And every one of them is Bestest of the Best.

Considering the Southern roots of CYC’s flag (Commodore Milam is from South Carolina, Vice Commodore Cardosi is from Memphis and Rear Commodore Proefke is a UF Gator), having a pig roast on our docks seems like a most natural occur- rence. Although pig roasts are common in the Caribbean, where so much of our local flavors come from, they’ve been a tradition from Virginia through the Florida Panhandle and on over to Louisiana for 200 years. Even George Washington was known to enjoy these succulent roastings, and oh, boy, just thinking about the Cajun cochon de lait will get your mouth watering. Chef John – a Yankee, yet! – served up a beautiful feast that did us proud. Looks like CYC has a new tradition in the making! Thanks, Boys! August Compass 5 6 August Compass
