Pinot Noir – 2015 Wait Cellars, Russian River Valley 3.50 14.00 40.00 Only 350 cases were made of this lovely pinot noir, grown on the Devoto Family Vineyard in the Russian River region of Sonoma County. Unfiltered and un-fined with flavors of cherry compote and subtle clove spice. 23. Pinot Noir – 2014 Nacina, Santa Lucia Highlands 2.50 10.00 31.00 Medium bodied with classic flavors such as cherry cola, cinnamon, cedar and a touch of toasty oak. The fruit was harvested from two distinct vineyards in SLH, the Tondre and Hook Vineyards. 24. Pinot Noir - 2017 Testarossa, “Doctor’s Vineyard,” Santa Lucia Highlands 6.25 25.00 75.00 Ripe cherry and currant flavors abound in this Pinot Noir that is both lush and expansive, while the youthful and lively tannins give way to extended age potential. A beautiful wine from one of our local favorites! 25. Blaufränkisch – 2017 Field Theory, Paso Robles 3.25 14.00 40.00 This lighter bodied, native Austrian varietal is a cross between a fruity Grenache and a spicy Pinot Noir. Bright acidity jumps around on the palate finishing with spice notes of cinnamon, clove and a ripe cherry fruitiness. 26. Merlot - 2016 Comanche Cellars, Santa Clara Valley 3.00 12.00 37.00 Brilliant ruby hue and complex nose that shares aromas of black cherry, ripe plum and cedar. Flavors of rhubarb, cinnamon and gingersnap lead to an elegant finish. 27. Sangiovese – 2016 Benessere Vineyards, St. Helena, Napa Valley 4.00 16.00 44.00 Made from 100% Estate grown Sangiovese, this light and bright red wine carries flavors of cherry, strawberry, lavender and mocha and a hint of sage and herbal notes on the pleasant, lingering finish. 28. St. Laurent – 2018 March Wines, Carneros, Sonoma County 3.50 14.00 40.00 A rare varietal originating from Austria and the Czech Republic. Deep magenta and purple color, this wine is surprisingly light on the palate with dark fruit flavors of blackberry and raspberry, baking spice and chocolate. 29. Well-structured on the palate, with a mix of earthy notes and elderberry with a long finish of ripe red fruits. 32. Syrah – 2014 “The Octopod”, Furlong Estates, Alexander Valley 3.25 13.00 38.00 This well-balanced Syrah offers aromas of dark berries and black current. A hint of spice, rich plum flavors and a pronounced tannin structure leads to a long, complex finish. 33. Red Blend – 2017 Alma de Cattleya, Sonoma County 3.75 15.00 42.00 60% Syrah, 35% Merlot and 5% Cabernet Sauvignon. Rich and smooth with lush flavors of blackberries and blackcurrant. Super smooth tannins with cocoa and vanilla on the finish. Only 275 cases produced. 34. Grenache – 2015 Mathis, Sonoma Valley 3.50 14.00 40.00 Made from 82% Grenache, 10% Carignane, 6 % Petite Sirah and 2% Alicante Bouschet. This wine brings bright acidity and deep, jammy fruit characteristics such as red raspberry jam and black cherry. 395 cases 35. Sagrantino – 2015 Orsianna, Mendocino County 3.25 13.00 38.00 A delicious version of this rare Italian varietal. Flavors of dark fruits, with hints of plum, cinnamon and earth. A deep, inky color but not as heavy as you would think; leaving a nice medium-bodied wine aged in 100% old oak. 36. Cabernet Sauvignon – 2016 Silver Ghost, Napa Valley 4.75 19.00 51.00 Named in honor of the winemakers’ great grandfather, who launched the Silver Ghost Rolls Royce, the pedigree of this classic cab truly exceeds itself with lush texture and opulent tannins. Complex aromas of black cherry, smoked herbs and coffee on the nose lead to a rich mouthfeel, well-integrated tannins and velvet fruit flavors. 37. Zinfandel – 2013 Saxon Brown ‘Stonewall,’ Sonoma Valley 4.50 18.00 49.00 Only a few hundred cases were made of this cult favorite. Inky and fruit forward, this classic representation has a core of dark fruits, allspice and chocolate balanced nicely by a polished oak presence and a lingering finish. 