August 2015 CYC’s events are the BESTEST! ONE THING IS always certain at CYC – we know a good feast when we have one! July’s Pig Roast is going down in the annals of the Bestest of Best, join- ing our long line of barbecues, stone crab festivals, seafood buffets, Cajun dinners, pasta nights and, well, the list of all our appetizing, music-loving, fun-filled events at CYC just goes on and on. CONSIDERING THE Southern roots of CYC’s flag (Commodore Milam is from South Carolina, Vice Commodore Cardosi is from Memphis and Rear Commodore Proefke is a UF Gator), having a pig roast on our docks seems like a most natural occur- rence. Although pig roasts are common in the Caribbean, where so much of our local flavors come from, they’ve been a tradition from Virginia through the Florida Panhandle and on over to Louisiana for 200 years. Even George Washington was known to enjoy these succulent roastings, and oh, boy, just thinking about the Cajun cochon de lait will get your mouth watering. Chef John – a Yankee, yet! – served up a beautiful feast that did us proud. Looks like CYC has a new tradition in the making! Thanks, Boys! August Compass 5 6 August Compass better name for them!
