We never like to take wine too seriously and this goes especially for our Cloak & Dagger wines. These wines are just delicious and made to be enjoyed with great food and lots of laughs with mates. With a bubbly Prosecco, an aromatic Pinot Grigio and, juicy and juibey . Cloak & Dagger named itself. Our frst release of The Dagger Pinot Grigio had a steely, razor sharp acidity whilst The Cloak Sangiovese enveloped you with its plush, velvety tannins and mouthfeel. The labels were designed to continue taking you a journey of the wine all before you had even opened the bottle.

12 SUMMER 2020 - 2021 GIPSIE JACK

LANGHORNE CREEK, SOUTH AUSTRALIA

Times got a lot tougher in the grape industry in the early to mid 2000’s. Third, fourth and ffth generation Langhorne Creek grape growers found themselves struggling to fnd a market for their premium fruit with many having no alternative but to accept rock bottom prices just to make ends meet. John Glaetzer had been a long-time supporter of Langhorne Creek fruit and along with great mate and local vigneron Bill Potts, they decided the time was right to take matters into their own hands and in 2002 The Gipsie Jack Wine label began. Gipsie Jack was named after John and Margaret Glaetzer’s adored Jack Russell Gipsie. Sadly, Gipsie passed away in 2015. She is proudly displayed on every label. Gipsie Jack has a serious mission, to raise the image of Langhorne Creek and give a few mates a leg up, by providing a small but ever-increasing alternative market.

MCLAREN VALE, SOUTH AUSTRALIA

Rated ***** by James Halliday Halliday 2020 - Top 10 Dark Horse Wineries

ORGANIC AND BIODYNAMIC, Founded by Walter and Kerry Clappis, The Hedonist employs traditional methods of winemaking, through the use of open fermentation and a basket press. Fermentation is usually completed in small oak barrels. This method is adopted to increase the overall complexity and integration of oak through the wine. The Hedonist wines adopt a minimalistic approach to winemaking, believing that good wines are “made in the vineyard.” Great care is taken in the estate grown biodynamic and organic vineyard.

BAROSSA, SOUTH AUSTRALIA

Jaysen has been making wine for twenty years, mainly in the Barossa, and more recently in the USA. “I do it because it’s a hell of a lot of fun for me and I get a lot out of the process. My enjoyment stems from being outdoors, the physical work and getting dirty, the science with a bit of guesswork and the chance to drink many amazing wines in the name of research. It’s a lifestyle industry for me….. there’s a time for fun, enjoyment and adventure, then there’s the realisation that some special vineyards just need to be bottled without mucking about too much. You’ll see that in my JC’s Own wines - some adventurously diferent wines in style and packaging and limited releases that pay respect to distinguished single sites around the world.”

19 PACHAMAMA (NEW)

MULTI REGIONAL VICTORIA

Rated ***** by James Halliday

Pachamama, the Incan earth goddess who brings fruit to the vine and joy to the world. Back in 2009 atop of Machu Picchu in Peru, as the sun was rising and the fog lifted slowly exposing the ruins that hid below, Callie and her dad, Dave, found inspiration for their frst wine brand PachaMama. Aptly named after an ancient Inca fertility goddess who presides over planting and harvesting - you may know her as Mother Nature. The PachaMama wines focus on highlighting the incredible wine regions of Victoria and the grapes that grow best in each area. Having the same group of growers for the last 7 years Callie and Nina are learning more each vintage about the grapes and how they refect the regions and the season. These incredible growers provide such great fruit that the winemaking duo use minimal intervention winemaking to make wine that is produced is distinctive, refned and yet approachable.

‘Shy Susan’ (Tetratheca Gunnii) is a critically endangered wildfower endemic to a tiny part of Tasmania. Her survival depends completely on a little native bee, who alone is capable of pollination. Their fate is forever entwined.’ A range of truly unique small batch wines from some of Tasmania’s most exciting. Another of Glenn James passionate projects is wines made with the ancient Greek Amphora method. With this method, the crushed grapes are fermented and aged in clay pots, allowing more of the wine’s own favours to shine through rather than be overshadowed by oak, or need to have sulphur added to combat spoilage microorganisms.

