In the 15th Century Champagne as a wine growing 0 region was more important than Burgundy mostly due to the proximity to Paris which is only 1 hour away by 0 train. Back then up until the mid-19th Century Champagne was a still, pale-ruby red wine. It is thanks to Monk Dom Pierre Péringon who had stumbled across the effervescence and helped manage and control it. At that 0 time, wine makers had no temperature-controlled rooms and no filtering mechanism which allowed yeast from the alcoholic fermentation to stay in the wine. In the winter temperatures would drop below freezing and the 0 yeast would fall dormant. In spring it would awake resulting into a secondary fermentation which would 0 produce carbon dioxide gas and result into heavy pressured bottles which would burst. Dom Pierre Péringon had found a way into controlling the amount of yeast in the bottle and finding stronger glass for his bottles 0 which gave him control. That all happened in the late 17th Century but still wine was still much more popular 0 until the 19th Century. Once the bubbles took the whole production over Champagne, it was the large Champagne-houses priority in marketing their product out into the world. It didn’t take long for Champagne 0 conquering the world and being known as the best celebratory drink there is. 0 Prestige cuvèes came to be thanks to Luis Roederer who had made a special, high-quality, longer aged wine for emperor Tsar Alexander II in 1876, this fine champagne was bottled in a flat-bottomed crystal bottle hence the 0 wines name Luis Roederer Cristal. All other Houses followed with this trend a few years later. And now we have 0 the chance in tasting us thru the best sparkling and most complex wines in the world. 0 Page 4 Sparkling Wine Torresella, Prosecco, Extra Dry, Veneto, Italy, NV 65 Pares Balta, Cava, Brut Nature, Penedes, Spain, NV 75 Nikolaihof, Sekt, Zweigeld Rosé, Wachau, Austria, 2014 110 Ridgeview, Bloomsbury, Brut, England, 2014 115 Hattingley Valley, Rosé, Hampshire, England, 2014 125 France Champagne Delamotte, Brut, Le Menil sur Oger, NM, NV 115 André Clouet, Grande Réserve, Brut, Bouzy, NV, NM 120 Billecart-Salmon, Brut Réserve, Mareuil-Sur-Ay, NV, NM 135 Moët & Chandon, Rosé Imperial, Epernay, NV, NM 145 Vouette et Sorbée, Blanc d'Argile, Blanc de Blancs, Extra Brut, Buxières, NV, RM 175 Camille Savès, Cuvée Anaïs Jolie Coeur, Bouzy, 2004, RM 215 Egly-Ouriet, Grand Cru, Ambonnay, 2005, RM 280 Agrapart & Fils, Venus, Blanc de Blancs, Grand Cru, Brut Nature, Avize, 2011, RM 385 Gosset, Celebris, Extra Brut, Blanc de Blancs, Ay, 1990, NM 525 Perrier-Jouët, Belle Epoque, Blanc de Blancs, Epernay, 2004, NM 780 Paul Bara, Grand Rosé, Grand Cru, Bouzy, NV, RM 125 Paul Bara, Special Club, Grand Cru, Bouzy, 2008, RM 195 Paul Bara, Comtesse Marie de France, Grand Cru, Bouzy, 2000, RM 295 Drappier, Brut Nature, Urville, NV, NM 150 Drappier, Carte d'Or, Brut, Urville, 1996, NM 225 Pierre Gimonnet, 1er Cru, Blanc de Blancs, Cuis, NM, RM 120 Pierre Gimonnet, Cuvée Fleuron, Blanc de Blancs, Cuis, 2010, RM 135 Pierre Gimonnet, Special Club, Grands Terroirs, Blanc de Blancs, Cuis, 2012, RM 170 Pierre Gimonnet, Special Club, Chouilly, Blanc de Blancs, Cuis, 2012, RM 195 Pierre Gimonnet, Special Club, Cramant, Blanc de Blancs, Cuis, 2012, RM 205 Veuve Clicquot, Yellow Label, Brut, Reims, NV, NM, 375ml 80 Veuve Clicquot, Yellow Label, Brut, Reims, NV, NM 130 Veuve Clicquot, Yellow Label, Brut, Reims, NV, NM, MAGNUM, 1.5L 265 Veuve Clicquot, Yellow Label, Brut, Reims, NV, NM, DOUBLE MAGNUM, 3L 750 Veuve Clicquot, Vintage Rosé, Reims, 2008, NM 190 Veuve Clicquot, La Grande Dame, Rosé, Reims, 1998, NM 435 Veuve Clicquot, La Grande Dame, Rosé, Reims, 1990, NM, MAGNUM, 1.5L 1650 Pol Roger, Réserve, Brut, Epernay, NV, NM 155 Pol Roger, Sir Winston Churchill, Epernay, 2006, NM 375 Ayala, Rosé Majeur, Brut, Ay, NV, NM 130 Ayala, Blanc de Blancs, Brut, Ay, 2013, NM 160 Ayala, Rosé No. 8, Brut, Ay, 2008, NM 210 Ayala, Perle d'Ayala, Brut, Ay, 2006, NM 315 Chartogne-Taillet, Les Couarres, Extra Brut, Merfy, 2013, RM 265 Chartogne-Taillet, Les Barres, Extra Brut, Merfy, 2013, RM 295 Jérôme Prévost, La Closerie, Brut Nature, Les Béguines, Gueux, NM, RM 320 Jérôme Prévost, La Closerie, Fac-Simile, Extra Brut Rosé, Gueux, NM, RM 465 Page 5 France Champagne Roses de Jeanne, Cote de Val Vilaine, Blanc de Noirs, Landreville, 2016, RM 215 Roses de Jeanne, Côte de Béchalin, Landreville, 2011, RM 345 Roses de Jeanne, La Haute-Lemblé, Blanc de Blancs, Landreville, 2014, RM 425 Roses de Jeanne, Presle, Blanc de Noirs, Landreville, 2014, RM 450 Roses de Jeanne, Les Ursules, Blanc de Noirs, Landreville, 2013, RM 305 Roses de Jeanne, Les Ursules, Blanc de Noirs, Landreville, 2009, RM, MAGNUM, 1.5L 950 Frederic Savart, L'Ouverture, Blanc de Noirs, Brut, Ecueil, NV, NM 135 Frederic Savart, Bulle de Rosé, Brut