38. Aglianico – 2015 Harrington Wines, Tuolumne County 4.75 19.00 51.00 A big wine; inky and ruby red in the glass and full of huge tannins, notes of black licorice and currants. Tart red and black fruits such as pomegranate, blackberries and plums with a slight menthol note. Intensely dry with massive grip and a long, lingering finish. Very limited production of only 48 cases! 39. Dessert Wine – 2011 ‘Violeta’ PasoPort, Paso Robles 4.50 18.00 49.00 A traditional port style wine made from classic Portuguese grapes; 56% Touriga Nacional, 20% Souzão, 12% Tinta 1 oz 4 oz 375 ml Roriz and 12% Tinto Cão. A deep ruby with decadent notes of chocolate, blueberry, plum and currant. 40. Zinfandel – 2014 League of Rogues “Rapscallion Reserve”, Paso Robles 62.00 This very small production wine using the best grapes harvested that year. A beautiful balance of spice and black and red fruit flavors that come together with structured tannins and elegant oak notes. 41. Syrah Blend – 2014 ONX “Reckoning”, Templeton Gap, Paso Robles 72.00 A rich, multi-layered blend of 43% Syrah, 21% Malbec, 11% Grenache and 5% Petite Sirah. Dark plum, blueberry and pepper notes on the nose with rich blackberry, lamb and rosemary flavors. 94 pts Wine Enthusiast, 92 pts Wine Spectator 42. Cabernet Sauvignon – 2017 “The Baron”, Montagu Wines, Rutherford, Napa Valley 127.00 A big brother to the ever-popular Silver Ghost Cab on our menu, this is the flagship wine from winemaker and founder, Weston Eidson. Hand selected fruit from the Rutherford area produces a rich and inviting wine with silky tannins. A bit of background High K concentrations are typical for red wines; equilibrium between K, tartaric acid and anthocyanin pigments complex, which is responsible for the red colour. Anthocyanin is a natural colorant which is found in leaves and grapes. About 250 different variations of the anthocyanin complex are known. They all contain the structure of the common “Flavin” molecule which will be substituted at 7 possible positions from simple -OH to complex sugar molecules.     Amaranthus cruentus L. Red Amaranth (Amaranthus chlorostachys, Amaranthus hybridus subsp. cruentus, Amaranthus paniculatus) • This Central American species is alternately known Achita, African Spinach, Bledo, Blood Amaranth, Bush Greens, Caterpillar Amaranth, Princess Feather; Purple Amaranth, Red Shank, or Sudan Spinach; the moderately coarse textured plants typically mature at 3N to 5N (6N) with a spread of about a quarter to third of the height; leaves vary in color from yellow-green, medium green, dark green, to bronzish green depending upon the cultivar and nutritional status; leaves are simple, nar- rowly to broadly ovate; bases are acute to cuneate with tips acute to acuminate and with wavy mar- gins; the erect flower panicles are 4O to 8O long and fairly dense, varying from creamy white to blood red in color depending upon the cultivar and mature in late spring to summer depending on sowing times and regional conditions. • While this species is grown for agronomic purposes in many regions of the world, ornamental culti- vars are selected for the showy flower and fruit panicles; primary uses are as tall bedding plants to add height to island plantings or mixed boarders, or for cut flowers; the showy panicles can be very striking as cut flowers and are long lasting features as individual panicles go in the garden; after the initial flowering, plants can be deadheaded to encourage return bloom with mixed success. • The most popular of these taxa is 'Autumn Palette' which offers a of long showy panicles in autumn colors ranging from creamy white, buff, peach, deep apricot, to orange-red; 'Marvel Bronze' has wine-red panicles with darker green leaves that are flushed bronze; while touted as disease and pest resistant in many regions, flea beetles may caused severe damage to the foliage; although this is detrimental to its use as a massing or tall bedding plant, the foliar damage usually occurred late enough in the season that the late spring to summer flowers still matured sufficiently for use in fresh cut or dried arrangements.

