In the last 20 odd years, Adria and other chefs such as Arzak, Berasategui, Aduriz and Subijana reinvented and rejuvenated Spanish cuisine. The nueva cocina of the Spaniards was not however just a mere application of French nouvelle cuisine to Spanish food, but a revolutionary movement, with new principles, ideas and techniques, that introduced to the puzzled world molecular gastronomy and, more importantly, the local gastronomic idiom of Spain. Through the application of a new, and at times surrealist aesthetic, as well as a series of radically novel cooking techniques, the Spanish chefs showed to the throngs of culinary pilgrims flocking Costa Brava and San Sebastian the secret charms of Catalan or Basque cuisine, albeit in an unrecognized and totally deconstructed manner. Through nueva cocina the world transcended the national clichés of paella 2 and gaspacho and tasted culinary Spain in its most essential form, regional cuisine. As a consequence, not only Spain outpaced France in culinary prowess at the highest level but became the number one culinary destination in Europe.

    Spicy Ash Roasted Vegetables Escalivada 2 medium globe eggplant 2 medium zucchini 3 large red bell peppers 3 small Spanish onions (unpeeled) 12 Roma tomatoes 1 1/2 cups extra virgin olive oil, divided in half coarse sea salt freshly ground black pepper 1/2 tsp Aleppo pepper or Piment d’Esplette or hot pepper flakes 1/4 cup chopped fresh Italian parsley leaves 1 tsp minced garlic sherry vinegar In a large bowl, toss eggplant, zucchini, red peppers, onions and tomatoes with half of the olive oil. Season liberally with coarse sea salt, black pepper and Aleppo pepper flakes. Rub with gloved hands to coat evenly. Wrap each vegetable individually in heavy-duty aluminum foil. Once you have finished grilling your meal and only smoldering coals remain, place the foil-wrapped vegetables directly on coals. Pile some coals on top of the foil packages. Place lid on grill and let cook until vegetables are completely tender, about 2-4 hours. Remove the vegetable packages from the coals and unwrap. Peel and discard the skins of the eggplant, pepper, onion and tomatoes. Remove and discard the seeds of the peppers and the eggplant. Roughly chop the vegetables and place in a medium size bowl. Stir in the remaining olive oil, chopped parsley and minced garlic. Season to taste with sea salt, black pepper and Aleppo pepper, or substitution. Drizzle with sherry vinegar to taste.     Escalivada (Charcoal-Grilled Mediterranean Vegetables) Serves 4-6 2 large tomatoes, halved crosswise 1/4 teaspoon freshly ground black pepper, 2 pounds small, narrow eggplants (the Japanese variety) or to taste 2 large red bell peppers 2 large white onions, unpeeled, top and bottom cut off As a garnish: 2 baking potatoes, halved lengthwise 2 tablespoons chopped fresh parsley leaves About 2 tablespoons olive oil About 2 tablespoons extra virgin olive oil, 1/2 teaspoon salt, or to taste for drizzling over Light a charcoal fire in a grill with a cover (or preheat oven to 350 degrees F). Rub all vegetables with about 2 tablespoons oil. Place them on the grill over red-hot coals (or on a baking sheet in the oven); tomatoes and potatoes should go cut side up. Grill (or bake) about 15 minutes for tomatoes, 45 minutes to 1 hour for eggplant and peppers, 1 hour for onions and potatoes; turn eggplant, peppers and onions occasionally.
