Example Custom Cakes McHugh Tea Room Catering Agreement – revised May 2019 5 McHughTEA Catering 2019 Agreement Payments and Deposits A deposit of half of the total order is required for McHughTEA to begin to prepare your order. A credit card can be taken over the phone and an email receipt will be provided immediately following the transaction. Deposit is due once order is confirmed by McHughTEA Staff. Cancellations and Refunds If you give McHughTEA a written notice of cancellation of this Catering Contract more than 5 days prior to the event date, McHughTEA will agree to cancel this Catering Contract at no charge, and will refund any deposit minus a 7% credit card processing fee. Cancellation requests within 5 days of this Catering Contract are not eligible for refund. Taxes In addition to the contract price, you will be charged and responsible to pay all applicable state and local taxes. If you are a tax- exempt company, please email the tax-exempt form to McHughTEA at the time of deposit. Rentals McHughTEA can provide staffing, plates, silver trays, airpots and cups/saucer rentals for your event upon availability.

    CHICKEN-ARTICHOKE SALAD with WATERCRESS TEA SANDWICHES Susan Denzer, Chef and Culinary Consultant Love + Craft Kitchen Watercress, a tender, slightly peppery, leafy green superfood, has been used in tea or “finger” sandwiches for centuries. Original tea sandwiches were extremely simple - bread (crusts removed), butter, a fresh vegetable or green, salt and pepper. They were meant as a light snack to bridge the gap between lunch and late-evening dinner. Today, tea sandwiches are oftentimes composed of more substantial fillings and served for luncheons or other special events. The tradition of crust-less bread, a layer of butter, the use of watercress and presentation of delicate shapes still holds strong. In this recipe, the watercress pairs nicely with this Chicken-Artichoke Salad, making a lovely tea sandwich filling. For best flavor and texture, use young watercress shoots in early Spring or new growth in Fall. Their popularity as a breakfast food is increasing, due the ease at which they’re eaten. John Montagu, also known as Lord Sandwich of 18th century England, was not the inventor of the modern-day sandwich. He did popularize it, however. Being quite a gambler, this form of food allowed him to continue playing cards while eating, without getting his hands greasy. The bread is the basic ingredient of any sandwich. Use the freshest bread available; day-old bread can be used for toasting without loss of quality.
