of dark minty chocolate and orange.

Glenmorangie (glen-mor-run-jee) Bacalta 46% ABV £4.00 Est. 1843 Owned by Moët Hennessy Louis Vuitton . Bacalta is the eight release in Glenmorangie's annual Private Edition series. Finished in casks which were seasoned with Malmsey Madeira Casks. Nose : Fragrant, honeyed, sweet, with ripe apricots, and white C chocolate. Taste: Mint toffee, caramelised oranges, baked apricot lead to honeycomb, almonds and dates. Finish: Rich and syrupy, with caramelised citrus and pears fading to fudge and mint. The Royal Lochnagar (loch-nah-gar) 12 Year 40% ABV £3.75 Est. 1824 Owned by Diageo. Their smallest distillery and another that has worm tubs. Colour Pale Amber Nose wood, toffee, varnish. Linseed oil and lychee. Taste B Sweetness then to acidity. Finish Dry medium length sandalwood character.

Tullibardine (tully-BAR-din) 228 Burgandy Cask Finish 43% ABV £4.00 Est 1949 Owned by Picard Vins & Spiritueux. Tullibardine is Gaelic for “lookout hill” and refers to a 15th century small medieval chapel located near the distillery. Highland whisky C finished for 12 months in 228-litre Red Burgundy wine casks from Chateau de Chassagne Montrachet. Nose: Spiced, with notes of red berry fruit, vanilla and toasted oak. Palate: Creamy, nutty palate entry with notes of sweet custard, apple peel, red berries and orange blossom honey. Finish: Long finish with plum jam and allspice.

Speyside Whisky (Glen Moray) 25ml Glen Moray Port Cask Single Malt 40% ABV £3.75 Est. 1897 Owned by La Martiniquaise Nose: Creamy vanilla at the fore, joined by jammy redcurrants and blackberry. Toasted oak touches in the background. Taste: Butterscotch candies, golden barley and a touch of cinnamon. The port cask influence comes through B with light notes of raisins and freshly picked red berries. Finish: Rather long, with honey, vanilla and a dusting of cocoa.

Glen Moray Cider Cask Project Single Malt 46.3% ABV £4.00 Est. 1897 Owned by La Martiniquaise :Nose Reminiscent of a fairground. Toffee apple and candy floss. Taste: Incredibly light and fresh. Summer fruits accompanied by vanilla ice cream sprinkled with toasted oats. Finish: Smooth and satisfying. Caramelized apple C laced with spice mixed perfectly with vanilla fudge, slowly melting on the tongue.

Glen Moray Rhum Agricole Cask Project Single Malt 46.3% ABV £4.00 Est. 1897 Owned by La Martiniquaise :The second whisky in Glen Moray's experimental Elgin Curiosity series, has been finished in rhum Agricole casks from the St James distillery in Martinique. Palate Light, grassy and sweet with notes of green apple and lemon. Finish Medium-length and slightly drying with the lemon notes remaining through to the end. Comment An easy-to-drink, entry-level single malt that’s a bargain at this price. B

Glen Moray Chardonnay Cask Finish Single Malt 40% ABV £3.75 Est. 1897 Owned by La Martiniquaise :Nose: Warm, oily and very buttery fruitiness. Apples and grapefruits, melon, honey, lemon cream, oranges. Sawdust in the background. Taste: Growing sourness and just a plain winey side which is overpowering. Hints of fizzy B grape juice lemon marmalade and grassy green tea, a little caramel and oaky dryness. Finish: a bit weak, evolves towards butterscotch, cinnamon and dry, toasted oak. Cragganmore (crag-an-moor) Distillers Edition 40% ABV Est 1869 Owned by Diageo –Double matured in Port Wine casks. £5.00 Nose: With syrupy dark fruit, cured ham and granary toast there's a dash of winter spices and oily walnuts. Palate: A gorgeously balanced concoction of blackberry jam, iron-rich meat, firewood, fruit cake and nutty oak are eventually joined by more of those E winter spices. Finish: Fizzy oaky tannins and armchair leather simmer in a dry finish.