Comprised of the Chablis, Côte d’Or, Côte Chalonnaise, Mâconnais and Beaujolais regions, Burgundy occupies a long and narrow stretch of vineyards in eastern France. The critical effect of terroir in Burgundy is expressed in its complex classification system. • Vineyards are divided into separate appellations along terroir France boundaries; the full range of classification levels from broadest to the most distinguished follows: District (e.g. Beaujolais or Chablis), Village (e.g. Pommard), Premier Cru (e.g. Pommard les Rugiens) and Grands Cru (e.g. Clos Vougeot). • As a result of Burgundy’s rules of inheritance, vineyard ownership is quite fragmented, with multiple owners for most crus.     THE COLOUR OF RED WINE MARIA JOSEPHINE BIRSE THE UNIVERSITY OF ADELAIDE School of Agriculture, Food & Wine Faculty of Sciences A THESIS SUBMITTED FOR THE FULFILMENT OF THE REQUIREMENTS FOR THE DEGREE OF DOCTOR OF PHILOSOPHY APRIL 2007 i Abstract The behaviour of pigments in red wine, namely anthocyanins and anthocyanin- derived pigments, was investigated at natural wine pH, at low pH and after addition of SO 2, namely SO 2 bleaching. An examination of current literature demonstrated absences in wine pigment research. Firstly, few researchers have published the colour properties of a particular wine pigment at different pH values and post-SO 2 bleaching. This was demonstrated using the CIELab colours of two individual anthocyanin-derived wine pigments (4-vinylcatechol and 4-vinylsyringol adducts to malvidin 3-glucoside), and an anthocyanin, malvidin 3-glucoside. The colours of the anthocyanin-derived pigments and their resistance to pH change and SO 2 bleaching were compared to malvidin 3-glucoside which was affected by media. Generally, in the literature, wine pigments are characterized as individual components. But many pigments contribute to wine colour. So, two novel methods were created and demonstrated using red wines: Shiraz wines from four regions in Australia, and Cabernet Sauvignon wines made using two different strains, Saccharomyces cerevisiae (SC) or Saccharomyces bayanus (SB). The first method can be used to determine the CIELab colour of chromatographically separated wine pigments and allows their colours to be re-created, regardless of their identity. Thus objective measurement of pigment colour at its natural concentration in wine is now possible. An additional method, the “post-column adjustment method” to pH-adjust and SO 2 bleach HPLC-separated wine pigments was created.

    Argentum 2017 Argentum 2017 1 Introduction Last year, Argentum posed a question to artists and art enthusiasts about the definition of design. This year, the magazine shows artists exploring their own creativity through a variety of mediums and subjects. How one sees the world can be how one creates. Artists submitting work to Argentum explored how to take an idea and form it into something recognizable or relatable to others, yet with their own touches added to it. Design has many elements and many tools that bring an idea to life. For some who are more comfortable with a brush, they use strokes and a pallet of colors to bring a scene to life. Others prefer to be more hands-on and enjoy molding shapes from clay or fashioning a necklace with a variety of beads. Some find joy in using words to create characters and describe ideas that evoke memories, thoughts and feelings. Then there are those who use a camera to show the world their perspective of a moment in time. In the end, the design of something has an impact on others. It is communication between two people who may not meet face-to-face. The effect may be subtle or dramatic; making someone smile or calling them to action; stirring the soul or challenging others to up the ante. This year, veterans of the United States Armed Forces found their voice in design, through writing, painting and photography. Through art, they’ve designed something that was born from an idea, and with some effort, became a tangible object.