30 SUMMER 2020 - 2021 POMMERY

CHAMPAGNE, FRANCE

Creator of Brut Champagne in 1874 In 1858, Madame Pommery took over as head of Pommery and Greno after the death of her husband. She based the expansion of her House on the creation of wines unlike any others, with one constant demand: quality pushed to the extreme. Well aware of how important the grapes’ origin was to the quality of her wines, over the years she built a collection of the fnest vineyards in all of Champagne. In matters of taste she was ahead of her time. It was she who created Pommery Nature in 1874, the frst brut champagne to meet with commercial success, thereby breaking with the tradition of very sweet wine. A woman in a man’s world, she imprinted her personality on her champagnes. The purity and the fnesse of Pommery wines perpetuate this legacy.

ORISTANO, SARDINIA

From the late 1950s to the late 1980s, the Silvio Carta winery maintained a high focus on the production of Vernaccia, a wine of signifcance and tradition in Sardinia. When Vernaccia began to decline in popularity, Elio Carta and his father Silvio saw opportunity in distillation. Elio discovered that most of the juniper for gin in the world comes from Tuscany and Umbria, so he imagined that the Sardinian juniper would certainly possess the qualities necessary for distilling. Thus, Elio Carta became the frst distiller in Sardinia. Silvio Carta works exclusively with wild botanicals, fowers and plants grown within the province of Oristano, Sardinia, all harvested early in the morning, and in an area less than 10km from their distillery. This means all raw materials are used at the peak of freshness and intensity.

Vermouth di Sardegna Rosso Carta’s Vermouth is a blend of aged Vernaccia di Oristano DOC Riserva infused with elicriso (Helichrysum italicum), foraged sage, myrtle, thyme, artemisia, and mastic. Vernaccia di Oristano is the traditional wine of Sardinia, which is aged oxidatively in chestnut barrels, wherein the wine forms a layer of for yeast, similar to the production of Sherry.

Mirto Rosso ‘Ricetta Storica’ Mirto is the traditional liqueur of the island of Sardinia. It is crafted from the hydro-alcoholic maceration of leaves and berries—or just the berries—of the myrtle plant, which are dark, herbaceous, and have a medicinal quality. Traditionally, after maceration, sugar or honey is added to the extracted liquor in order to sweeten it. Hand-gathered myrtle berries grown metres from the oceanside are used for this infusion. Carta’s recipe uses 1.2kg of Sardinian myrtle berries per litre of distillate (about 1 mirto bush of berries per bottle). Normally, commercial brands use only 300- 400g of berries per litre. The taste is akin to putting a handful of ripe berries in your mouth. Ripe fruit dominates on the palate, with a smooth and refi ned balance between sweet and sour berry f avours, then fi nishes with dry Mediterranean herbs and a slightly tannic texture.

The gin is aged for 12 months in chestnut barrels which were previously used to age Vernaccia di Oristano wine.

Pigskin Pink Wild juniper berries are hand-gathered from plants that grow 5-6 metres from the Sardinian coastline & used fresh in the distillation process. The berries are then transported to the distillery in special cane baskets to ensure they do not get damaged. Juniper berries, myrtle, elicriso, sage and artemisia are added to the infusion which is warmed slowly and kept temperature-controlled throughout the distillation process. After distillation, the gin is added with an infusion of myrtle berries & other wild berries harvested by hand.

58 SUMMER 2020 - 2021 SILVIO CARTA

ORISTANO, SARDINIA

BitterRoma Rosso Defned by master distiller Elio Carta as Bitter Della Pace (“the bitter of peace”), this aperitif is another expression of the unique botanicals of the Sardinian countryside. With a typical ruby red colour, it has an overwhelming nose of aromatic herbs: rosemary, thyme, sage and eucalyptus, accompanied by orange peel, tamarind and cloves. Dry but enveloping, with a decisive and inviting taste, it has an incisive bitter note and a very long fnish of citrus peel. Simply perfect for an aperitif, served with ice and a slice of blood orange. Also perfect as a component for your Negroni.

BitterRoma Bianco Bright straw yellow color with golden refections, the nose has remarkably interesting herbaceous hints, slightly honeyed notes and persuasive echoes of lemongrass. Viscous in texture, it involves the whole palate and its favour is characterized by an herbaceous note that cleanses the palate and accompanies a very long fnish.