Cardhu (car-doo) 15 Year Single Malt 40% ABV £4.50 Est. 1824 Owned by Diageo— Nose—Vanilla, dried fruits almonds, toffee and coconut. Taste—Peppery, toffee and coconut. Finish Smooth light and drying, bitter chocolate notes. D

Knockando (nock-an-doo) 12 Year Single Malt 43% ABV £3.75 Est 1898 Owned by Diageo The nose is quite gentle and very fragrant. Notes of waxy manuka honey, hints of malty barley and roots with a touch of stemmy cut hay. There is a very supple, chewy peat lying quietly in the background. The palate is quite full with notes of heather roots and damp earth, notes of honeyed sweetness with Jamaica ginger cake, B a touch of rum with malty peat. The finish is quite long with winter spice and crystallized stem ginger with cereal notes.

Dallas Dhu Single Malt 40% ABV £4.50 Est 1899 Closed 1983 Owned and operated by Historic Scotland as a museum. Colour: Yellow straw. Nose: Spicy with slight oily notes. A floral pot pourri note emerges with a cedar wood edge. Traces of fruit - pineapples and kiwi fruit. Taste: Spicy with earth and moss - like flavours. Rich, fruit flavours develop with a drying smokiness. Finish: Dry D with a hint of mustard..

Glen Elgin 21 Year Signatory Vintage 61% ABV £6.00 Est 1898 Owned by Diageo Bottle 263 of 581 Refill Sherry Butt 1991. Cask 4078 Nose: Grassy and grainy nose with some coffee beans, nutmeg, chocolate, caramel and oak. Taste: Good body with manuka honey, oak and spice. Nose: Vanilla, peppermint, manuka honey and barley sugar. Taste: Butterscotch and porridge oats, sweet cereals, malt, apple, and honey. Finish: A little lozenge flavour malt and D spices.

Ardmore (ard-moor) The Legacy Single Malt 40% ABV £3.00 Est. 1898 Owned by Beam Suntory Nose Heather Honey hints of cinnamon, toffee bonbon and of peat smoke. Palate Creamy vanilla spice gives way to overt smoky charcoal notes. Smoke doesn't dominate and is balanced by the sweet honey and spice. Finish Full bodied, silky mouth feel with a (trademark Ardmore) dry, tangy and lingering A tertaste, coupled with delicious spice notes.

Benromach (ben-ro-mack) 10 Year Single Malt 43% ABV £3.00 Est 1898 Owned by Gordon & MacPhail Nose: Thick, oily and creamy. Brine, charred bacon, woody, bonfires, smoked cheese, dried fruits. Taste: Woody, apples, raisins and malty liquorice and toffee, smoky character. Finish: Earthy, peatiness and smoke on the A finish.

Macallan (mack-al-un) Double Cask Gold Single Malt 40% £3.75 ABVEst. 1824 Owned by Edrington Group. Double Cask Gold— Aged in a combination of first fill and refill Oloroso sherry casks, Nose Sweet notes of toffee and custard tarts balanced by some fresh green-apple skin. Palate Cinnamon, raisins, baked B apples, panna cotta. Quite rich and weighty. Finish Smooth, rich and clean.

Mortlach (MORT-lack) 12 Year old Single Malt 43.4% ABV £3.75 Est 1823 Owned Diageo The Wee Witchie, comes from the name of the tiny still that distils a portion of the whisky. Main Blend is . (Distilled 2.81) It's drawn from bourbon and sherry casks, Nose: Damson, toasted almond, cinder toffee and heavy B barley. Palate: Warming oak and soft raisins, with a bit of olive oil salinity mixed in. Finish: A bit jammy, a bit nutty, some lingering citrus oils cutting through. Whisky Bar List

Flora and Fauna Range The Flora and Fauna collection was composed by the company (now known as Diageo), in order to promote the products from their different lesser known distilleries to a wider audience. Being the owners of the most popular whisky in the world (Johnnie Walker), the great majority of the whisky distilled goes into blends. The idea with the Flora and Fauna series was to offer the public a chance to try the original single malt spirit, pre-blending.

When the series was first released, it had no actual name. The term “Flora and Fauna” was coined by famous whisky and spirits writer Michael Jackson. He came up with the name based on the images printed on the labels, as these images primarily displayed plants and animals. That name stuck, and is nowadays commonly used to describe the whiskies in the series.

