Problems of the dairy economy in a disadvantaged area: Prosperity and crisis of agriculture in the Jura Mountains: P. Perrier-Cornet (INRA, Dijon, France) (Original in French) Agriculture in the Jura should adapt in order to keep its prosperity. The local Gruyere cheese production shows a steady development. At the same time, this production becomes localised in comparison to the situation at the end of the 19th century. The number of producers is declining. Growth was hampered by industrial competition (Emmenthal cheese), obliging the Jura producers to fortify themselves by aiming at quality rather than quantity. The State came to their help by laying down rules that guaranteed them monopoly. In areas where cheese production was abandoned, producers turned to mixed fanning (meat and cereals). However, the production structure of 'comte' cheese re- mains the same. The cooperative cheese dairies sell to local ripeners who con- centrate on the making of small cheeses — as the production is heterogeneous — and selling them through traditional channels. The production technique has also remained unchanged: no silage, dairy breed of exclusive regional origin, milking at fixed hours, delivery at the cheese dairy twice a day. Discussion: The discussion revolved round the following aspects: 1. The importance of the natural conditions in mountain areas. The physical conditions of the Jura have led farmers to valorize the milk into quality cheese, by means of a strict organisation. -The success of this production provoked its extension into the plains, but the organ- isation was less accepted there, and the produce suffered from compe- tition by low quality cheese, produced at lower cost in Brittany.

    BOURGOGNE PINOT NOIR “TERRES DE FAMILLE” 2016 Like a family reunion, this wine brings together the members of one single line of descent, and one single Cistercian terroir. The varietal – Pinot Noir – has been grown here for almost 700 years. One-third of the grapes comes from our vines on the Côte de Nuits, and two-thirds from the Côte de Beaune – divine proportions for a divine wine. HISTORY The aristocratic and sophisticated Pinot Noir grape gives the vines their blue blood, and is behind some of the most dazzling red wines ever made. Cited for the first time in 1375, the name has since then been inextricably linked to the history of Burgundy wine. The red wines made here from the Pinot Noir grape are the very the soul of their Burgundy birthplace. And it is here where they flourish best. The Pinot Noir grape is delicate and complex. It doesn’t grow as well anywhere else, and according to the wine writer Jancis Robinson, remains “jealously envied” on its home soil in Burgundy.     156th HOSPICES DE BEAUNE WINE AUCTION 20 th NOVEMBER 2016 Under the Presidency of Madame Virginie Ledoyen, Madame Khatia Buniatishvili, Madame Valérie Bonneton, Monsieur Claude Lelouche and Monsieur Eddy Mitchell For the benefits of the Foundation Cœur et Recherches and Foundation l’ARC As this press release is being prepared, The Hospices Civils de Beaune are going through a period of great sadness brought about by the sudden disappearance of their director, Mr Antoine JACQUET. Mr JACQUET dedicated 28 years of his professional life to this atypical establishment where he was capable of both managing the evolution and modernisation of the hospital and also its historical and viticultural heritage. The wine domain, the historic museum and the hospital activities have always been in great interaction. Successive earnings from the wine auctions have allowed the Hospices Civils de Beaune to offer themselves modern equipment adapted to each stage of their historical development. The latest work in progress, where Antoine JACQUET was at pains to ensure that all went well, is the restructuring and enlargement of the Hospital Centre. Work on this began in 2014. While the festivities linked to the Wine Auction on 20th November 2016 will be unchanged, everyone present will spare a thought for the man who presided over the destiny of this institution of which he was so proud.
