From the moment I asked their opinion about whether I should embark on such a project, they urged me to begin right away. Without them, I wouldn’t have written even one page. My mother, Marjorie Lyon, loved cookbooks and would have been so proud if she were still living. In addition, my sisters-in-law, Beverly Jeider, Barbara Kyte, Heather Roeske, and Bobbie Fleck, have been terrific. They helped to keep me focused on getting the job done. My dad, Mel Lyon, and his wife, Phyllis, have been interested from the beginning. The first soup they tested was the Sweet Potato–Parsnip Soup from New Zealand. Phyllis suggested adding more parsnips, which I did. I have many people to thank for testing soups. Two of the first people who agreed to critique them are Heidi Moncrief and Nicole Wallace. Others include George and Francis Olsey. Francis was my advisor in the early stages of the project. Her advice was invaluable. I also appreciate Glenn and Nancy Sayers, Nathan and Emily Hellman, Charlotte Ishkanian, and Laurie Falvo for sampling and sharing their opinions. The gentlemen who added insulation to our attic, the folks who came to estimate moving costs, the Aveda staff in Boise, and a crew from Pacific Press® were also willing to share their opinions. Theseare just a few, and I appreciate each one of them. Others who have helped me keep going are Julie and Greg Keener, Larry Jeider, Angela Oetman, Gerald and Nadia Oetman, Benjamin Child, and Briana Rasmussen Walker. Bob and Ellen Nixon introduced me to the wonders of fresh herbs, grown in their backyard. I thank Dale Galusha, and many others at Pacific Press® for publishing this book. Sandra Bowman and Beverly Logan have been an encouragement throughout the process. Jerry Thomas, Doug Church, and Bonnie Tyson-Flyn have been supurb. I also wish to thank Gary and Bettina Krause and my friends at Adventist Mission. Their dedication to their work is a constant inspiration to me personally and professionally. Hans Acknowledgments Contents Olson, Rick Kajiwa, Dan Weber, and Charlotte Ishkanian have taken many of the photo- graphs in this book, courtesy of Adventist Mission. I am grateful to the many hosts and hostesses who have shared hospitality and friendship with me. They have demonstrated that human beings have a great capacity for happy fellowship, honest acceptance, and deep respect for others. I thank them for their warm example. Last, I want to acknowledge my husband, Bob. Even though I have dedicated the book to him, I must mention that he also tried all of the soups that didn’t make the book! As a Seventh-day Adventist family, we attended church every Saturday. I enjoyed everything about Sabbath School, but what I loved most were the mission stories.