The series originally started in 1991 and at the time contained 22 different whiskies bottled at 43% ABV. This changed as others were released at cask strength and as specials. So the overall number of the series went up to 34 in the final count.

When the mid-strength whiskies were originally released, most of them were packaged in wonderful wooden boxes. Later subsequent releases of the same bottles saw wood replaced with cardboard, and eventually, the bottles were sold without any boxes at all. Various releases exist, with grey, white and black caps.

Flora and Fauna Range 25ml Teaninich (TEA-an-in-ich) 10 Year Old Flora & Fauna 43% ABV £4.50 Est.1817 Owner Diageo Teaninich means “The house on the moor” Teaninich does not have a mash tun, rather uses a Meura Filter press, where the mash is D squeezed between cloth plates, after which the wort is collected, the draff removed, and the process repeated. It’s a typical setup in breweries but Teaninich is only one of two distilleries to use it.Nose Fragrant, fruit, green-ness. Cut hay and chamomile, Wood resins and potpourri with winter spice and gentle citric acidity. Taste : Notes of barley sugars, cereal, oily herbal with more of that citric acidity developing and a hint of espresso. Finish : Dry medium-length with gentle cut grasses. Auchroisk (Oth-RUSK) 10 Year Old Flora & Fauna 43% ABV £4.50 Est.1974 Owner Diageo - Auchroisk means “The Ford across the river” Nose: Light, with a playful zestiness. Crème anglaise, cut grass and delectable D nuttiness creep in. Taste: Quite sweet with a pleasant softness. Finish: Soft, dry green cereal notes. Whisky Bar List Flora and Fauna Range 25ml Linkwood (link-wwod) 12 Year Old Flora and Fauna 43% ABV £4.50 Est.1821 Owner Diageo Nose: Fresh soft-fruits with a hint of vanilla, then light cigar-box notes are perceptible, and a faint hint of expensive ladies' perfume. Taste: Sweet, overall. D Viscous, but fresh and clean: a pleasant acidity helps to maintain this. Finish: Cedar notes emerge in the finish, which is long.

Strathmill (strath-mill) 12 Year Old Flora and Fauna 43% ABV £4.50 Est.1891 Owner Diageo Nose: quite soft yet very fruity. A hint of grassy greenness with a nuttiness, there are notes of cut herbs and apples, hints of cut hay. Taste: silken smooth in D delivery. One of the very few official bottlings ever to have been released from the distillery and carries a much grassier D character than the production methods (short fermentation and fast distillation) would suggest. Nose: light & delicate zesty tang, notes of sugary citrus, blossom, apple peel with cocoa. Taste: fresh with hay and petals, notes of tannins. Some spicy notes with cystallized stem ginger. Mannochmore(man-och-moor)12 Year Old Flora and Fauna 43% ABV £4.50 Est.1971 Owner Diageo Nose: Butter, sweet grass, hint of parma violets, honeysuckle and toffees. Taste: Sweet buttercream with hints of young spirit quickly picks up some dark D wood and spice. Finish: Medium long with some prickly spice and more butter. Sweet wood as it fades.

Blair Athol (blair-ath-ull) 12 Year Old Flora and Fauna 43% ABV £4.50 Est.1798 Owner Diageo Nose: Muscat grapes, brimstone and tar. Dried apricots and treacle toffee, dried fruit, gooseberries, apricots and oranges, Taste: sweet aftertaste. A D rich, sweet malt best drunk with only a drop of water, when it holds its sweetness better. Finish: Very curiously, a sweetness is introduced at the end, after the acidity and dryish finish has passed.

First-fill ex-Bourbon casks from Heaven Hill Kentucky distillery B and first-fill STR barriques (STR means shaved, toasted and re-charred), and was distilled in 2015. Kingsbarn does not have a mash tun, rather uses a Meura Filter press, where the mash is squeezed between cloth plates, after which the wort is collected, the draff removed, and the process repeated. It’s a typical setup in breweries but Kingsbarn is only one of two distilleries to use it Nose: offers notes of banana, pineapple, red berries and a slight herbal note.
