5 The History One of the historic buildings in downtown Gilroy, 7573 Monterey was originally built in 1920. Commercial development during this time period was characterized by rapid expansion and growth of businesses related to the everyday needs of Gilroy’s citizens. The Thomas Hines Grocery was one of the first businesses to occupy this building. The grocery store was replaced by the Gilroy Coffee Shoppe approximately three years later.
